背景技术
现今,源自植物的材料用在许多应用中。这样的材料例如作为食品、食品补充剂、药品、为了美容原因或简单地为了愉悦(味道、颜色、形状)而被消耗。天然的或经处理的植物可以以不同的形式(例如新鲜的、脱水的、烹饪的、发酵的或浓缩的(提取物))被消耗。已知食品品质对健康有很大影响并且基于植物的材料提供了许多必需营养素。例如,推荐每天食用五种水果及蔬菜以接收足够量的必需物质,例如蛋白质、糖、脂质、氨基酸、维生素、多酚和芳香族衍生物以及可溶性和不溶性纤维。
人们趋于通过呈丸剂、胶囊、胶质物、滴剂、粉末等形式的基于植物的材料来补充或者甚至替代直接的植物产品消耗(呈其原始形式的植物)以接收足够的必需物质。基于植物的材料不仅作为食品补充剂被消耗,而且作为用于美容(例如,抗衰老)、健康或传统医学/植物治疗的营养品被消耗。
然而,通常处理这样的食品补充剂的时间和动机较少,原因是这样的产品的使用可能不是简单或容易处理的。
因此,需要改善源自植物材料的例如用于营养品或植物治疗或食品补充剂或食品用途的产品。特别地,期望以易于使用且对消费者有吸引力的形式提供这样的产品。另外,这些产品应提供改善的感官特性,例如味道、风味和/或香气。

c.挤出和/或模制所述一种或更多种至少部分含纤维剩余物,其中在步骤c之前和/或期间和/或之后将所述一种或更多种植物提取物添加至所述一种或更多种至少部分含纤维剩余物。

本发明和本发明方法的基本思想是处理一种或更多种植物以获得至少部分含纤维剩余物和植物提取物。在下文中,“至少部分含纤维剩余物”也将被称为“含纤维剩余物”、“植物剩余物”或“剩余物”,并且可互换使用。应注意,剩余物不总是含纤维的,而是这取决于所使用的植物和各自的提取方法。此外,“植物提取物”将被称为“提取物”。含纤维剩余物和植物提取物二者可经处理并合并以获得原始植物的重建或重构形式(重构植物产品),其性质可根据所使用的物质的量和类型进行控制。以这种方式,可以加速或甚至控制物质的释放或提取速率。此外,与天然植物相比,某些物质或所有物质的浓度可以更高。也可添加不是源自植物的其他物质以改变所得产品的性质,例如,以获得某些机械性能或添加风味或改善对所有或某些物质的释放速率的控制。
通过本发明方法获得的产品可直接消耗,或者可用于通过转移风味、味道和/或香气来制备消耗品,例如用作容器、包装纸等,如下文详细解释的。因此、所获得的产品可以直接(或间接)消耗,例如通过食用、饮用、咀嚼、吞咽、漱口、吸吮、咀嚼等消耗。
在本发明方法的步骤a)中,起初将一种或更多种植物组分(植物材料或植物物料)例如根、茎、主干、主茎、叶片、果实、花、种子、碎屑(scraps)、叶、细料(fines)、茎皮和/或粉料(shorts)与溶剂或不同溶剂的混合物混合。溶剂可以选自任何已知的溶剂,例如极性质子溶剂、非极性质子溶剂、极性非质子溶剂、非极性非质子溶剂或其混合物。溶剂的实例为例如但不限于:水、乙醇、甲苯等。在水性溶剂体系的情况下,水性溶剂的含水量在一些情况下可以大于溶剂的50重量%。在一个实施方案中,含水量为溶剂的至少约70重量%,或至少约80重量%,或至少约90重量%或约100重量%。可以使用去离子水、蒸馏水或自来水。悬浮体中溶剂的量可以广泛地变化,但通常以悬浮体的约75重量%至约99重量%的量加入。然而,溶剂的量可随溶剂的性质、进行提取的温度和植物组分的类型而变化。
在一个实施方案中,用于提取的水是热水,优选约30℃至100℃,约40℃至90℃,或约50℃至80℃,或更优选为约70℃。
在形成溶剂/植物物料混合物之后,可使物料混合物的一些或全部可溶性提取物部分从混合物中分离。如果期望的话,水性溶剂/植物物料混合物可在提取期间通过搅拌、振动或以其他方式使混合物混合来搅动以便提高提取速率。
提取时间取决于经历提取过程的草药、药用植物、茶、蔬菜和/或香料。在本发明的一个实施方案中,提取时间为约15至60分钟,优选45分钟。然而,如果需要,提取可花费甚至更长的时间,例如,提取可进行约0.5小时至约6小时或多达约7小时、约8小时、约9小时、约10小时或更长。此外,尽管未要求,但是取决于所使用的溶剂体系和应提取的植物,通常的提取温度范围为约10℃至约100℃。特别地,提取温度应当使植物组分和/或植物提取物不被温度破坏或负面地改变。
