技术领域
本发明涉及一种柠檬鲜活水及其制备方法与应用,属于食品、保健品和化妆品领域。
背景技术
柠檬含有丰富的柠檬酸,具有防止和消除皮肤色素沉着等作用。此外,柠檬还含有VC、VB、VP、VH、VE、黄酮类、挥发油、橙皮甙、多种矿物质及微量元素等,是一种营养和药用价值都极高的水果,具有杀菌、美容、稳定情绪、提神、润喉、降低胆固醇、预防坏血病、防止肾结石和心血管动脉硬化等功效。每天食用一个柠檬(相当于30mL柠檬汁),可使血液流畅,预防血栓。
然而,目前,世界上通行的从芳香类植物提取活性物质,例如从柠檬中提取柠檬提取物的方法,大体有三种:第一种,也是本领域最常使用的方法是“水煮法”,将新鲜的柠檬装入蒸馏釜,加入一定比例的水,釜底通入蒸汽加热至釜中的水沸腾,柠檬的芳香物质与水蒸汽一起蒸发,由导管导入冷凝器中冷却。水煮法存在的主要问题是,长时间高温蒸煮,使得柠檬的芳香醇酯发生变异,所提取的活性物质,没有鲜柠檬的天然香气,而是浓香刺鼻,气味不纯,生产过程中,设备多,能耗大,操作人员多,效率低,残液残渣污染排放量大,需消耗大量蒸汽和冷却水。第二种是“溶剂萃取法”,采用有机溶剂,如酒精、乙醚或液态丁烷等,将有机溶剂反复淋洒在新鲜柠檬上,将其中的芳香物质溶入所说的溶剂中,然后采用低温蒸馏的方法,提取柠檬中的芳香物质。溶剂萃取法存在的主要问题是,设备、工艺复杂,也需消耗蒸汽和冷却水,由于使用有机溶剂,投入大,产量低,且易对活性物质造成污染,出油率低,分离出的活性物质不纯。第三种是“二氧化碳超临界萃取法”,萃取过程是利用CO2在低温临界环境中,将柠檬中的芳香物质萃取出来,该工艺适应柠檬的低温芳香特性,萃取的活性物质,香味纯正,与鲜柠檬非常相似。二氧化碳超临界萃取法的主要问题是,设备、工艺非常复杂,加工能力低,设备投资昂贵,也存在废渣排放污染环境,目前该法仅处于实验室阶段,尚无企业采用此法批量生产的先例。
发明内容
本发明的目的是提供一种柠檬鲜活水及其制备方法与应用。本发明的制备方法简单易行,不用有机溶剂,不含添加剂,安全;本发明柠檬鲜活水能应用于食品、保健品和化妆品的制备中。
本发明提供的柠檬鲜活水的制备方法,包括如下步骤:将柠檬置于反应器中,抽真空;然后减压蒸馏,收集冷凝液,即得到柠檬鲜活水。
上述的方法中,所述减压蒸馏的温度为53~74℃,具体可为53℃、60℃或74℃;
所述减压蒸馏的时间为1.8~2.6h,具体可为1.8h、2h或2.6h。
上述的方法中,所述减压蒸馏的真空度为60~100Pa,具体可为60Pa、80Pa或100Pa;
所述反应器为旋转蒸发仪;
所述柠檬置于所述反应器之前还包括绞碎的步骤。
上述的方法中,所述绞碎采用均浆机;
所述绞碎的转速为1000~1200r/min,具体可为1000r/min;
所述绞碎的时间为10~15min,具体可为10min;
所述绞碎的过程具体为将带皮的柠檬切成小块置于所述均浆机中,在上述条件下均匀绞碎。
本发明还提供了上述的方法制备的所述柠檬鲜活水。
本发明进一步提供了上述柠檬鲜活水在制备具有下述至少一种功能的产品中的应用:
1)美白;
2)抗衰老;
3)清除自由基;
4)抑制酪氨酸酶。
上述的应用中,所述产品为化妆品、食品和保健品中的至少一种。
上述的应用中,所述化妆品为面膜、精华液、爽肤水和柔肤水中的任一种。
本发明还提供了一种具有下述至少一种功能的产品,该产品的活性成分为所述柠檬鲜活水:
1)美白;
2)抗衰老;
3)清除自由基;
4)抑制酪氨酸酶。
上述的产品中,所述产品为化妆品、食品和保健品中的至少一种;
所述化妆品为面膜、精华液、爽肤水和柔肤水中的任一种;
所述柠檬活性水在所述产品中的添加的质量百分含量为1~100%。
本发明中,所述柠檬鲜活水应用于食品时,可直接添加到饮品中,饮用能增加皮肤活力、祛色斑、疏肝理气、活血化瘀的功效;具体如添加牛奶中,可达到香体、祛色斑、疏肝理气、活血化瘀的功效;
所述柠檬鲜活水应用于保健品中,可直接添加到酒水中作为补酒,制作柠檬露酒,能有效提高柠檬露酒中的有益人体健康的微量元素,特别是锶、偏硅酸的含量;
所述柠檬鲜活水应用于足浴,所述柠檬鲜活水与水比例1∶90,可以每晚泡脚;
所述柠檬鲜活水作为面膜、精华液、爽肤水、柔肤水的配料,作用在皮肤上,能有效提供身体所需要的十几种有益人体健康的元素。

