背景技术
免疫力是一种有效的人体自身防御机制,能够识别和消灭外来侵入的任何异物(如病毒、细菌等),处理衰老、损伤、死亡、变性的自身细胞,识别和处理体内突变细胞和病毒感染细胞的能力。按照获得方式的不同,免疫力可分为先天性免疫和获得性免疫。先天性免疫是人一生下来就有的,而获得性免疫是人生下来以后在生活过程中自然获得的或者用人工辅助的有效方法被动得到的。
免疫力低下的身体易于被感染或患癌症,免疫力超常也会产生对身体有害的结果(如引发过敏反应、自身免疫疾病等)。当免疫系统不能正常发挥保护作用时,极易招致感染,因此免疫力低下最直接的表现就是容易生病。又因经常患病,加重了机体的消耗,因此通常伴有体质虚弱、营养不良、精神萎靡、疲乏无力、食欲降低、睡眠障碍等表现,长此以往会导致身心发育不良,还易诱发重大疾病。
酱油俗称豉油,主要由大豆、小麦、食盐经制油、发酵等程序酿制而成。酱油的成分比较复杂,除食盐以外,还有氨基酸、糖类、有机酸、色素及香料等多种成分。酱油以咸味为主,亦有鲜味、香味,不仅能够增加和改善菜肴的味道(如生抽),还能够增添或改变菜肴的色泽(如老抽)。
CN 1223092 A公开了一种低盐甘草保健酱油,其由纯净水、加碘精盐、氯化钾、甘草浓缩汁、褐藻酸钠、天然焦糖和增鲜素配制而成,但上述产品中实际上并不含有酿造酱油成分,而是通过多种组分的调配形成的配制酱油,缺乏了酿造酱油中丰富的氨基酸成分以及特殊的香气和滋味。CN 1271542 A公开了一种原汁纯香型酱油,其由原汁母油和多种香辛料(包括甘草、沙仁、五味子、桂皮、八角、花椒、姜、肉桂、熟地)配制而成,但上述产品中使用的香辛料种类过于繁多,可操作性不高,并且不含额外的微量元素膳食补充剂,保健效果不甚理想;CN 101731569 A中公开的营养酱油、CN 103380892 A中公开的保健酱油、CN104719836 A中公开的瓜拉那保健酱油也存在同样的问题。CN 106262680 A公开了一种具有保健调理功效的酱油,其包括海粉、沙棘、牡丹皮、双花、熟地黄、茯苓、葱白、酱油粉、食盐、水和佛手,但上述产品实际上是一种粉料复原后得到的酱油,同时存在配料种类繁多、操作复杂的问题;另外,上述产品中还额外添加了食盐成分,长期食用会使人体摄入过量的食盐,不利于心脑血管健康;CN 106307455 A中公开的有机酱油也存在同样的问题。
发明内容

一种中药保健酱油,其包括酿造酱油、乳酸锌、硫酸亚铁、泛酸钙、西洋参粉、鹿茸粉、熟地粉、甘草粉和小分子团水。
以重量份计,上述中药保健酱油包括800~1200份酿造酱油、2~5份乳酸锌、1~3份硫酸亚铁、2~5份泛酸钙、5~10份西洋参粉、2~5份鹿茸粉、15~20份熟地粉、15~20份甘草粉和100~200份小分子团水。
优选的,以重量份计,上述中药保健酱油包括1000份酿造酱油、3份乳酸锌、2份硫酸亚铁、5份泛酸钙、10份西洋参粉、5份鹿茸粉、15份熟地粉、20份甘草粉和150份小分子团水。
酿造酱油是指以大豆和/或脱脂大豆(豆粕或豆饼)、小麦和/或麸皮为原料,经微生物发酵制成的具有特殊色、香、味的液体调味品。按照发酵工艺的不同可分为两大类:高盐稀态发酵酱油和低盐固态发酵酱油。高盐稀态发酵酱油是以大豆和/或脱脂大豆(豆粕或豆饼)、小麦和/或小麦粉为原料,经蒸煮、曲霉菌制曲后与盐水混合成稀醪,再经微生物发酵制成的酱油,而低盐固态发酵酱油是以大豆及麦麸为原料,经蒸煮、曲霉菌制曲后与盐水混合成固态酱醅,再经微生物发酵制成的酱油。以酿造酱油为主体,通过与酸水解植物蛋白调味液、食品添加剂进行调配可以制得配制酱油,市场上的生抽、老抽、饺子酱油、海鲜酱油等均为配制酱油。