在提取步骤之前,可使用任选的研磨、磨碎或切割步骤以便粉碎植物或植物部分,从而破坏植物的细胞壁。研磨、磨碎和/或切割可通过本领域技术人员已知的任何常规的研磨、磨碎或切割装置和方法进行。一种可能的研磨方法是低温研磨。低温研磨(也称为冷冻磨碎、冷冻研磨或低温研磨)是冷却或冰冻材料,然后将其减小至小粒径的行为。在室温下在标准研磨技术下在材料上通常发生热和氧化反应。由于低温研磨,酶、维生素和许多其他活性分子被保护免受这样的反应。该技术可用于制备药用植物粉末。
一旦被提取,不溶性剩余物部分可任选地经历一个或更多个机械精制机以产生含纤维浆料。合适的精制机的一些实例可包括圆盘精制机、锥形精制机等。不溶性剩余物部分可以原样使用或在本发明方法的步骤c)中进一步改性。
在本发明的一些实施方案中,可将湿强剂添加至含纤维部分以便减少重构材料在与液体(例如水)接触时,例如在水中浸渍时的可能降解。可以使用优选选择用于食品应用的任何合适的湿强剂,例如聚酰胺-表氯醇树脂、聚胺-表氯醇树脂、聚(氨基酰胺)-表氯醇树脂、脲-甲醛树脂;三聚氰胺-甲醛树脂;烷基烯酮二聚体;烷基琥珀酸酐;聚乙烯胺;氧化多糖(例如氧化降解淀粉);乙二醛化聚丙烯酰胺树脂;聚亚胺例如聚乙烯亚胺。湿强剂是本领域技术人员熟知的并且在成分标准,例如BFR(Bundesinstitut fur Risikobewertung)XXXVI和BFRXXXVI/1或FDA(Food&Drug Administration)21CFR 176.170,FDA21CFR176.110,FDA21CFR 176.120,FDA21CFR 176.1180中进行了描述。湿强剂例如以约0.1%w/w至约20%w/w,优选约1%w/w至约10%w/w,更优选约5%w/w的量使用。在一个实施方案中,可向植物提取物中或向剩余物和植物提取物二者中添加湿强剂。
提取步骤可使用单一植物或植物混合物的组分进行。还可使用一种植物的一个或更多个特定部分,或者可使用两种或更多种植物的特定部分的混合物。在一个实施方案中,特别是关于共挤出步骤,彼此分开提取两种或更多种不同的植物(或不同植物的部分),并且在(共-)挤出过程中分开使用各自的含纤维剩余物和/或提取物,或在(共)挤出工艺之前、期间或之后合并相应的含纤维剩余物和/或提取物。
优选地,本发明的方法还允许从材料中减少不期望的化合物,以便选择性地除去不期望的组分(天然成分、杀虫剂、杂质等)。例如,可通过液-液萃取、物理吸附、离心、色谱、结晶、倾析,通过使用除雾器、干燥、蒸馏、电泳、淘析、蒸发、固相或液-液萃取、浮选、絮凝、过滤(例如使用膜)、气液分离和/或升华以及技术人员熟知的其他手段,优选在向含纤维剩余物施加植物提取物之前,从可溶部分(植物提取物)或从不可溶部分(含纤维剩余物)或二者中除去组分。
含纤维剩余物可包含至少约20重量%、至少约30重量%或至少约40重量%或至少约50重量%或至少约60重量%或至少约70重量%或至少约80重量%或至少约90重量%或约100重量%的来自一种植物的含纤维剩余物。同样地,植物提取物可包含至少约20重量%、至少约30重量%或至少约40重量%或至少约50重量%或至少约60重量%或至少约70重量%或至少约80重量%或至少约90重量%或约100重量%的来自一种植物的植物提取物。
提取也可通过除了使用热水以外的方法进行,即通过用超临界气体(例如二氧化碳)萃取进行,或通过使用例如乙醇、己烷、丙酮、R134a(1,1,1,2-四氟乙烷)、二氧化碳和氢氟烃进行。在一个实施方案中,可在室温和在大气压下使用至少一种溶剂进行提取。也可通过使用不同溶剂的混合物进行提取。在另一个实施方案中,可使用至少一种溶剂,例如R134a或二氧化碳,在不同的温度和不同的压力和不同的状态(液态、气态亚临界态或超临界态)下进行提取。例如,可使用液态(例如在室温下为挥发性或非挥发性的溶剂)、亚临界状态(例如在高于100℃的温度和高于1巴的压力下的水)或超临界状态(例如在高于31℃的温度和高于73巴的压力下的二氧化碳)的溶剂进行提取。
某些植物由于其中含有的成分(其可能是温度敏感的或不能经历某些提取条件)可能需要特定的提取条件(时间、温度、固体/液体比)。例如,从番茄中提取番茄红素必须通过使用特定的酶从番茄细胞中释放产物来进行。关于本发明,加工助剂可用于改进提取,例如pH调节剂(例如,NaOH或有机酸),微波,压力,超声,酶例如蛋白酶、淀粉酶、纤维素酶和/或果胶酶。每当本文提及“提取”时,该术语包括上述替代的提取手段。关于本发明使用的提取可以在连续或半连续或不连续的情况下进行。提取条件是本领域技术人员熟知的并且在标准教科书,例如Handbook of Separation Techniques for Chemical Engineers,第3版(1997年3月),Philip A.Schweitzer,McGraw-Hill Inc中进行了描述。

