本发明涉及保健咖啡技术领域,尤其涉及一种延缓衰老速溶咖啡及其制备方法。
背景技术
中药当归补血以养肝体、活血以通心脉、通便以利肠腑,主要用于血虚萎黄、月经不调、虚寒腹痛、肠燥便秘等症状,现代研究表明当归主要有效成分为水溶性当归粗多糖、阿魏酸和挥发油,而提取主要采用水提、碱提等方法,工艺简单落后,使当归有效成分收率和纯度较低;咖啡生豆没有香气,只有经过烘焙加热使咖啡中的氨基酸和还原糖进行梅拉德反应和焦糖化反应才能产生咖啡的特征香气,传统烘焙工艺通过咖啡豆在烘培过程中颜色的变化以浅度、中度、深度等色差来描述烘焙程度,但实际上咖啡豆的颜色并不能准确反映烘焙程度,不同的烘焙条件也能使咖啡豆达到相同颜色;为此本发明将挥发油含量最低的当归头加工提取出水溶性成分,在咖啡豆烘培工艺基础上进行改进从而提供一种营养保健的速溶咖啡。
发明内容
本发明是为了弥补现有技术的不足,提供一种延缓衰老速溶咖啡及其制备方法。
本发明是通过以下技术方案实现的:
一种延缓衰老速溶咖啡,是由下述重量份的原料制成:
阿拉比卡生豆100-200、蓝莓10-20、裙带菜2-4、黑枸杞4-8、番荔枝5-10、黑豆3-6、腰果仁1-2、当归头1-2、咖啡果皮15-30、脱脂奶粉20-40、海藻糖25-50。
一种所述的延缓衰老速溶咖啡制备方法,包括以下步骤:
(1)选取优质阿拉比卡生豆,洗净后放入烘培机中,在真空度150-200Pa、温度200-220℃条件下焙炒15-20分钟,取出自然冷却,用磨豆机研磨,得到的粉料用振动式低温超微粉碎机在-10±2℃条件下粉碎20-30分钟,得到超微粉;
(2)将上述超微粉用10-15倍50-60℃蒸馏水冲泡30-40分钟,在温度80-85℃下用超声波处理50-60分钟,冷却后离心过滤,得到浓咖啡和滤渣,将滤渣用20-30倍蒸馏水在温度85-90℃下回流提取2-3小时,冷却后离心过滤,得到的淡咖啡与浓咖啡混合均匀,经真空减压浓缩、冷冻干燥后得到咖啡粉;
(3)将新鲜的蓝莓去蒂洗净、裙带菜去杂洗净、黑枸杞去梗洗净、番荔枝去壳去核,将黑豆和腰果仁用温水浸泡5-6小时后拣杂洗净、再小火炒至熟香后冷却,处理好的原料全部混合,加入15-20倍蒸馏水打浆,在60-70℃下用超声波处理30-40分钟,冷却后加入料重0.1-0.2%的粥化酶,在40-50℃下酶解1-2小时,灭酶后离心过滤,滤液经真空减压浓缩、冷冻干燥后得到营养粉;
(4)将生品当归头微波中火干燥后粉碎至50-60目,加入黄酒拌匀,焖润1-2分钟后小火炒至深黄、当归含水量4-6%,用振动式低温超微粉碎机在-10±2℃条件下粉碎20-30分钟,当归粉与20-30倍95%乙醇混合,在超声波功率400W下超声15秒后间歇10秒,总超声时间30-40分钟,离心分离得到脱脂当归;
(5)将新鲜咖啡果皮冷冻干燥至含水量4-6%,超细粉碎后与上述脱脂当归用40-50倍蒸馏水混合均匀,加入料重0.1-0.2%纤维素酶,调节pH至5,在超声波功率400W下超声15秒后间歇10秒,总超声时间30-40分钟,再酶解1-1.5小时,灭酶后离心过滤,滤液经真空减压浓缩、冷冻干燥后得到提取粉;
(6)将上述咖啡粉、营养粉、提取粉和脱脂奶粉、海藻糖混合均匀,超微粉碎后定量装袋,在温度130-140℃下杀菌10-15秒,冷却后得到成品。

