本发明涉及牛肉加工设备领域,具体为一种牛肉切割刀具。
背景技术
牛肉含有丰富的蛋白质,氨基酸,其组成比猪肉更接近人体需要,能提高机体抗病能力,对生长发育及手术后、病后调养的人在补充失血和修复组织等方面特别适宜。然而,在对牛肉进行解剖的过程中,由于肉和骨头的硬度存在明显的差异,工人需要不断的更换刀具、分别对骨头和肉进行切割。这样一来,则增加了工人的劳动强度。
授权公告号为CN104057479B、发明名称为《骨肉切割刀具》的发明中公开了一种切割刀具,包括基盘、切肉刀和切骨刀;切肉刀的刀柄通过弹性件连接在基盘上,切骨刀固定在基盘上;切割时,切肉刀在遇到骨头时自动退让,实现了不同刀具的自动切换,减少了工人的劳动成本。但是使用这种设备进行切割,由于在对牛肉切割的过程中,碎肉会沾附在切肉刀上,而随着碎肉在切肉刀上的附着,切肉刀对牛肉的切割作用受到影响,降低了切割牛肉的工作效率,因此需要工人经常对切肉刀进行擦拭。
发明内容
本发明意在提供一种牛肉切割刀具,以解决在切割牛肉的过程中碎肉容易粘附在切肉刀上的问题。
本发明提供基础方案是:牛肉切割刀具,包括可转动的连接盘和切割刀组,连接盘包括基盘和上盖盘,基盘上设有安装槽,上盖盘连接在基盘上;其中,切割刀组的刀柄端安装在安装槽内,切割刀组的刀刃端伸出安装槽;切割刀组包括切肉刀和切骨刀,切骨刀通过连接轴固定在基盘上,切肉刀铰接在连接轴上,切骨刀与切肉刀之间设置有扭簧,切肉刀的刀背朝向切骨刀的刀刃,切骨刀的刀身开有收纳切肉刀的条形槽;条形槽与切肉刀刀身接触的表面设有磨刀层。
基础方案的工作原理:加工时,连接盘转动,带动切割刀组对牛肉进行切割;在连接盘旋转的过程中,切肉刀会比切骨刀先一步与牛肉接触,实现对肉等软组织的切割,同时部分碎肉会附着在切肉刀上;当切肉刀碰到骨头后,由于骨头的硬度大,对切肉刀的阻力增大,切肉刀会向切骨刀的方向摆动,在切肉刀转动到切骨刀的条形槽内时,切骨刀上条形槽的槽壁将切肉刀上附着的碎肉刮落,条形槽的磨刀层对切肉刀进行磨刀;当骨头遇到切骨刀时,切骨刀对骨头进行切割,断开的骨头不再对切肉刀进行阻挡,此时切肉刀在扭簧的作用下转动回原始位置,条形槽的磨刀层再次对切肉刀进行磨刀,切肉刀继续对牛肉进行切割。
切骨刀和切肉刀直接设置扭簧后,切割时,切肉刀对肉等软组织进行切割,遇到骨头后,切肉刀旋转,避开骨头,切骨刀对骨头进行切割,实现了在对牛肉切割的过程中,不同刀具的自动切换;切肉刀旋转进条形槽时,附着在切肉刀上的碎肉被切骨刀刮落,代替了现有操作方式中手动对切肉刀进行擦拭的操作,确保了切肉刀对肉等软组织的切割效果,提高了切割牛肉的工作效率。
基础方案的有益效果是:1.切割时,切肉刀对骨头进行避让,避免了骨头对切肉刀造成损伤,同时,切骨刀将切肉刀上附着的碎肉刮落,保证了切肉刀的切割效果;
2.切肉刀旋转进条形槽时,磨刀层对切肉刀进行磨刀,让切肉刀的刀刃始终保持锋利,进一步保证了切肉刀的切割效果;
3.切肉刀在回复到原始位置的过程中,切肉刀与牛肉保持相对运动的状态,加快了对牛肉的切割操作。
优选方案一:作为基础方案的优选,切骨刀的刀刃为锯齿状。有益效果:在切骨刀对骨头进行切割的时候,锯齿状的刀刃增大了切骨刀对骨头的压强,保证了切骨刀能顺利的将骨头锯切断。
优选方案二:作为优选方案一的优选,基盘上等间距的设置有五组切割刀组。有益效果:基盘上设置五组切割刀组,保证了相邻切割刀组之间留有空隙,避免了切割时切割刀组由于散热不良而出现肉质不良的问题。