步骤b)中可溶部分(植物提取物)分离于不可溶部分(含纤维剩余物)可通过使液相分离于固相来进行,例如通过在有或没有压力下进行过滤、通过离心或在实验室中常用的并为本领域技术人员所熟知的其他方法进行。
一旦分离于植物溶液的不溶性剩余物部分,可溶性提取物部分可任选地使用任何已知类型的浓缩器或浓缩技术(例如真空蒸发器等)浓缩。在一个实施方案中,可溶性组分可以是高度浓缩的。此外,可以以任何期望的方式使用浓缩或非浓缩的可溶性提取物部分。
对于某些应用,期望在生产本发明的最终产品之前通过向植物提取物和/或不溶性含纤维剩余物添加或从其中除去成分或组分来调节组合物。可以进行这种调节以调整/改善最终产品的化学、物理和/或感官特性。

根据本发明的挤出是用于产生固定截面轮廓的物体的方法。例如,至少部分含纤维剩余物被推动或拉动通过所期望的截面的模具。通过使用挤出,可以制造具有非常复杂截面的产品,并且可以处理脆性材料,因为材料仅遭受压缩应力和剪切应力。挤出可以是连续的(理论上产生无限长的材料)或半连续的(产生许多块)。挤出过程可以用热或冷的材料来进行,即,挤出可根据起始材料以热挤出、冷挤出或温挤出进行。这些方法的一般特征,即关于温度、压力等是本领域技术人员已知的。
挤出可在通常用于该方法的条件和/或特别用于食品的条件下进行。技术人员将知道可用的温度和压力范围。例如,根据其是冷挤出、热挤出或温挤出,挤出可在约40℃至500℃的范围内进行。例如,可施加高达约50℃、高达约100℃、高达约200℃、高达约300℃、高达约400℃或高达约500℃的温度。根据所使用的温度、处理或暴露时间可高达约10秒、高达约30秒、高达约1分钟、高达约5分钟、高达约30分钟、高达约1小时等。在本发明中还可使用任何已知类型的挤出机,例如但不限于:柱塞式挤出机、螺杆挤出机、双螺杆挤出机、行星齿轮挤出机和级联挤出机等。挤出机可以根据起始材料和期望的产品类型进行选择。
在本发明的一个实施方案中,来自一种植物的至少部分含纤维剩余物以步骤b)之后获得的形式或以适于挤出过程的任何其他形式进料到挤出机中。在挤出过程之后,获得呈其最终形式的产品。在步骤c)结束时获得的产品通常为线材形式,其可使用任何常规切割装置切割成所期望的尺寸。
通常,可通过挤出方法获得的任何形状均可应用于加工本发明的含纤维植物产品。甚至复杂的形状也是合适的。挤出产品的最终形状取决于所使用的模具。例如,可能的形式可以是但不限于:不同宽度和厚度的片材、具有不同形式的线材,例如圆形、星形、三角形、正方形、T形、U形、X形,动物、果实、字母、脸的型体,不具有已知或规则形状的型体等。合适的模具形式也可以是用于制备面条、谷物、面包、糖果、小吃食品、咸味小吃等的形式。图2A示出了示例性的挤出模具或喷嘴形式,但不限于此。
可在挤出过程之前和/或期间和/或之后将植物提取物添加至剩余物。在一个实施方案中,在挤出过程之前添加植物提取物。在另一个实施方案中,在挤出过程中添加植物提取物。在另一个实施方案中,在挤出过程之后添加植物提取物。植物提取物可以来自与剩余物相同的植物。在一个实施方案中,植物提取物可以来自不同的植物或甚至可以是来自两种或更多种植物的两种或更多种植物提取物的混合物。此外,可在挤出过程开始之前添加一种植物提取物(或不同植物提取物的混合物),并在挤出过程期间和/或之后添加另一种植物提取物(或植物提取物的混合物)。例如,当使用茶或草药时,可在最终产品中以不同量(例如6%或15%)包含L-薄荷醇。如此获得的产品具有独特的味道和薄荷醇的香气。在一个实施方案中,剩余物和植物提取物来自不同的植物以产生新的味觉体验。
通过混合和/或喷洒和/或倾倒和/或浸渍将本文所述的植物提取物和/或其他物质和/或试剂添加至剩余物。根据添加的方法和时间,植物提取物可以作为流体或凝胶或浆料或粉末施加至含纤维植物产品,或者可在施加之前首先溶解在溶剂中。植物提取物可经由相应的管线连续添加或可以添加特定的时间段。此外,添加可以自动或手动进行。此外,植物提取物或植物提取物的混合物可在挤出过程中在若干个位置添加。