锌(Zn)是维持细胞正常结构和生理功能的一个重要元素,细胞内的锌在氧化还原信号通路中具有至关重要的作用。锌离子还是组成金属酶的主要金属离子之一,具有快速的配体交换作用,对于金属酶的催化作用具有重要的意义。另外,锌离子在人体中还可以合成锌指蛋白,后者不仅能够与DNA、RNA或DNA-RNA结合,还能够与自身或其他锌指蛋白结合,用于控制生物体中蛋白质的转录和翻译过程。
乳酸锌(ZnAc2),为常用的食品锌强化剂,易溶于水,微溶于乙醇,锌元素含量占乳酸锌的22.2%。乳酸锌的吸收效果优于无机锌,可用于补锌食品、营养口服液、补锌片剂及冲剂的生产。
作为人体必需的微量元素之一,铁(Fe)是合成血红蛋白(在人体内发挥输送氧气和二氧化碳的作用)的主要成分。如果人体对铁的摄入量不足,便会影响到血红蛋白的合成,从而使红细胞中血红蛋白的含量显著减少,红细胞数目也会随之减少,进而使人体内的细胞、组织、器官等供氧不足,导致缺铁性贫血并影响机体的免疫力。
硫酸亚铁(FeSO4),无结晶水时为白色粉末,含结晶水时为浅绿色晶体(俗称“绿矾”),溶于水、甘油,不溶于乙醇。硫酸亚铁在医药上可用于治疗缺铁性贫血症,还可以作为局部收敛剂及补血剂,用于子宫肌瘤引起的慢性失血。
钙(Ca)是人体生命活动所必需的元素,是机体新陈代谢的源泉,人的生命活动如神经物质的传递、心脏搏动、肌肉收缩等都在利用和消耗钙元素。钙在体内主要存在于骨骼和牙齿中(约占99%),支持人体的运动和咀嚼能力。另外,血液中也溶解有一定量的钙,用于维持正常人的生理功能。然而,某些补锌剂和补铁剂的使用也会影响人体对钙的吸收利用,使缺钙状况加重。因此,选择合适的钙强化剂至关重要。
泛酸钙(calcium pantothenate),易溶于水和甘油,不溶于酒精、氯仿和乙醚,主要用于医药、食品及饲料添加剂。泛酸钙是合成辅酶A的重要前体,参与碳水化合物、脂肪和蛋白质的代谢,是维持正常生理机能不可缺少的微量物质。另外,泛酸钙中的钙离子还可以避免补锌补铁时造成钙流失的问题。
西洋参,又称花旗参、洋参、西洋人参,为五加科人参属植物花旗参(Panaxquinquefolium L.)的根,原产于加拿大的魁北克省和美国的威斯康星州,加拿大产的叫西洋参,美国产的叫花旗参,我国北京怀柔与东北长白山等地亦有种植。西洋参性寒,味苦、微甘,归心、肺、肾经,用于补气养阴、清火生津。西洋参中富含皂苷类(如人参皂苷Rb1)、聚乙炔类(如人参炔E)和有机酸类(如油酸、亚油酸、亚麻酸等)成分。
在上述中药保健酱油中,所述西洋参粉的颗粒粒径为100~300μm,其中总皂苷的重量百分比为4%~8%,总聚乙炔的重量百分比为0.5%~2%。
鹿茸为鹿科鹿属动物梅花鹿(Cervus nippon Temminck)或马鹿(Cervus elaphusL.)的雄鹿头上尚未骨化而带毛的幼角,我国东北、西北和内蒙、新疆及西南山区均有分布。鹿茸性温,味甘、咸,归肝、肾经,用于补肾阳、益精血、强筋骨。鹿茸中富含氨基酸类(色氨酸、赖氨酸、组氨酸等)、脂肪酸类(豆蔻酸、棕榈酸、硬脂酸、花生四烯酸等)、含氮化合物类(尿嘧啶、次黄嘌呤、脲、烟酸、肌酸酐、腐胺、精胺等)和多糖类(如硫酸软骨素A)成分。
在上述中药保健酱油中,所述鹿茸粉的颗粒粒径为100~300μm,其中总含氮化合物的重量百分比为3%~8%,总多糖的重量百分比为2%~6%。
熟地,又称熟地黄、伏地,为玄参科地黄属植物地黄(Rehmannia glutinosa(Gaertn.)Libosch.)的根的加工炮制品,通常以酒、砂仁、陈皮为辅料,经反复蒸晒,至内外色黑、油润、质地柔软粘腻后切片即可。地黄主产于河南、河北、内蒙古及东北等地,其他地区亦有少量栽培。熟地性微温,味甘,归肝、肾经,用于养血滋阴、补精益髓。熟地中富含环烯醚萜苷类(如地黄苷A)、苯乙醇苷类(如阿克替苷)和氨基酸类(如丙氨酸、谷氨酸、缬氨酸、精氨酸等)成分。