优选方案三:作为优选方案二的优选,上盖盘通过螺栓连接在基盘上。有益效果:上盖盘通过螺栓连接在基盘上,方便上盖盘的拆卸。
优选方案四:作为优选方案三的优选,条形槽与切肉刀的刀背接触的端面设置有缓冲垫。有益效果:设置缓冲垫后,在切肉刀滑进条形槽的时候,缓冲垫对切肉刀进行缓冲,从而降低了条形槽对切肉刀的撞击,减少了切肉刀的损伤。
优选方案五:作为优选方案四的优选,切骨刀的表面设有凹槽。有益效果:切骨刀的表面设置凹槽后,骨头在被切开的过程中产生的一些骨头的碎屑会落进凹槽中,从而完成对骨头碎屑的收集。

具体实施方式
下面通过具体实施方式对本发明作进一步详细的说明:
说明书附图中的附图标记包括:基盘10、上盖盘12、切肉刀21、切骨刀23、凹槽231。
如图1所示的牛肉切割刀具,包括可转动的连接盘和切割刀组,连接盘的中心处开设有连接孔,连接盘包括基盘10和上盖盘12,基盘10上设有安装槽,上盖盘12通过螺栓连接在基盘10上;
其中,五组切割刀组的刀柄端等间距的安装在安装槽内,切割刀组的刀刃端伸出安装槽;如图2所示,切割刀组包括切肉刀21和切骨刀23,切骨刀23通过连接轴固定在基盘10上,切肉刀21铰接在连接轴上,切骨刀23与切肉刀21之间设置有扭簧,切肉刀21的刀背朝向切骨刀23的刀刃;
切骨刀23的刀刃为锯齿状,切骨刀23的表面设有凹槽231,切骨刀23的刀身开有收纳切肉刀21的条形槽;条形槽与切肉刀21刀身接触的端面设有磨刀层,条形槽与切肉刀21刀背接触的端面设置有橡胶垫。
加工时,将连接盘中心的连接孔固定在电机的输出轴上;启动电机,连接盘顺时针转动,带动切割刀组顺时针转动;运动的切割刀组开始对牛肉进行切割;在切割的过程中,切肉刀21对肉等软组织进行切割,部分碎肉附着在切肉刀21的表面;当切肉刀21遇到骨头时,切肉刀21滑进后面的切骨刀23的条形槽内,如图3和图4所示,切骨刀23开始对骨头进行锯切,骨头的碎屑落进切骨刀23的凹槽231中,而在切肉刀21滑入条形槽的时候,条形槽的磨刀层对切肉刀21的刀面进行打磨,条形槽的橡胶垫则起到一个缓冲作用;切骨刀23将骨头锯切开后,切肉刀21不再受到骨头的阻挡,在扭簧的作用下从条形槽内滑出,对后面的牛肉继续进行切割;在切肉刀21滑出条形槽的过程中,条形槽的磨刀层再次对切肉刀21进行打磨,保证了切肉刀21的锋利。

1.牛肉切割刀具,包括可转动的连接盘和切割刀组,所述连接盘包括基盘和上盖盘,所述基盘上设有安装槽,所述上盖盘连接在所述基盘上;其特征在于:所述切割刀组的刀柄端安装在所述安装槽内,所述切割刀组的刀刃端伸出所述安装槽;所述切割刀组包括切肉刀和切骨刀,所述切骨刀通过连接轴固定在所述基盘上,所述切肉刀铰接在所述连接轴上,所述切骨刀与所述切肉刀之间设置有扭簧;所述切肉刀的刀背朝向所述切骨刀的刀刃,所述切骨刀的刀身开有收纳切肉刀的条形槽;所述条形槽与所述切肉刀刀身接触的表面设有磨刀层。
2.根据权利要求1所述的牛肉切割刀具,其特征在于:所述切骨刀的刀刃为锯齿状。
3.根据权利要求2所述的牛肉切割刀具,其特征在于:所述基盘上等间距的设置有五组所述切割刀组。
4.根据权利要求3所述的牛肉切割刀具,其特征在于:所述上盖盘通过螺栓连接在基盘上。
5.根据权利要求4所述的牛肉切割刀具,其特征在于:所述条形槽与所述切肉刀的刀背接触的端面设置有缓冲垫。