含纤维剩余物可以在进料到挤出机中之前与一种或更多种另外的植物的一种或更多种含纤维剩余物混合。例如,可以合并两种、三种、四种、五种、六种、七种、八种、九种、十种或甚至更多种不同的植物剩余物。以这种方式,来自不同来源且具有不同性质(例如机械的或药物的)的物质可以混合在一起以获得所期望的产品性质。例如,本发明还允许混合多种植物和草药。在一个实例中,代替使用单一植物(例如茶或薄荷叶),茶可以由以下的混合物代替:例如50%茶和50%薄荷叶(w/w);50%马鞭草和50%薄荷(w/w);30%肉桂和30%茶和10%甘草和10%洋甘菊和10%红葡萄和10%路易波士(w/w);和许多其他组合。
在挤出过程中使用两种或更多种植物剩余物的情况中,可在将剩余物进料到挤出机中之前将其混合。也可以连续添加剩余物,并且混合过程将在挤出机内进行。在一个实施方案中,两种或更多种剩余物通过相同的开口进料或通过可位于挤出机的不同位置的不同的开口进料。还可在挤出过程中连续添加一种或更多种剩余物以及在特定时间点添加一种或更多种不同的剩余物。在后一种情况下,可以获得具有不同植物剩余物组成的产品。
此外及除上述之外,含纤维剩余物可以在进料到挤出机之前与稳定剂混合。例如,含纤维剩余物可以与合成和/或天然纤维混合以获得特定机械性质,其中纤维优选是不可溶的和/或通过食品法批准的。
也可向植物提取物中添加可溶性纤维以改变膳食特性。可溶性纤维吸引水并且可以形成凝胶,这减慢了消化。可溶性纤维延迟胃的排空并使得有饱腹感,这有助于控制体重。较慢的胃排空还可以影响血糖水平,并对胰岛素敏感性具有有益作用,这可有助于控制糖尿病。可溶性纤维还可以通过干预膳食胆固醇的吸收而有助于降低LDL(“坏的”)血液胆固醇。可溶性纤维的示例性来源是:燕麦片、燕麦谷物、扁豆、苹果、橙子、梨、燕麦麸、草莓、坚果、亚麻籽、豆、干豌豆、蓝莓、车前子、黄瓜、芹菜和胡萝卜。
除了上述列出的材料之外,还可添加其他材料以改善产品的物理特性,例如纤维素衍生物如甲基纤维素、羧甲基纤维素(CMC)、羟丙基甲基纤维素(HPMC),淀粉和淀粉衍生物例如氧化降解的淀粉,多糖(及其衍生物)例如果胶、明胶、瓜尔胶、琼脂、藻酸盐、角叉菜胶,或合成纤维例如由氯乙烯或乙酸乙烯酯、聚乙烯、聚丙烯、聚酯制成的纤维。
植物提取物和含纤维植物产品的一种或两种还可包含增稠剂基质,例如天然或合成来源(优选天然来源)的非交联水胶体聚合物。增稠剂可选自以下来源的天然试剂中的至少一种:植物来源例如角豆胶、瓜尔胶、果胶、藻酸盐、角叉菜胶、琼脂、阿拉伯胶和纤维素,微生物来源例如黄原胶天然试剂、结冷胶、透明质酸和葡聚糖,动物来源例如明胶、胶原和壳聚糖天然试剂,矿物试剂例如粘土和二氧化硅,以及合成聚合物例如聚丙烯酸类或聚丙烯酰胺试剂等。
在本发明的一个实施方案中,步骤c)中的挤出过程在随后称为共挤出的方法中用两种或更多种至少部分含纤维剩余物进行。在这种方法中,将两种或更多种至少部分含纤维剩余物在不同位置进料到挤出机中。
因此,在本发明意义上的共挤出意味着不同的剩余物通过相同挤出机的不同模口(喷嘴)分开挤出,并随后进行处理,即剩余物不在挤出机内混合。在另一个实施方案中,共挤出方法在两个或更多个分开的挤出机中进行。在这种情况下,两个或更多个挤出机提供具有相同或不同形状的挤出物。在任何情况下,分开的挤出物在一个挤出机内或在随后的组装步骤中合并(即组装)。在一个实施方案中,将分开的挤出物通过一个另外的挤出头、模具或喷嘴汇集并进一步处理。通常,该组装步骤是连续过程以提供经组装的剩余物的线材,其可以被切割成所期望的长度。例如,组装过程可以通过层合、绞合、插入、覆盖和/或粘附分开的挤出物来实现,但不限于此。
例如,可层合由不同剩余物制成的两种或更多种片材,或者可绞合在相同或不同挤出机内同时生产的两种或更多种线材。在一个实施方案中,可通过施加压力或通过使用适于该目的的粘合剂来进行层合或绞合。在一个实施方案中,一种挤出的线材可被由同一挤出机或分开的挤出机同时产生的线材涂覆或覆盖,使得一种线材被另一种线材涂覆。在另一个实施方案中,可以共挤出并组装不同剩余物的混合物。
例如,可通过共挤出方法生产的根据本发明的产品可包括两个、三个、四个、五个或更多个层,其在挤出过程之后被层合或组装,例如,包含含纤维植物产品的第一层1、包含具有第一物质的植物提取物的第二层2、包含具有第二物质的植物提取物的第三层等。每层可包含提供特定效果的不同的物质。此外,可提供另外的层或现有层中的相应物质以用于控制从产品释放物质的顺序和/或量和/或速度。