在上述中药保健酱油中,所述熟地粉的颗粒粒径为200~400μm,其中总环烯醚萜苷的重量百分比为5%~8%,总苯乙醇苷的重量百分比为2%~5%。
甘草,又称甜草根、红甘草、粉甘草、乌拉尔甘草,为豆科甘草属植物甘草(Glycyrrhiza uralensis Fisch)的根,野生品种主要分布于新疆、内蒙古、宁夏、甘肃、山西,人工种植品种主产于新疆、内蒙古、甘肃的河西走廊以及宁夏部分地区。甘草性平,味甘,归心、肺、脾、胃经,用于补脾益气、润肺止咳、缓急止痛、缓和药性。甘草中富含三萜皂苷类(如甘草酸、甘草次酸)和黄酮类(如甘草素、甘草查尔酮A)成分。
在上述中药保健酱油中,所述甘草粉的颗粒粒径为200~400μm,其中总三萜皂苷的重量百分比为5%~10%,总黄酮的重量百分比为2%~5%。
水通常是由10个以上的水分子通过氢键缔结而形成,因此称为大分子团水,而小分子团水则只包含5至6个水分子,并且以分子链团的形式存在。通过包括去离子、超声、磁化等处理步骤的方法可以改变水分子的排列取向,切断部分氢键,进而得到团簇较小的小分子团水。
上述中药保健酱油的制备方法,其包括如下步骤:
1)将小分子团水平均分成两份,备用;
2)将西洋参粉、鹿茸粉、熟地粉和甘草粉加入到其中一份小分子团水中,于50~60℃搅拌30~60分钟后冷却至室温,得到中药汁;
3)将乳酸锌、硫酸亚铁和泛酸钙加入到另一份小分子团水中,于室温搅拌均匀,得到微量元素盐汁;
4)向酿造酱油中加入步骤2)中得到的中药汁,于室温搅拌均匀,再加入步骤3)中得到的微量元素盐汁,于室温搅拌30~60分钟,得到中药保健酱油。
与现有技术相比,采用上述技术方案的本发明具有下列优点:
1)本发明的中药保健酱油综合利用乳酸锌、硫酸亚铁和泛酸钙来发挥补充微量元素的功效,实现了钙铁锌同补;
2)鹿茸中富含的多糖成分不仅有利于微量元素离子的稳定存在,还可以配合西洋参、熟地和甘草来增强酱油的保健功效,一举两得;
3)利用小分子团水配制中药汁和微量元素盐汁,有利于改善人体的吸收;
4)实验证明,本发明的中药保健酱油具有提高免疫力、改善亚健康状态的功效,并且制法简便易行,极具市场前景。
具体实施方式
下面将结合具体实施例对本发明的技术方案做出进一步的阐述。下列实施例仅用于解释和说明本发明,并不应被视为限制了本发明的范围。除另有说明外,下列实施例中所使用的仪器、试剂、材料等均可通过常规商业手段获得。
实施例1:小分子团水的制备。
将自来水通入去离子设备中进行去离子化处理,直至电导率为15μs/cm,得到去离子水并量取1L备用。选用频率为30kHz的超声波功率仪,首先设定磁感应强度为0.5T的恒定磁场,超声加磁场作用5min,其次设定磁感应强度为1T的恒定磁场,超声加磁场作用10min,最后设定磁感应强度为0.75T的恒定磁场,超声加磁场作用15min,静置至室温后进行17O-NMR测定。经过上述处理,水的半峰宽从原来的122.74Hz降至50.47Hz,由此可知,所得产品中水分子的团簇数由11变为5;静置14天后,半峰宽变为52.74Hz,产品中水分子的团簇数仍为5,稳定性良好。
实施例2-实施例6:中药保健酱油的制备。
按照表1中的配方制备中药保健酱油,其制备工艺如下:将小分子团水平均分成两份,备用;将西洋参粉、鹿茸粉、熟地粉和甘草粉加入到其中一份小分子团水中,利用机械搅拌装置于60℃搅拌30分钟后冷却至室温,得到中药汁;将乳酸锌、硫酸亚铁和泛酸钙加入到另一份小分子团水中,利用机械搅拌装置于室温搅拌均匀,得到微量元素盐汁;向酿造酱油(低盐固态发酵酱油)中加入上述中药汁,利用机械搅拌装置于室温搅拌均匀,再加入微量元素盐汁,利用机械搅拌装置于室温搅拌30分钟,得到中药保健酱油。

