Abstract

技术领域
本发明一般地涉及营养性组合物,和更具体地涉及营养性增甜剂组合物。
背景技术
已知高糖或高蔗糖的饮食具有很多不利的健康影响,并引起广泛的疾病状况,诸如蛀牙、糖尿病、肥胖、高胆固醇,这仅是几例。高糖消耗也导致有营养的食物的消耗降低。
人工增甜剂作为糖替代品已经享有增加的普遍性。人工增甜剂——诸如糖精和阿斯巴甜——广泛用于使糖的味道加倍,但具有较少的卡路里。尽管人工增甜剂不引起相同的糖相关的疾病,但是人工增甜剂的安全性已经被认为是有问题的。例如,在研究已经将糖精与癌症联系后关于其安全性糖精已经被争论围绕。类似地,阿斯巴甜已经受到许多主张反对它的安全性,包括假定的与癌症的联系,以及神经病学或精神病学副作用的病症。
由使用糖精和阿斯巴甜提示的不利的健康影响已经增强了对新的低卡路里增甜剂的研究。因此需要以下低卡路里增甜剂:其是安全的,并且同时将消除或大大减少食品、饮料和糖果中使用的糖的量。
发明内容
在一个实施方式中,增甜剂组合物由葡萄糖、半乳糖、甘露糖、岩藻糖、N-乙酰氨基葡糖、N-乙酰半乳糖胺、N-乙酰神经氨酸、木糖和赤藓糖醇组成。
在另一个实施方式中,增甜剂组合物包括一种或多种糖营养物和赤藓糖醇。
根据实施方式的第一方面,糖营养物是选自以下的一种或多种:葡萄糖、半乳糖、甘露糖、岩藻糖、N-乙酰氨基葡糖、N-乙酰半乳糖胺、N-乙酰神经氨酸和木糖。
根据实施方式的第二方面,组合物包括葡萄糖、半乳糖、甘露糖、岩藻糖、N-乙酰氨基葡糖、N-乙酰半乳糖胺、N-乙酰神经氨酸和木糖作为一种或多种糖营养物。
根据实施方式的第三方面,增甜剂组合物进一步包括长寿果(longevity fruit)提取物。
在进一步实施方式中,增甜剂组合物包括木糖、糖醇和硫酸化的多糖。
根据第一方面,糖醇为赤藓糖醇。
根据第二方面,硫酸化的多糖为岩藻依聚糖。
根据第三方面,增甜剂组合物进一步包括长寿果提取物。
根据第四方面,长寿果提取物从罗汉果(Siraitia grosvenorii)获得。
根据第五方面,组合物包括木糖、赤藓糖醇和岩藻依聚糖。
根据第六方面,增甜剂组合物包括以重量计50-90%的木糖、以重量计10-50%的赤藓糖醇、以重量计0.01-1%的岩藻依聚糖。
根据第七方面,增甜剂组合物进一步包括从罗汉果获得的长寿果提取物。
根据第八方面,增甜剂组合物进一步包括以重量计1-20%的长寿果提取物。
根据第九方面,组合物由木糖、赤藓糖醇和岩藻依聚糖组成。
根据第十方面,组合物由以下组成:以重量计50-90%的木糖、以重量计10-50%的赤藓糖醇、以重量计0.01-1%的岩藻依聚糖。