在共挤出方法中,至少含纤维剩余物中的每一者可在挤出过程之前和/或期间和/或之后与提取物分别接触。在一个实施方案中,在共挤出过程之前添加植物提取物。在另一个实施方案中,在共挤出过程期间添加植物提取物。在另一个实施方案中,在共挤出方法之后添加植物提取物。提取物可来自相同的植物或可来自另一种植物。例如,在两种含纤维剩余物被共挤出的情况下,每种含纤维剩余物可以与来自相同植物或来自相应的另一种植物的提取物接触。一种或更多种植物提取物可在挤出过程之前和/或期间和/或之后作为混合物添加。还可将一种或更多种植物提取物分开添加到各个剩余物中。最终组装的共挤出产物还可与一种或更多种提取物(除了之前在过程中使用的任何提取物之外或作为仅有的提取物(或提取物的混合物))接触。通常可以如上所述将提取物应用于挤出过程。
在一个实施方案中,本发明方法还包括组装在步骤c)中通过挤出和/或共挤出获得的两种或更多种产物以获得三维形状产品的步骤。这意味着在挤出过程之后获得的已经被切割成所期望长度的产品可被组装以产生三维型体。

模制方法可使用从一种植物获得的剩余物进行。在本发明的另一个实施方案中,模制方法也可使用从两种或更多种植物获得的剩余物的混合物进行。各个剩余物可在进料到模具中之前通过任何常规方法混合。来自不同植物的剩余物的数目不受限制。例如,可在单个模制过程中使用来自两种、三种、四种、五种、六种、七种、八种、九种、十种或甚至更多种植物的剩余物。
在该方法中,可将任选与其他试剂混合的一种或更多种含纤维剩余物进料到相应的模具中。可使用适合于模制过程和/或可支持稳定的模制产品的任何试剂,其中这样的试剂应被食品应用接受。在施加特定温度和压力一段特定时间后,可获得最终产品。技术人员将意识到为了获得具有所期望性质的产品的工艺条件。在一个实施方案中,可以使用脱模剂以使产品更容易地从模具中取出。
通过该模制方法获得的产品是通常不需要进一步的加工步骤的最终产品。在一个实施方案中,可以洗涤或清洁产品以便除去残留物或脱模剂等。还可以处理最终产品以延长其耐久性。
在本发明的另一个实施方案中,还可以用已经模制的两个或更多个部件组装产品。通常,上述用于制备三维产品的相同组装过程在此适用。在一个实施方案中,模制部件可由不同的植物或植物混合物的剩余物制成。例如,可由两个相同大小的部件组装杯或碗,其中一个部件由一种植物剩余物制成,另一个部件由另一种植物剩余物制成,或者其中壁由一种植物剩余物制成,底部由不同的植物剩余物制成。
提取物可以在模制过程之前或之后添加。在一个实施方案中,在模制过程之前添加植物提取物。在另一个实施方案中,在模制过程之后添加植物提取物。如上文已经概述的,可使用一种或更多种提取物。在一种提取物的情况下,提取物可以来自相同的植物或来自其他植物。
当在模制方法中使用时,可将与上述挤出方法中提及的相同的另外组分添加至含纤维剩余物和/或提取物。
模制过程可用于获得三维产品,例如但不限于:杯、碗、碟、餐具、盘、平底锅、罐、瓶、盒等。如上所述,产品可以由一种植物剩余物、植物剩余物的混合物制成,或不同部件可由不同的植物剩余物制成。此外,与一种或更多种提取物的任何组合都是可能的。图3示出了根据本发明制造的示例性杯子,其中突出了内表面(同样的杯子也可使用上述挤出方法生产)。在本发明的一个实施方案中,三维产品可以是由含纤维植物剩余物制成的罐状或容器状产品,其中内壁或表面涂覆有植物提取物。这样的产品适合例如用于容易地制备饮料或泡制液,因为(热或冷的)液体例如热水或冷水被倒入产品内部以溶解植物提取物从而得到饮料或泡制液。
在另一个实施方案中,可将用于保护挥发性物质的试剂添加至提取物和剩余物两者中。例如,试剂可在添加时包封挥发性物质。
在一个实施方案中,着色剂可以在挤出或模制过程之前、期间或之后添加。着色剂应确保最终产品不会由于制造过程(例如由温度变化、压力变化和/或与制造过程中使用的液体接触时引起)而失去其原始颜色。此外,着色剂也可用于使本身完全无颜色或仅具有浅色的产品着色。合适的着色剂是已经由相应的国家或地区当局改进的食品着色剂。此外,还可以添加着色剂以保持使用中的产品的颜色。例如,在产品是由一种或更多种茶植物(和提取物)制成的杯子的情况下,可将热水添加到杯子中以制备茶饮料。在该过程中,着色剂可以保持植物材料的颜色,使得其在使用期间仍然看来良好。