实施例7:中药保健酱油的质量检测。
按照《GB 18186-2000酿造酱油》中的检测项目及检测方法对实施例2~6中的中药保健酱油进行检测,其结果如表2所示。由表2可知,各项指标均符合一级低盐固态发酵酱油的标准要求。

实施例8:中药保健酱油提高亚健康人群免疫力的作用。
对处于亚健康状态的30名受试者(普遍具有嗜睡、易疲劳、食欲不振、记忆力下降、注意力无法集中、反应迟钝等症状)随机分成3组,每组10人,男女各半。第I组和第II组患者每日于午餐及晚餐时各取中药保健酱油3g佐餐,第I组连续使用4周,第II组连续使用2周。第III组为对照组,患者服用普通酱油,连续使用4周。2周后第I组和第II组患者的亚健康状况得到改善,4周后第I组患者的亚健康状况持续得到改善,但第II组患者由于停止服用中药保健酱油而出现波动,第III组患者的亚健康状况仍未得到改善。由此可见,本发明的中药保健酱油能够有效提高人体免疫力,改善亚健康状况。
Claims (9)
1.一种中药保健酱油,其特征在于:包括酿造酱油、乳酸锌、硫酸亚铁、泛酸钙、西洋参粉、鹿茸粉、熟地粉、甘草粉和小分子团水。
2.根据权利要求1所述的中药保健酱油,其特征在于:
以重量份计,所述中药保健酱油包括800~1200份酿造酱油、2~5份乳酸锌、1~3份硫酸亚铁、2~5份泛酸钙、5~10份西洋参粉、2~5份鹿茸粉、15~20份熟地粉、15~20份甘草粉和100~200份小分子团水。
3.根据权利要求2所述的中药保健酱油,其特征在于:
以重量份计,所述中药保健酱油包括1000份酿造酱油、3份乳酸锌、2份硫酸亚铁、5份泛酸钙、10份西洋参粉、5份鹿茸粉、15份熟地粉、20份甘草粉和150份小分子团水。
4.根据权利要求1至3中任一项所述的中药保健酱油,其特征在于:

5.根据权利要求1至3中任一项所述的中药保健酱油,其特征在于:
所述西洋参粉的颗粒粒径为100~300μm;
所述鹿茸粉的颗粒粒径为100~300μm;
所述熟地粉的颗粒粒径为200~400μm;
所述甘草粉的颗粒粒径为200~400μm。
6.根据权利要求1至3中任一项所述的中药保健酱油,其特征在于:
所述西洋参粉中总皂苷的重量百分比为4%~8%,总聚乙炔的重量百分比为0.5%~2%;
所述鹿茸粉中总含氮化合物的重量百分比为3%~8%,总多糖的重量百分比为2%~6%;
所述熟地粉中总环烯醚萜苷的重量百分比为5%~8%,总苯乙醇苷的重量百分比为2%~5%;
所述甘草粉中总三萜皂苷的重量百分比为5%~10%,总黄酮的重量百分比为2%~5%。
7.根据权利要求1至3中任一项所述的中药保健酱油,其特征在于:
所述小分子团水通过包括去离子、超声、磁化步骤的方法制得。
8.根据权利要求1至3中任一项所述的中药保健酱油,其特征在于:
所述小分子团水中的水团簇包含5至6个水分子。
9.一种根据权利要求1至8中任一项所述的中药保健酱油的制备方法,其特征在于:包括如下步骤:
1)将小分子团水平均分成两份,备用;
2)将西洋参粉、鹿茸粉、熟地粉和甘草粉加入到其中一份小分子团水中,于50~60℃搅拌30~60分钟后冷却至室温,得到中药汁;
3)将乳酸锌、硫酸亚铁和泛酸钙加入到另一份小分子团水中,于室温搅拌均匀,得到微量元素盐汁;
4)向酿造酱油中加入步骤2)中得到的中药汁,于室温搅拌均匀,再加入步骤3)中得到的微量元素盐汁,于室温搅拌30~60分钟,得到中药保健酱油。