本发明由以下重量的原料制成:新鲜柠檬1公斤,按照以下工艺进行:
将带皮新鲜柠檬在匀浆机中粉碎,在1000r/min转速下粉碎10min,放入旋转蒸发仪中,抽真空(真空度为80Pa),60℃,减压蒸馏2小时,获得0.75公斤的柠檬鲜活水。
本发明柠檬鲜活水的消毒灭菌与保存:通过紫外线消毒灭菌后储存于不锈钢容器或者可食用塑料容器中,避光、低温、密封保存。
实施例2、柠檬鲜活水的制备
本发明由以下重量的原料制成:新鲜柠檬1公斤,按照以下工艺进行:
将带皮新鲜柠檬在匀浆机中粉碎,在1000r/min转速下粉碎10min,放入旋转蒸发仪中,抽真空(真空度为60Pa),74℃,减压蒸馏1.8小时,获得0.77公斤的柠檬鲜活水。
本发明柠檬鲜活水的消毒灭菌与保存:通过紫外线消毒灭菌后储存于不锈钢容器或者可食用塑料容器中,避光、低温、密封保存。
实施例3、柠檬鲜活水的制备
本发明由以下重量的原料制成:新鲜柠檬1公斤,按照以下工艺进行:
将带皮新鲜柠檬在匀浆机中粉碎,在1000r/min转速下粉碎10min,放入旋转蒸发仪中,抽真空(真空度为100Pa),53℃,减压蒸馏2.6小时,获得0.73公斤的柠檬鲜活水。
本发明柠檬鲜活水的消毒灭菌与保存:通过紫外线消毒灭菌后储存于不锈钢容器或者可食用塑料容器中,避光、低温、密封保存。
实施例4、柠檬鲜活水体外美白实验
本发明实施例1-3中柠檬鲜活水体外美白实验采用抑制酪氨酸酶法进行测定,测定的结果如表1所示,由表1可知,本发明柠檬鲜活水对酪氨酸酶抑制率为8.94%比对比例中普通蒸馏玫瑰水的2.31%高了6.63%,说明本发明柠檬鲜活水比对比例中普通蒸馏柠檬水体外美白效果提高了一倍。

实施例5、柠檬鲜活水体外抗氧化作用
本发明实施例1-3中制备的柠檬鲜活水对DPPH自由基清除作用的测定,DPPH(1,1-disphenyl-2-picry1-hydrazy1),化学命名为1,1二苯基-2-三硝基苯肼,分子式为(C6H5)2N-NC6H5(NO2)3,该化合物中在氮桥的一个原子上有一个未成对的价电子,而此电子的轨道运动几乎由分子结构所抵消,通常以捕获DPPH自由基作为评定抗氧化能力的指标。实施例1-3分别得到的不同含量的测定结果如1、2和3所示,测定结果如表2所示。由表2可知,本发明柠檬鲜活水DPPH自由基清除率比对比例中普通蒸馏玫瑰水DPPH自由基清除率提高,说明本发明柠檬鲜活水比对比例中普通蒸馏柠檬水抗氧化活性高。

实施例4、柠檬鲜活水活性物质分析
将本发明实施例1中制备的柠檬鲜活水与对比例中普通蒸馏柠檬水经过17O-NMR(核磁共振)、质谱检测分析,其分子团大小见表3,柠檬鲜活水香气物质组成分析见表4,17O-NMR(核磁共振)、质谱检测图谱见图4和5。由表3与4和图4与5中测定结果可知,本发明其活性成分的组成比普通蒸馏柠檬水活性成分明显不同,本发明柠檬鲜活水的分子团较小,易于被生物体吸收,并且活性成分种类丰富,富含多种活性物质。

普通蒸馏柠檬水的制备:
使用本领域最常使用的“水煮法”,将新鲜柠檬1公斤和水放在蒸馏釜内常压加热到100-130℃至沸腾,柠檬中的芳香物质与水蒸汽一起蒸发,由导管导入冷凝器中冷却,制得。
Claims (7)
1.一种柠檬鲜活水的制备方法,为如下步骤:将柠檬置于反应器中,抽真空;然后减压蒸馏,收集冷凝液,即得到柠檬鲜活水;
所述反应器为旋转蒸发仪;
所述减压蒸馏的温度为53~74℃;
所述减压蒸馏的时间为1.8~2.6h;
所述减压蒸馏的真空度为60~100Pa;
所述柠檬置于所述反应器之前还包括绞碎的步骤;
所述绞碎采用均浆机;
所述绞碎的转速为1000~1200r/min;
所述绞碎的时间为10~15min。
2.权利要求1所述的方法制备的所述柠檬鲜活水。
3.权利要求2所述柠檬鲜活水在制备具有下述至少一种功能的产品中的应用:
1)美白;
2)抗衰老;
3)清除自由基;
4)抑制酪氨酸酶。
4.根据权利要求3所述的应用,其特征在于:所述产品为化妆品、食品和保健品中的至少一种。
5.根据权利要求4所述的应用,其特征在于:所述化妆品为面膜、精华液、爽肤水和柔肤水中的任一种。
6.一种具有下述至少一种功能的产品,该产品的活性成分为权利要求2所述柠檬鲜活水:
1)美白;
2)抗衰老;
3)清除自由基;
4)抑制酪氨酸酶。
7.根据权利要求6所述的产品,其特征在于:所述产品为化妆品、食品和保健品中的至少一种;
所述化妆品为面膜、精华液、爽肤水和柔肤水中的任一种;
所述柠檬活性水在所述产品中的添加的质量百分含量为1~100%。