在一个实施方案中,本发明的方法包括添加膨胀剂的步骤。膨胀剂是能够提供这样性质的试剂:在外部影响下由本发明方法获得的产品改变其形状。例如,这样的外部影响可以是温度变化或与液体的接触。膨胀剂可在产品中以不同的浓度使用,使得产品在触发形状变化之后呈现期望的形状。例如,在一个实施方案中,在本发明方法之后获得的产品可在与水接触后膨胀至果实的形状,其中所述产品提供相应的调味饮料。图2B示出了这种膨胀过程的实例。在左侧可看到挤出(或模制)产品,其在受外部影响(中间的图)时膨胀到最终形式(右侧视野)。
在一个实施方案中,本发明的产品,特别是当作为片状产品生产时,可用于提供重构植物材料的折纸(Origami)或剪纸(Kirigami)折叠件。可获得大范围的形状,例如图案、花、动物等(列表非穷举)。折纸折叠件的实例在图4中示出。在该实例中,左边的形状将展开成右边的三维形状,例如在与水接触时。优选地,本发明的产品以这样的方式产生:最终设计在材料浸入水中或在浸渍完成时出现。在一个实施方案中,这种产品包含上述膨胀剂。
在一个实施方案中,可以提供着色剂以及膨胀剂,使得一旦产品或产品表面的基本上所有可溶性物质溶解,则完成颜色或形状改变。此外,包括在触发改变之后的预定时间之后,任选地在通常的浸渍时间之后完成颜色或形状改变。
在另一个实施方案中,将至少部分含纤维剩余物挤出,任选地精制并且随后模制和/或模切。
在另一个实施方案中,在挤出步骤之前和/或挤出步骤之后和/或在模制步骤之后和/或在模切步骤之后,将植物提取物添加至剩余物。
在另一个实施方案中,在步骤c)的挤出机中完成步骤a)和b)。
图1提供了上述本发明方法的一般流程图。流程图示出了分离提取物和含纤维剩余物的步骤以及如何通过挤出(包括3D打印技术)和/或模制、任选地模切来处理剩余物。可以在挤出和/或模制过程之前、期间或之后添加可任选地进一步处理的提取物。这同样适用于任选地添加的物质。
在另一个实施方案中,本发明涉及根据本发明制备的包含含纤维植物产品和植物提取物的产品。可能的产品已经在上面提到。
本发明可用于许多领域,例如用于食品、食品补充剂、医药、化妆品、健康、营养品或植物治疗应用。结合具体应用提及的植物也可以结合其他应用使用。
本发明产品的性能改进的原因是由于原料的处理。根据本发明,受控量的所选物质可用于本发明产品,即,含纤维植物产品或植物提取物中。如果需要,可以基本上重构或重建一种植物,使得最终产品包含原料的许多或基本上所有的物质。重构产品与原始植物相比是有利的,因为来自重建产品的物质可以以受控的方式释放,例如比从天然植物中更快地释放。此外,可能期望将来自其他植物的其他物质或合成物质混合到可食用产品中以改变其机械或其他性质。同样,可以期望分离某些不期望的物质,例如,杀虫剂、金属、多酚或植物中天然含有的物质。
根据本发明的产品可用作调味品或佐料或香料来补充或改变食品的成分,例如,改善味道、质地或口感中的一种或更多种,或添加有用物质例如矿物质或维生素。例如,该产品可以与热的、温的或冷的食物或溶剂例如水(例如以制备汤或酱汁或调味汁)或牛奶(以制备调味乳产品)一起使用。来自产品的物质被注入或释放到溶剂或食物中。另一方面,产品可以仅释放特定物质,例如,包含在植物提取物中的物质和/或含纤维植物产品的一部分物质。在后一种情况下,剩余的物质(即不溶解在食物中的物质)可以是与食物分离的形式,例如一整块。
产品可用于直接消耗,例如,通过食用、饮用、吞咽、漱口、吸吮或咀嚼。产品可以是糖、糖果、口香糖或片材如纸。根据产品的目的,一旦产品与唾液接触(即在口中),则可释放特定物质。其他物质可保留在产品中,并且仅在其他消化步骤中释放。以这种方式,可以控制各种物质应该在何处发挥其作用。
在一个实施方案中,根据本发明制造的产品用作向其中加入热或冷液体的容器(杯、碗、瓶等)。提取物将溶解在液体中,并且将获得味道、风味和/或香气改善或改变的相应风味的液体,例如茶、牛奶、咖啡、苏打水等。甚至汤、酱汁或任何其他液体食物也可以在这样的容器中调味。
在一个实施方案中,可通过本发明的方法制造餐具,例如勺子、刀子和叉子,然后其可以在食用期间向食物提供(另外的)味道和风味。
在另一个实施方案中,本发明的产品可用作一种可以对汤进行调味的汤块,其中所述块本身不溶解。这种“块”可以具有可以用本发明产生的任何形式,例如星状物、字母、著名漫画人物等。根据该实施方案,产品还可以用于制备茶或其他饮料。
