发明内容
本发明的目的是要提供一种控制烟熏腊制品无3,4-苯并(a)芘的方法,这种烟熏腊制肉方法加工出来的烟熏腊制品3,4-苯并(a)芘量少。
本发明一种控制烟熏腊制品无3,4-苯并(a)芘的方法,是建立在一种熏烤常压锅炉加工烟熏腊制品设备及方法的基础上,使烟熏室的温度不能超过100℃。
所述的烟熏室温度不超过100℃,烧室到烟熏箱用水作传热介质,其烟熏箱温度不能超过100℃。
所述的安装低温烟囱装置,烟囱周围用铝皮或铁皮做成装水容器,装水容器里装水,用水作传热介质,使烟雾温度不超过100℃,并与烟熏室相通。

1.控制烟熏腊制品3,4-苯并(a)芘,重点在烟熏室的温度:1、控制烟熏室温度不超过100℃。一旦烟熏室温度超过100℃,烟熏腊制品中3,4-苯并(a)芘的量会增加;2、安装低温烟熏装置,使烟雾温度超过100℃,并与烟熏室相通。总之,烟熏室温度不超过100℃,就能有效控制烟熏腊制品3,4-苯并(a)芘量的产生。
