Description
Technical Field
The present invention relates to a machine for making sesame biscuits, spherical biscuits coated with sesame or the like (normally for banquet preparation) or any food having the same characteristics as said biscuits.
Background
Sesame biscuits (Kuih Bijan/Kuih Buah Rotan/Kuih Redan) are a traditional malted snack popular in Malaysia. The main ingredients of the sesame biscuit comprise glutinous rice flour, sugar, water and sesame seeds. Although a machine has been invented to replace hand-made, the method of making the snack remains hand-made or hand-made. The prior art entitled "machine for making Kuih Bijan (MY-146485)" was specifically designed for small-scale sesame biscuit producers with the objective of replacing the tedious manual making process while increasing productivity and improving the sanitization practices in production. The prior art basically comprises: a single screw dough extruder modified from a meat grinder, with a dough inlet at the top of the extruder for making the dough into smaller sizes; a die plate having three die holes of 1.0 cm in diameter for determining the diameter of the extruded dough; a rotary 4-blade cutter for cutting the extruded dough into dough balls; a wire mesh drum for rounding the dough balls and coating the dough balls with sesame; a single horsepower three phase motor for all mechanical operation devices; a motor frequency converter for controlling the operating speed; and a body frame combining all the above members into one unit.
The main problem faced by the previous invention is the problem of dough sticking that occurs during slicing, shaping and coating of sesame. The sticky nature of the dough, primarily due to the use of the glutinous rice flour, causes the sliced dough to stick to the blade surfaces of the cutter, causing the sticky sliced dough to accumulate as the rotary 4-blade cutter continues to rotate. The same problem occurs in the drum when molding and coating sesame. The dough balls stick and accumulate on the inner wall surface of the wire mesh drum before sufficient time is allowed for the sesame seeds to fully coat the dough balls.
Another example of the prior art is US application 6113960, which describes a method of coating food pieces with a powdered substance. The apparatus includes a drum having a pair of opposed side openings, and a coupling member mounted on a cylindrical inner surface thereof. The combination part sprinkles the powder substance when the roller rotates. The inlet member extends through one of the openings and places food pieces in the drum such that one food piece is placed on the powdered substance between each adjacent pair of engaging members of the bottom portion of the drum. The drum rotates to roll the food pieces in the powdered substance so that they completely coat the food pieces, and the engaging member lifts the coated food pieces to the upper portion of the drum until the coated food pieces roll out or slide out of the engaging member. An exit member is provided for receiving the coated food pieces as they roll out or slide out of the combining member.
Summarizing, the drawbacks of the prior art are mainly due to the problems of dough sticking to the cutter and dough build-up sticking during cutting and dough sticking and build-up inside the drum during shaping and coating with sesame.
Therefore, there is a need for inventions that overcome these disadvantages.

The operation of the present invention begins with the addition of dough into the dough inlet 101, according to one embodiment of the present invention. The dough inlet 101 is 10.0 cm in height and 6.5 cm in diameter for the addition of the pre-mixed dough. The added dough falls into the housing 103 with the aid of the auger's rotational motion. The housing 103 has a rectangular outer shape and a hollow inner cylindrical shape for inserting the auger 105. The size of the auger 105 is 22.0 cm long, 7.0 cm in diameter and has a constant pitch of 4.0 cm.
The rotational motion of auger 105 transfers dough to conical channel 107 and die tube 109. The dough size changes from large to small as it passes through the passage 107 and the die tube 109. The conical passage 107 is 13.0 cm long and is configured to reduce the size of the dough from 5.5 cm in diameter to 1 cm in diameter.
The dough exiting the die tube 109 provided a reduced size dough having a diameter of 1.0 cm for cutting. The die tube 109 has a constant inner diameter of 1.0 cm, an outer diameter of 1.5 cm and a length of 7.0 cm. When the desired length is reached, the rotating wire knives cut the extruded dough into dough balls. The rotating wire knife is driven by the second motor 202 at a speed of 0-30 rpm. The slicing unit 200 further includes: a connecting rod 203 with a diameter of 0.16 cm and a length of 19.5 cm and a food grade stainless steel wire with a diameter of 0.25 mm (0.01 inch) and a length of 9.5 cm, the connecting rod 203 being connected to a wide U-shaped gripping arm 205 with a length of 9.5 cm, a height of 3.2 cm and a width of 1.0 cm.
The dough balls fall into a circular collector 303 filled with sesame seeds. Crossed agitator combs 305a, 305b are located within the circular collector 303 to agitate the dough balls on the sesame seeds for forming and coating the sesame seeds. Pairs of crossed agitator combs 305a, 305b are located within the circular collector 303 and are driven to rotate by a third motor 301 at a speed of 0-30 rpm. Another function of the beater combs 305a, 305b is to separate the dough balls, preventing them from sticking to each other.
Prior to frying, the dough balls coated with sesame seeds in the collector 303 are transferred to a sieve to remove excess sesame seeds. The dough balls have a cylindrical shape, but they expand spherically during frying. The circular collector 303 is designed to be adaptable to prevent over-loading of dough balls inside the collector resulting in incomplete sesame coating and conglutinated dough ball accumulation.