本发明的产品在以下意义上实现了更有效的提取(从植物中提取高达约100%的可溶物):对于给定重量的材料,可比天然植物成分释放更多的可溶物。该产品还提供了更快的提取(与植物材料以其天然未转化形式进行的常规提取相比)。具体地,本发明的组合物具有提高的效率,例如,在沸水中或在非加热的水或室温下的水中。
用于制造本发明组合物的方法还允许具体地调节产品的最终组成,例如从可溶性或不溶性部分除去例如异物、改变味道和/或气味的组分、或咖啡因、杀虫剂、重金属、霉菌毒素、毒物、和过敏分子例如香豆素、法尼醇、香叶醇、柠檬烯、里哪醇、黄樟素、甲基丁香酚,或通过向可溶性或不溶性部分添加例如所期望的添加剂,例如甜味剂、糖、调味剂、肠衣(casings)、维生素、着色剂、矿物质、增味剂。
在另一个实施方案中,本发明的重构材料中的可溶性部分可以精确地调节(与标准水平相比降低、处于标准水平或与标准水平相比增加)。关键的优点是,重构材料中的成分水平可以精确地增加至高于原始天然形式的水平,从而允许具有更高浓度的所期望物质的产品。成分的调节还可以确保递送成分的一致的标准化水平以补偿植物中物质(即,活性成分)的自然变化。
不同植物材料通过本发明方法结合成浸渍有来自不同植物(相同植物或共混物)的提取物的单一产品提供了新的味道体验和叠加的或协同的效果。例如,已知某些植物提取物的组合或某些植物成分的组合具有叠加或协同效应,例如用于治疗失眠和警醒症的啤酒花和缬草提取物的混合物(Blumenthal等,J.Herbal Medicine,expanded Commission Emonographs,American Botanical Council,Austin,2000,394-400)或用于治疗幽门螺杆菌(H.pylori)感染的牛至和蔓越橘提取物的混合物(Lin等,Appl.Environ.Microbiol.2005年12月,第71卷,第12期,8558-8564),或在前列腺癌细胞系中测试其累加或协同效应的黄芩(S.baicalensis)、木樨草素(D.morifolium)、甘草(G.uralensis)和冬凌草(R.rubescens)的提取物的不同混合物(Adams等,Evid BasedComplement Alternat Med.2006March;3(1):117-124)。
总之,本发明的重构植物产品提供了若干益处和优点,例如
·提供具有更高提取产率和提取速度的产品;
·提供优选可分散的和可生物降解的产品;
·能够调节活性成分(例如多酚、精油等)的含量以提供一致的组合物;
·调节(减少)不期望成分(例如杀虫剂、咖啡因等)含量的能力;
·能够提供新的感官特性(例如调节风味强度、各种植物的混合物等);
以及
·在制造过程中减少细菌负载。
以下实施例进一步描述和演示了在本发明范围内的实施方案。给出这些实施例仅仅是出于说明的目的,并且不应被解释为对本发明的限制,因为在不脱离本发明的精神和范围的情况下,其多种变化是可能的。
实施例
实施例1
制造重构植物产品的方法
使用红茶(Camellia sinensis)植物作为原料。将该植物与水以按重量计1比5的植物/水比例混合,并将该混合物在85℃下加热20分钟。随后,在液压机中通过提取步骤使水性部分分离于含纤维部分。然后,在按重量计1比5的植物/水比例下将含纤维剩余物在85℃下再次加热10分钟。再次,在液压机中通过提取步骤使水性部分分离于含纤维部分。然后,将含纤维剩余物在Valley打浆机中以1.4%稠度精制10分钟。作为下一步骤,将纤维素纤维,具体是(马尼拉麻、硬木和软木浆的共混物,各自的比例:60/10/30)以按重量计5比1的含纤维剩余物/木浆比例添加至含纤维剩余物中,并将产品挤出或模制。在挤出之前、期间或之后添加提取物。
实施例2
重构路易波士叶
根据以下方法制备重构产品:首先将路易波士(Aspalathus linearis)以按重量计1比5的路易波士/水比例在85℃下加热20分钟。随后在液压机中进行提取步骤以使水性部分分离于路易波士纤维部分。将回收的路易波士纤维部分在按重量计1比5的路易波士/水比例下再次在85℃下加热10分钟。在另外的提取(通过压榨)之后,然后将含纤维部分在Valley打浆机中以1.4%稠度精制10分钟。精制后,将纤维素纤维(马尼拉麻、硬木和软木浆的共混物,各自的比例:60/10/30)以按重量计5比1的路易波士纤维/木浆比例添加至路易波士含纤维剩余物中,然后将湿强剂以5%w/w的水平添加到纤维部分中以制备手抄纸(hand sheets)。将水性部分在蒸发器中浓缩至固体浓度为50%,然后挤出或模制。在挤出之前、期间或之后添加提取物。
