本发明涉及一种豆茶,属于食品领域。
背景技术:
茶多酚是茶叶所含多羟基酚类化合物总称,具有很多生理活性,包括高效清除自由基、增强机体抵抗力、抗氧化、抗肿瘤、抗衰老等多种生物活性。作为一种优良保健食品添加剂,多酚类物质对蛋白质溶解性有一定影响。多酚类化合物与蛋白质具有选择性结合能力,不同多酚对于不同蛋白质亲和力具有一定差异,氨基酸疏水性越强,与单宁结合越好,说明多酚-蛋白质结合时疏水键是一种重要形式;环境条件对二者结合力也有一定影响。市场上没有“豆茶”固体饮料。
发明内容:
本发明的目的在于提供一种风味好,豆香味明显,茶味适中,豆腥味较小,口感好的一种豆茶。
本发明的目的由如下技术方案实施:一种豆茶,其包括有如下重量百分比的组成:速溶大豆粉97.8%-98.2%,红茶粉或普洱茶粉1.8%-2.2%。
本发明的优点在于:适量在大豆蛋白类饮料中添加茶,对大豆蛋白溶解性有提高;两种成份有效搭配,是最佳营养搭配;该产品风味好,豆香味明显,茶味适中,豆腥味较小,口感好。上述配方中速溶茶粉的茶多酚含量为25%,速溶茶粉的添加量与茶多酚含量有关,根据茶多酚含量不同,添加时要换算速溶茶粉添加量。
具体实施方式:
实施例1:一种豆茶,其由速溶大豆粉978份,红茶粉22份混合配制而成。
实施例2:一种豆茶,其由速溶大豆粉982份,红茶粉18份混合配制而成。
实施例3:一种豆茶,其由速溶大豆粉980份,红茶粉20份混合配制而成。
