Abstract

一种水果保鲜剂由以下重量份原料组成:焦亚硫酸钠1~3份、无水氯化钙1~4、明矾8~15份、柠檬酸10~15份、水30~45份;其保鲜方法是选择鲜果去杂质、洗净,将鲜果放入容器或池中,加保鲜剂浸泡鲜果,在容器或池口加盖塑料薄膜。本发明的保鲜剂无任何毒性,它可使鲜果不变形、不腐烂、不变色,而且能消除果体表面残留农药、病菌及毛系,其保鲜时间长,保鲜率高,可实现冬季会落叶果树的水果反季节常年上市。

Description

水果保鲜剂及保鲜方法
本发明涉及水果保鲜方法及保鲜剂。
冬季会落叶果树的水果,如桃、李、梨、柿、杨梅等,它们具有自然保鲜期短,不耐贮存的弱点。目前,该类水果贮存大都采用低温冷藏法,这种方法使用成本太高、保鲜期没有有效地延长,不易推广。
本发明的目的就是提供一种能保持冬季会落叶果树的水果原形、原色、原味、保鲜率高、保鲜期长的水果保鲜剂及保鲜方法。
本发明的水果保鲜剂由以下重量份原料组成:
焦亚硫酸钠1~3    无水氯化钙1~4
明      矾8~15   柠  檬  酸10~15
水        30~45
上述原料中,焦亚硫酸钠为白色或微黄色结晶粉未,作防腐剂、漂白剂、疏松剂之用;无水氯化钙作脱水剂之用;明矾又名称硫酸铝钾为无色透明块状、粉状的结晶或粉未,作疏松剂之用;柠檬酸为无色半透明的结晶或白色颗粒或粉未,作调味剂之用。
本发明的水果的保鲜方法是:
1、选择鲜果、去杂质、洗净;
2、将鲜果放入容器或池中,加入上述水果保鲜剂,保鲜剂浸泡鲜果;
3、在容器或池口加盖塑料薄膜,以防止保鲜剂与水份蒸发。
本发明的水果保鲜剂采用四种食品添加剂加水配制而成,其无任何毒性,它是使鲜果迅速进入睡眠期来达到保鲜,不仅能保鲜各种冬季会落叶果树的水果,使鲜果不变形、不腐烂、不变色,而且能清除果体表面残留农药、病菌及毛系。其保鲜时间最长可达15个月,保鲜率达90%,从而可实现冬季会落叶果树的水果反季节常年上市。
下面结合实施例对本发明作详细说明。
实施例1:
水果保鲜剂由以下原料组成:
焦亚硫酸钠1.5千克  无水氯化钙2千克
明      矾9千克    柠  檬  酸12千克
   水        35千克
将焦亚硫酸钠、无水氯化钙、明矾、柠檬酸按上述份量加入水中,搅拌均匀即得水果保鲜剂。
取鲜桃100公斤,去杂质、洗净,将鲜桃放入缸中,加入上述保鲜剂,用塑料薄膜覆盖缸口,即可。
实施例2:
水果保鲜剂由以下原料组成:
焦亚硫酸钠2千克    无水氯化钙3千克
明      矾12千克   柠  檬  酸13千克
水        45千克
将焦亚硫酸钠、无水氯化钙、明矾、柠檬酸按上述份量加入水中,搅拌均匀,即得水果保鲜剂。
取鲜李100公斤,去杂质、洗净,将鲜李放入缸口,加入上述保鲜剂,用塑料薄膜覆盖缸口,即可。

1、一种水果保鲜剂,其特征在于由以下重量份原料组成:
焦亚硫酸钠1~3    无水氯化钙1~4
明      矾8~15   柠  檬  酸10~15
水        30~45
2、一种水果保鲜方法是:
(1)选择鲜果、去杂质、洗净;
(2)将鲜果放入容器或池中,加入权利要求1所述的水果保鲜剂,保鲜剂浸泡鲜果;
(3)在容器或池口加盖塑料薄膜。
