本发明涉及天然色素技术领域,更具体地说,涉及到一种天然胡萝卜素制剂的制备方法。
背景技术
天然胡萝卜素主要原料来源是棕榈果,经分子蒸馏法萃取、浓缩等工艺得到的一种天然混合胡萝卜素,颜色为橙黄色,经实验证明具有延缓衰老和抗突变的保健功能,由多种胡萝卜素组成的混合体,主要有α-胡萝卜素、β-胡萝卜素和少量γ-胡萝卜素,红褐色膏状粘稠液体,具有特殊气味,溶于油脂但不溶于水,微溶于乙醇,耐热、耐酸性良好,耐光性微差。
发明内容
本发明旨在提供一种胡萝卜素的制备方法,其制得的天然胡萝卜素制剂的水分散性好,平衡体系稳定,耐光性得到提高。
本发明提供一种天然胡萝卜素制剂的制备方法,包括以下步骤:
S1:称取567.0g热水,温度≥75℃,溶解1.6g抑菌剂,溶解后备用;
S2:向热水中加入41.6g乳化剂和48.0g增稠剂,过胶体磨;
S3:将100.0g油溶天然胡萝卜素,加入40.0g抗氧化剂,然后与步骤S2过完胶体磨的料液混合;
S4:将步骤S3的混合的料液过胶体磨;
S5:将步骤S4混匀的色素乳液过均质机,得到天然胡萝卜素制剂。
进一步地,所述抑菌剂为脱氢醋酸钠、苯甲酸、苯甲酸钠、山梨酸、山梨酸钾、丙酸钙中的一种或多种混合。
进一步地,所述乳化剂为蔗糖脂肪酸酯、聚甘油脂肪酸酯、吐温60、吐温80、分子蒸馏单甘脂中的一种或多种混合。

具体实施方式
实施例1
本发明实施例提供一种天然胡萝卜素制剂的制备方法,包括以下步骤:
S1:称取567.0g热水,温度≥75℃,溶解1.6g脱氢醋酸钠,溶解后备用;
S2:向热水中加入41.6g蔗糖脂肪酸酯、48.0食用胶,过胶体磨;
S3:将100.0g20%油溶天然胡萝卜素,加入40.0g维生素E,然后与步骤S2过完胶体磨的料液混合,搅拌均匀;
S4:将步骤S3的混合的料液过胶体磨,转速2800r/min,回流10min;
S5:将步骤S4混匀的色素乳液过均质机,均质压力要求≥50MPA,均质温度要求60-65℃,均质两次,得到天然胡萝卜素制剂。
检测方法:
(1)采用分光光度计检测天然胡萝卜素制剂的百分含量和色价,以丙酮做溶剂,波长450nm最大吸收波峰处检测吸光度值,按公式得出E0,三个月、六个月、九个月后分别按相同方法检测得出E1、E2、E3;结果:色素保留率≥98%;
(2)取1.2g制得的天然胡萝卜素制剂添加到1000.0g果酱中,搅拌均匀后采用巴氏杀菌,85℃杀菌20min,色调呈现稳定的橙黄色;
(3)取2.0g制得的天然胡萝卜素制剂添加到1000.0g蛋糕浆料中,搅拌均匀后采用倒模,上火180℃,下火150℃,烘烤30min,蛋糕色调呈现稳定的橙黄色
(4)在常温状态下,制备的天然胡萝卜素制剂在在水中呈亮橙黄色乳浊状,可拓宽其应用方向,适合于工业化生产。
实施例2
本发明实施例提供一种天然胡萝卜素制剂的制备方法,包括以下步骤:
S1:称取567.0g热水,温度≥75℃,溶解1.6g苯甲酸钠,溶解后备用;
S2:向热水中加入41.6g聚甘油脂肪酸酯、48.0g阿拉伯胶,过胶体磨;
S3:将100.0g20%油溶天然胡萝卜素,加入40.0g维生素E和维生素C,,其中维生素E和维生素C的质量比为4:1,然后与步骤S2过完胶体磨的料液混合,搅拌均匀;
S4:将步骤S3的混合的料液过胶体磨,转速2800r/min,回流10min;
S5:将步骤S4混匀的色素乳液过均质机,均质压力要求≥50MPA,均质温度要求60-65℃,均质两次,得到天然胡萝卜素制剂。
本实施例的天然胡萝卜素制剂的检测方法与实施例1相同,结果亦与实施例1相同。
实施例3

S1:称取567.0g热水,温度≥75℃,溶解1.6g脱氢醋酸钠,溶解后备用;
S2:向热水中加入41.6g分子蒸馏单甘脂、48.0g阿拉伯胶和黄原胶,其中阿拉伯胶和黄原胶的质量比为3:1,过胶体磨;
S3:将100.0g20%油溶天然胡萝卜素,加入40.0g异抗坏血酸钠,然后与步骤S2过完胶体磨的料液混合,搅拌均匀;
S4:将步骤S3的混合的料液过胶体磨,转速2800r/min,回流10min;
S5:将步骤S4混匀的色素乳液过均质机,均质压力要求≥50MPA,均质温度要求60-65℃,均质两次,得到天然胡萝卜素制剂。

S3:将100.0g油溶天然胡萝卜素,加入40.0g抗氧化剂,然后与步骤S2过完胶体磨的料液混合;
S4:将步骤S3的混合的料液过胶体磨;
S5:将步骤S4混匀的色素乳液过均质机,得到天然胡萝卜素制剂。
2.如权利要求1所述的天然胡萝卜素制剂的制备方法,其特征在于,所述抑菌剂为脱氢醋酸钠、苯甲酸、苯甲酸钠、山梨酸、山梨酸钾、丙酸钙中的一种或多种混合。
3.如权利要求1所述的天然胡萝卜素制剂的制备方法,其特征在于,所述乳化剂为蔗糖脂肪酸酯、聚甘油脂肪酸酯、吐温60、吐温80、分子蒸馏单甘脂中的一种或多种混合。
4.如权利要求1所述的天然胡萝卜素制剂的制备方法,其特征在于,所述增稠剂为食用胶、羟丙基甲基纤维素、阿拉伯胶、黄原胶中的一种或多种混合。
5.如权利要求1所述的天然胡萝卜素制剂的制备方法,其特征在于,所述抗氧化剂为维生素E、维生素C、异抗坏血酸钠、茶多酚、柚皮甙、迷迭香酸中的一种或多种混合。