实施例3
重构薄荷叶
根据以下方法制备重构产品:首先将薄荷(Mentha x piperita)以按重量计1比5的薄荷/水比例在85℃下加热20分钟。随后在液压机中进行提取步骤以使水性部分分离于路易波士纤维部分。将回收的薄荷纤维部分在按重量计1比5的薄荷/水比例下在85℃下再次加热10分钟。在另外的提取(通过压榨)之后,然后将含纤维部分在Valley打浆机中以1.4%稠度精制10分钟。精制后,将纤维素纤维(马铃薯、硬木和软木浆的共混物,各自的比例:60/10/30)以按重量计5比1的薄荷纤维/木浆比例添加至薄荷含纤维剩余物中,然后将湿强剂以5%w/w的水平添加到含纤维部分中,并将混合物挤出或模制。在挤出之前、期间或之后添加提取物。
Claims (19)
1.一种制造包含一种或更多种含纤维植物产品和一种或更多种植物提取物的产品的方法,所述方法包括以下步骤:
a.提取一种或更多种植物的一种或更多种物质以获得一种或更多种植物提取物和一种或更多种至少部分含纤维剩余物;
b.使所述一种或更多种植物提取物分离于所述一种或更多种至少部分含纤维剩余物;
c.挤出和/或模制所述一种或更多种至少部分含纤维剩余物,
其中在步骤c之前和/或期间和/或之后将所述一种或更多种植物提取物添加至所述一种或更多种至少部分含纤维剩余物。
2.权利要求1所述的方法,其中通过共挤出两种或更多种至少部分含纤维剩余物来进行所述挤出以获得两种或更多种挤出物。
3.权利要求2所述的方法,其中所述共挤出在同一挤出机中或在分开的挤出机中进行。
4.权利要求2或3所述的方法,其中将所述两种或更多种挤出物组装成最终产品。
5.权利要求4所述的方法,其中所述组装的步骤通过层合、绞合、插入、覆盖和/或粘附所述两种或更多种挤出物来进行。
6.权利要求1至5所述的方法,还包括将步骤c)中获得的两种或更多种产品组装以获得三维形状的产品的步骤。
7.权利要求1所述的方法,其中挤出所述一种或更多种至少部分含纤维剩余物的过程用于3D打印。
8.前述权利要求中任一项所述的方法,还包括以下步骤:浓缩所述植物提取物和/或纯化所述植物提取物和/或对所述植物提取物进行调味和/或将所述植物提取物与一种或更多种其他植物提取物混合和/或将所述植物提取物与一种或更多种另外的物质混合。
9.前述权利要求中任一项所述的方法,还包括在步骤c)之前和/或期间和/或之后添加填料、湿强剂、用于保护挥发性物质的试剂、着色剂和/或膨胀剂中的一种或更多种的步骤。
10.权利要求9所述的方法,其中在所述产品中以不同的浓度提供所述膨胀剂使得所述产品在触发形状改变之后呈现期望的形状。
11.权利要求9或10中任一项所述的方法,其中提供所述着色剂和/或膨胀剂使得颜色或形状改变a)一旦所述产品或所述产品表面的基本上所有可溶性物质溶解就完成,或b)在触发改变后的预定时间之后,任选地在通常的浸渍时间之后完成。
12.前述权利要求中任一项所述的方法,其中在步骤c)中将剩余物材料以这样的方式挤出和/或模制:使得所述产品具有不同的材料密度以能够在特定位置吸收受控量的液体,使得所述产品在浸入液体中时以受控的方式膨胀并且呈现期望的形状。
13.前述权利要求中任一项所述的方法,其中在步骤c)中将所述至少部分含纤维剩余物挤出,任选地精制,并且随后模制和/或模切。
14.权利要求13所述的方法,其中在所述挤出步骤之前和/或在所述挤出步骤期间和/或在所述挤出步骤之后和/或在所述模制步骤之前和/或在所述模制步骤之后和/或在所述模切步骤之后将植物提取物添加至所述剩余物。
15.前述权利要求中任一项所述的方法,其中将所述植物提取物和/或其他物质和/或试剂通过混合和/或喷洒和/或倾泄添加至所述剩余物。
16.前述权利要求中任一项所述的方法,其中步骤a)和b)在步骤c)的挤出机中完成。
17.一种打印机,特别是3D打印机,其调制为实现根据权利要求1所述的步骤c)中获得的两种或更多种产品的组装。
18.一种盒,特别是3D打印盒,其用于根据权利要求17所述的3D打印机。
19.一种包含根据权利要求1至18中任一项制造的一种或更多种含纤维植物产品和一种或更多种植物提取物的产品。