本发明将当归头微波干燥,微波迅速渗入当归中使内部达到高温,内温大于表温使水分迅速蒸发,并且微波迅速灭酶使当归自身呼吸作用减弱从而避免消耗多糖;当归酒制后微量元素Cu、Fe、Mn、Zn含量增加而Pb含量降低、多糖含量增加而阿魏酸含量基本不变;通过纤维素酶对细胞壁中纤维素的破坏来增加细胞壁通透性,当归中多糖、阿魏酸等有效成分扩散阻力减小从而提高得率、效率;海藻糖甜味柔和、血糖反应平稳、低致龋性和非泻下性,能够提升品质、保持新鲜风味、保护蛋白质分子不变性失活、活化细胞、调理肌肤、抵抗衰老;选用天门冬酰胺含量较低的阿拉比卡豆,其在烘培时产生的丙烯酰胺含量与罗布斯塔豆相比较低,并且焙炒温度在200℃以上时温度越高、时间越长,丙烯酰胺含量越少;在真空下焙炒能使生成的丙烯酰胺挥发而降低含量;采用低温超微粉碎技术粒径减小、比表面积增大、分布更加均匀,与溶出介质有更大接触面积从而加快溶出速率;采用超声波处理能够显著提高水提、脱脂、酶解等工艺的效率和得率,避免直接高温高压处理对风味物质的破坏;将无用咖啡果皮酶解提取出膳食纤维,添加到咖啡粉中提高营养价值,成品速溶咖啡添加大量具有延缓衰老功效的原料,营养更丰富,在浓郁咖啡香味中夹杂着淡雅清香,饮用时香甜味美、口感醇厚、提神醒脑、无残渣,保健价值更显著,具有广阔的市场前景。
具体实施方式
一种延缓衰老速溶咖啡,是由下述重量(斤)的原料制成:
阿拉比卡生豆100、蓝莓10、裙带菜2、黑枸杞4、番荔枝5、黑豆3、腰果仁1、当归头1、咖啡果皮15、脱脂奶粉20、海藻糖25。
一种所述的延缓衰老速溶咖啡制备方法,包括以下步骤:
(1)选取优质阿拉比卡生豆,洗净后放入烘培机中,在真空度150Pa、温度200℃条件下焙炒15分钟,取出自然冷却,用磨豆机研磨,得到的粉料用振动式低温超微粉碎机在-10℃条件下粉碎20分钟,得到超微粉;

2.一种如权利要求1所述的延缓衰老速溶咖啡制备方法,其特征在于包括以下步骤:
(1)选取优质阿拉比卡生豆,洗净后放入烘培机中,在真空度150-200Pa、温度200-220℃条件下焙炒15-20分钟,取出自然冷却,用磨豆机研磨,得到的粉料用振动式低温超微粉碎机在-10±2℃条件下粉碎20-30分钟,得到超微粉;
(2)将上述超微粉用10-15倍50-60℃蒸馏水冲泡30-40分钟,在温度80-85℃下用超声波处理50-60分钟,冷却后离心过滤,得到浓咖啡和滤渣,将滤渣用20-30倍蒸馏水在温度85-90℃下回流提取2-3小时,冷却后离心过滤,得到的淡咖啡与浓咖啡混合均匀,经真空减压浓缩、冷冻干燥后得到咖啡粉;
(3)将新鲜的蓝莓去蒂洗净、裙带菜去杂洗净、黑枸杞去梗洗净、番荔枝去壳去核,将黑豆和腰果仁用温水浸泡5-6小时后拣杂洗净、再小火炒至熟香后冷却,处理好的原料全部混合,加入15-20倍蒸馏水打浆,在60-70℃下用超声波处理30-40分钟,冷却后加入料重0.1-0.2%的粥化酶,在40-50℃下酶解1-2小时,灭酶后离心过滤,滤液经真空减压浓缩、冷冻干燥后得到营养粉;
(4)将生品当归头微波中火干燥后粉碎至50-60目,加入黄酒拌匀,焖润1-2分钟后小火炒至深黄、当归含水量4-6%,用振动式低温超微粉碎机在-10±2℃条件下粉碎20-30分钟,当归粉与20-30倍95%乙醇混合,在超声波功率400W下超声15秒后间歇10秒,总超声时间30-40分钟,离心分离得到脱脂当归;
(5)将新鲜咖啡果皮冷冻干燥至含水量4-6%,超细粉碎后与上述脱脂当归用40-50倍蒸馏水混合均匀,加入料重0.1-0.2%纤维素酶,调节pH至5,在超声波功率400W下超声15秒后间歇10秒,总超声时间30-40分钟,再酶解1-1.5小时,灭酶后离心过滤,滤液经真空减压浓缩、冷冻干燥后得到提取粉;
(6)将上述咖啡粉、营养粉、提取粉和脱脂奶粉、海藻糖混合均匀,超微粉碎后定量装袋,在温度130-140℃下杀菌10-15秒,冷却后得到成品。