现在将参考优选实施方式描述本发明的具体的、非限制性实施方式。应当理解这样的实施方式仅通过实施例的方式,并且仅为本发明范围内的说明性的但少量的实施方式。对本发明所涉及的领域中的技术人员显而易见的各种变化和更改被视为处于本发明的精神、范围和意图内,如进一步在所附权利要求书限定的。
本文公开的增甜组合物具有以下优点:具有类似糖(蔗糖)的口感或味道,但卡路里低并且不产生胰岛素响应。在优选实施方式中,增甜组合物不包含任何人工香料或着色剂。
在一个实施方式中,增甜组合物包括糖醇和一种或多种糖营养物。
糖醇为一类多元醇并且具有通式H(HCHO)n+1H。糖醇不引起蛀牙,并且糖醇的消耗不以蔗糖那样的相同方式影响血糖水平。常见的糖醇包括甲醇、乙二醇、丙三醇、赤藓糖醇、苏糖醇、阿拉伯糖醇、木糖醇、核醣醇、甘露醇、山梨糖醇、半乳糖醇、岩藻糖醇、艾杜糖醇、肌醇、庚七醇、异麦芽(isomalt)、麦芽糖醇、乳糖醇、麦芽三糖醇、麦芽四糖醇和聚糖醇。在优选实施方式中,增甜组合物包括一种或多种糖醇。在特别优选的实施方式中,增甜组合物至少包括赤藓糖醇。
糖营养物通常是重要的整合膜蛋白,并且它们在细胞-细胞相互作用中起作用。应理解术语“糖营养物”包括以下八(8)种必不可少的糖:葡萄糖、半乳糖、甘露糖、岩藻糖、N-乙酰半乳糖胺、N-乙酰氨基葡糖、N-乙酰神经氨酸和木糖。本文公开的增甜组合物包括糖营养物的至少一种或者任何组合。在特别优选的实施方式中,糖营养物包括所有八(8)种必不可少的糖。
除了或代替糖醇(一种或多种)或糖营养物(一种或多种)中的任一种或全部,可在增甜组合物中提供岩藻依聚糖。岩藻依聚糖为在许多海洋植物和动物中发现的硫酸化的α-L-岩藻聚糖。岩藻依聚糖在褐藻的细胞壁中特别丰富,并且包括源于墨角藻属(genus Fucus)(例如,墨角藻(Fucus vesiculosis)、枯墨角藻(Fucus evanescens)、墨角对叶藻(Fucusdistichus)和齿缘墨角藻(Fucus serratus))或昆布属(Laminaria)(例如,真海带(Laminaria japonica)、皱海带(Laminaria religiosa)和深海海带(Laminaria abyssalis))的岩藻依聚糖。岩藻依聚糖也包括源于绳藻(Chorda filum)、枝管藻(Cladosiphon okamuranus)、裙带菜(Undariapinnatifada)、粘膜藻(Leathesia difformis)、泡叶藻(Ascophyllumnodosum)、鹅掌菜(Ecklonia kurome)、鹿角藻(Pelvetia fastigiata)、单纯性褐条藻(Soundersella simplex)、长松藻(Chordaria flagelliformis)或任何其他种类的包含岩藻依聚糖的海洋植物和动物的岩藻依聚糖。另外,岩藻依聚糖包括其生物活性片段、衍生物或类似物。岩藻依聚糖可包括通过降解(例如,水解)较大的岩藻依聚糖分子产生的岩藻依聚糖的片段。降解可通过本领域技术人员已知的包括用酸、碱、热或酶处理岩藻依聚糖以产生降解的岩藻依聚糖的多种手段中的任一种实现。也可在化学上改变岩藻依聚糖并可具有修饰,包括但不限于硫酸化作用、多硫酸化作用、乙酰化作用、酯化作用和甲基化作用。
除了或代替前述成分的任一中,可在增甜组合物中提供长寿果提取物。在优选实施方式中,长寿果源于罗汉果——一种原产于中国南部和泰国北部的葫芦科(葫芦)家族的多年生草本藤本植物。长寿果提取物比糖甜几乎300倍。
增甜组合物可进一步包括至少一种选自以下的添加剂:增塑剂、填充剂、填料、矿物佐剂、着色剂和其混合物。
可优化增甜组合物的成分的相对量以提供糖的口感和味道。表1提供了根据一个优选实施方式的上述成分的相对范围:

增甜剂组合物,其包括70%的木糖、29.86%的赤藓糖醇和0.14%的岩藻依聚糖(硫酸化的多糖或硫酸化的α-L-岩藻聚糖)。
实施例2
增甜剂组合物,其包括70%的木糖、29.86%的赤藓糖醇和0.14%的八种糖营养物:半乳糖、甘露糖、葡萄糖、木糖、岩藻糖、N-乙酰氨基葡糖、N-乙酰半乳糖胺和N-乙酰神经氨酸。

Claims (16)
1.增甜剂组合物,其由以下组成:葡萄糖、半乳糖、甘露糖、岩藻糖、N-乙酰氨基葡糖、N-乙酰半乳糖胺、N-乙酰神经氨酸、木糖和赤藓糖醇。
2.增甜剂组合物,其包括一种或多种糖营养物和赤藓糖醇。
3.权利要求2所述的增甜剂组合物,其中所述糖营养物为选自以下的一种或多种:葡萄糖、半乳糖、甘露糖、岩藻糖、N-乙酰氨基葡糖、N-乙酰半乳糖胺、N-乙酰神经氨酸和木糖。
4.权利要求3所述的增甜剂组合物,其中所述组合物包括葡萄糖、半乳糖、甘露糖、岩藻糖、N-乙酰氨基葡糖、N-乙酰半乳糖胺、N-乙酰神经氨酸和木糖作为所述一种或多种糖营养物。
5.权利要求2所述的增甜剂组合物,进一步包括长寿果提取物。
6.增甜剂组合物,其包括木糖、糖醇和硫酸化的多糖。
7.权利要求6所述的增甜剂组合物,其中所述糖醇为赤藓糖醇。
8.权利要求6所述的增甜剂组合物,其中所述硫酸化的多糖为岩藻依聚糖。
9.权利要求6所述的增甜剂组合物,进一步包括长寿果提取物。
10.权利要求9所述的增甜剂组合物,其中所述长寿果提取物从罗汉果获得。
11.权利要求6所述的增甜剂组合物,其中所述组合物包括木糖、赤藓糖醇和岩藻依聚糖。
12.权利要求11所述的增甜剂组合物,包括以重量计50-90%的木糖、以重量计10-50%的赤藓糖醇、以重量计0.01-1%的岩藻依聚糖。
13.权利要求11所述的增甜剂组合物,进一步包括从罗汉果获得的长寿果提取物。
14.权利要求12所述的增甜剂组合物,进一步包括以重量计1-20%的所述长寿果提取物。
15.权利要求6所述的增甜剂组合物,其中所述组合物由木糖、赤藓糖醇和岩藻依聚糖组成。
16.权利要求15所述的增甜剂组合物,其中所述组合物由以下组成:以重量计50-90%的木糖、以重量计10-50%的赤藓糖醇、以重量计0.01-1%的岩藻依聚糖。
