Background
Shrimps are mostly carnivorous. Most of the crabs are omnivorous and generally ingest meat, plant rotten leaves, animal carcasses and the like. At present, people use baits for shrimps and crabs, and the baits are generally placed in net tools for shrimps and crabs to attract the shrimps and the crabs to eat and capture. The bait for common shrimps and crabs adopts fresh fish, but the bait is easy to loosen in water, the fishy smell retention time is short, and the requirement of long-time shrimp and crab trapping is difficult to meet.

mixing raw materials: the bait takes low-value fish leftovers such as fish meat, fish heads, fish viscera, fish tails and the like and soybean protein as raw materials, and is fully crushed and mixed, wherein the weight percentages of the components are respectively as follows: 5 to 20 percent of fish meat, 60 to 93 percent of other leftovers such as fish head, fish viscera, fish tail and the like, and 2 to 20 percent of soybean protein, wherein the sum of the weight percentages of the fish meat, the fish viscera, the fish tail and the like is 100 percent; the other leftovers such as the fish head, the fish viscera and the fish tail refer to at least one of the fish head, the fish viscera and the fish tail. Soy protein is the substrate for transglutaminase. The soybean protein is less than 2 percent, the bait is easy to melt in water, and the water-entering durability is not strong; more than 20 percent of soybean protein, too strong bait, slow fishy smell release and poor shrimp and crab trapping effect.
And (3) crosslinking: fully mixing the raw materials, adding transglutaminase, and crosslinking into meat paste;
extrusion molding: extruding, granulating and molding the meat paste;
and drying the formed material to obtain a finished product.
In the raw material mixing, the adopted crushing equipment is a meat grinder, wherein the rotating speed is 270 r/min.
In the raw material mixing, the mixing equipment is a tumbling machine, wherein the tumbling speed is 6 rpm.
In the crosslinking, the addition amount of transglutaminase is 1 to 7 weight permillage. Below this amount, the crosslinking effect is poor; above this amount, the cost of bait is high.
In the crosslinking, the temperature of transglutaminase crosslinking is 2-30 ℃, and the reaction time is 4-8 h. The temperature is 2-30 ℃ which is suitable for glutaminase reaction; the crosslinking reaction needs a certain time to crosslink into meat paste, and the optimal reaction time is 4-8 h.
In the extrusion forming, the extrusion granulation adopts a double-screw extrusion granulator, wherein the diameter of a screw is 100mm, and the diameter of granulation is 5 mm.
The low-value fish is mackerel, decapterus maruadsi, sardine, herring, and anchovy.
The invention also protects the shrimp and crab bait prepared by the method.
The shrimp and crab bait provided by the invention has the following three characteristics:
1. can attract shrimps and crabs with high efficiency and has high trapping rate. Because the bait is rich in fish meat and leftovers, the raw materials have strong fishy smell and are easy to attract shrimps and crabs;
2. is not easy to loosen when entering water. Transglutaminase is required to be added in the preparation process of the bait, and can cause the raw materials to be cross-linked and bonded, so as to enhance the elasticity of the bait tissue;
3. the bait can meet the requirements of different water binding capacities. Because the bait uses soy protein as a substrate, it can achieve better cross-linking effect of transglutaminase. In addition, the elastic strength of the bait in water can be controlled by adjusting the proportion of the soybean protein and the transglutaminase, thereby meeting different water retention requirements.

Example 2: preparation of bait for shrimp and crab

Example 3: preparation of bait for shrimp and crab
(1) Mixing raw materials: fully crushing and mixing 20g of fish mince, 170g of other leftovers and 25g of soybean protein;
(2) and (3) crosslinking: fully mixing the raw materials, adding 1g of transglutaminase to crosslink the raw materials into meat paste, wherein the reaction temperature is 4 ℃ and the reaction time is 8 hours in the crosslinking process;

Example 4: effect test
The baits prepared in examples 1 to 3 and the "totipotent bait" produced by commercially available Anhui Siwang bait Co., Ltd. were placed in four different crab catching nets, respectively, and they were designated as No. 1, No. 2, No. 3, and No. 4. The four crab catching nets are simultaneously thrown into the five-edge bay sea area of the mansion and taken out after two hours, and 1-3 crabs are caught by the four different crab catching nets. Observing the bait state in the crab catching net, finding that the baits in the No. 1-3 crab catching nets are all slightly loose, and no bait (completely dissolved) is found in the No. 4 crab catching nets. Putting the four crab catching nets into the sea again, taking out after two hours, wherein the No. 1-3 crab catching nets catch 1-3 crabs respectively, and the No. 4 crab catching nets do not catch crabs.
It can be seen that the bait prepared in the examples 1 to 3 has a trapping effect not inferior to commercially available baits, and is not easy to loosen after entering water, and has stronger water retention.

and (3) crosslinking: fully mixing the raw materials, adding transglutaminase, and crosslinking into meat paste; the transglutaminase crosslinking temperature is 2-30 ℃, and the reaction time is 4-8 h;
extrusion molding: extruding, granulating and molding the meat paste;
drying the formed material to obtain a finished product;
