本发明提供了一种保健豆奶及其制备方法,其中保健豆奶以重量份计包括:芍药1~4份,芦荟3~6份,金银花2~5份,甘草1~3份,罗汉果2~5份,黄芪1~3份,杜仲1~3份,山药1~3份,大豆12~18份,盐0.1~0.3份,单甘油脂肪酸酯0.05~0.15份,琼脂0.1~0.3份。制备方法为先将大豆洗净、浸泡、研磨成精浆,过滤收集滤液;然后将中药组分加水煮沸,过滤收集滤液;再将以上两步所得滤液混合,加入盐、单甘油脂肪酸酯和琼脂,加热至80~95℃,保持0.5h,即可。本发明的保健豆奶含有丰富的蛋白质、氨基酸和微量元素,突破了传统豆奶的以甜味为主的口味,豆香浓郁,口感绵滑,产品稳定性好,可常温放置。

本发明属于食品技术领域,具体涉及一种保健豆奶及其制备方法。
背景技术
随着人们生活水平的提高和消费观念的加强,具有保健功能的食品越来越受到人们的青睐。
豆奶含有丰富得营养成分,特别是含有丰富得蛋白质以及较多的微量元素镁,此外,还含有维生素B1、B2等。豆奶被西方营养学家称作“健脑”食品,因为豆奶中所含的大豆磷脂可以激活脑细胞,提高老年人的记忆力与注意力。豆奶的营养丰富、蛋白质含量与牛奶相当,不含胆固醇,可以预防动脉硬化。但是目前市场豆奶口味单一,很难满足人们的需要。
发明内容
本发明的目的是克服现有技术的不足而提供一种营养丰富、味道鲜美的保健豆奶及其制备方法。
一种保健豆奶,以重量份计包括:芍药1~4份,芦荟3~6份,金银花2~5份,甘草1~3份,罗汉果2~5份,黄芪1~3份,杜仲1~3份,山药1~3份,大豆12~18份,盐0.1~0.3份,单甘油脂肪酸酯0.05~0.15份,琼脂0.1~0.3份。
上述保健豆奶,以重量份计包括:芍药3份,芦荟5份,金银花4份,甘草2份,罗汉果3份,黄芪2份,杜仲2份,山药2份,大豆16份,盐0.2份,单甘油脂肪酸酯0.09份,琼脂0.2份。
上述保健豆奶的制备方法,包括以下步骤:
步骤1,将大豆洗净,加入重量份3倍的水浸泡4~6小时,将浸泡后的大豆先研磨为50目的粗浆,再研磨为100目的精浆,过滤收集滤液;
步骤2,将芍药、芦荟、金银花、甘草、罗汉果、黄芪、杜仲、山药加到重量份4倍的水中,80℃煮沸30分钟后,过滤收集滤液;
步骤3,将步骤1所得滤液和步骤2所得滤液混合,加入盐、单甘油脂肪酸酯和琼脂,加热至80~95℃,保持0.5h,即可。
本发明与现有技术相比,其显著优点在于:第一,含有丰富的蛋白质、氨基酸和微量元素,经测定含有蛋白质2.5%以上,膳食纤维0.5%以上,钙、磷含量0.1%以上,比普通豆奶含量高出15%以上;第二,突破了传统豆奶的以甜味为主的口味,豆香浓郁,口感绵滑;第三,产品稳定性好,可常温放置。
具体实施方式
实施例1
一种保健豆奶,以重量份计包括:芍药1份,芦荟3份,金银花2份,甘草1份,罗汉果2份,黄芪1份,杜仲1份,山药3份,大豆12份,盐0.1份,单甘油脂肪酸酯0.05份,琼脂0.1份。
上述保健豆奶的制备方法,包括以下步骤:
步骤1,将大豆洗净,加入重量份3倍的水浸泡4~6小时,将浸泡后的大豆先研磨为50目的粗浆,再研磨为100目的精浆,过滤收集滤液;
步骤2,将芍药、芦荟、金银花、甘草、罗汉果、黄芪、杜仲、山药加到重量份4倍的水水中,80℃煮沸30分钟后,过滤收集滤液;
步骤3,将步骤1所得滤液和步骤2所得滤液混合,加入盐、单甘油脂肪酸酯和琼脂,加热至80~95℃,保持0.5h,即可。

制备方法同实施例1。
本发明制备得到的保健豆奶豆香浓郁,口感绵滑,经测定含有蛋白质2.5%以上,膳食纤维0.5%以上,钙、磷含量0.1%以上,比普通豆奶含量高出15%以上。
