技术领域
本发明属于食品加工技术领域,涉及一种藕粉,尤其涉及一种小麦胚芽藕粉及其制备方法。
背景技术
藕粉是我国的一种传统食品,是以莲藕为原料制成的,广受人们喜爱。目前,市场上销售的藕粉种类繁多,但不具有保健功能,已不能满足于消费者对健康的追求。
发明内容
本发明的目的是提供一种小麦胚芽藕粉及其制备方法,本发明具有香郁可口,营养健康的特点。
本发明所采用的技术方案是:
一种小麦胚芽藕粉,其特征在于由以下重量份的原料制成:
莲藕90-100、小麦胚芽13-15、维生素C1-1.5、红枣粉3-4、奶油4-5、花生5-6、红薯10-12、豌豆10-12、石榴汁5-7、锁阳2-3、决明子3-4、生地黄2-3、大蓟1-2、霜桑叶3-4、白茅根2-3、槐角1-2、藏青果2.5-3、辛夷2-3、乳酸菌0.1-0.2、橄榄油2-4。
所述的小麦胚芽藕粉的制备方法,其特征在于包括以下步骤:
(1)将红薯去皮切块,与豌豆、霜桑叶、辛夷加水浸泡2-3小时,将红薯、豌豆捞出,气蒸熟化后捣成泥,加一倍的水送入胶体磨匀质8-10分钟后出料,加入奶油搅拌均匀后接入乳酸菌,在35-40℃下恒温发酵10-14小时;
(2)将小麦胚芽置于溶有维生素C的水溶液中浸泡10-12小时后捞出晾干;
(3)将锁阳、决明子、生地黄、大蓟、白茅根、槐角、藏青果加4-5倍的水煎煮40-50分钟,过滤除渣,所得滤液经超滤得精制液;
(4)将莲藕洗净切块,加精制液打浆,过滤分离得到莲藕汁与莲藕渣;在锅中倒入橄榄油,预热后将莲藕渣和浸泡后的小麦胚芽混合送入锅中翻炒至干燥,再经超微粉碎,得混合粉;
(5)将步骤(1)所得物料、莲藕汁、混合粉与剩余物料混合,文火加热,熬至黏稠,再经烘干、磨粉,即得。
本发明的有益效果为:
本发明风味独特,食用方便,本发明所采用的原料大麦胚芽、红薯等,营养价值高,可为人体补充多种维生素、蛋白质等;此外,本发明含有多种中草药成分,具有补肾润肠、清热解毒、清肺润燥、平肝明目、滋阴养血的功效;为消费者提供了一种休闲保健食品。
具体实施方式
一种小麦胚芽藕粉,其特征在于由以下重量份(公斤)的原料制成:
莲藕100、小麦胚芽15、维生素C1.5、红枣粉4、奶油5、花生5、红薯12、豌豆12、石榴汁7、锁阳3、决明子4、生地黄3、大蓟2、霜桑叶4、白茅根3、槐角2、藏青果2.5、辛夷2、乳酸菌0.2、橄榄油4。
所述的小麦胚芽藕粉的制备方法,包括以下步骤:
(1)将红薯去皮切块,与豌豆、霜桑叶、辛夷加水浸泡2-3小时,将红薯、豌豆捞出,气蒸熟化后捣成泥,加一倍的水送入胶体磨匀质8-10分钟后出料,加入奶油搅拌均匀后接入乳酸菌,在35-40℃下恒温发酵10-14小时;
(2)将小麦胚芽置于溶有维生素C的水溶液中浸泡10-12小时后捞出晾干;

1.一种小麦胚芽藕粉,其特征在于由以下重量份的原料制成:
莲藕90-100、小麦胚芽13-15、维生素C1-1.5、红枣粉3-4、奶油4-5、花生5-6、红薯10-12、豌豆10-12、石榴汁5-7、锁阳2-3、决明子3-4、生地黄2-3、大蓟1-2、霜桑叶3-4、白茅根2-3、槐角1-2、藏青果2.5-3、辛夷2-3、乳酸菌0.1-0.2、橄榄油2-4。
2.根据权利要求1所述的小麦胚芽藕粉的制备方法,其特征在于包括以下步骤:
(1)将红薯去皮切块,与花生、豌豆、霜桑叶、辛夷加水浸泡2-3小时,将红薯、豌豆捞出,气蒸熟化后捣成泥,加一倍的水送入胶体磨匀质8-10分钟后出料,加入奶油搅拌均匀后接入乳酸菌,在35-40℃下恒温发酵10-14小时;
(2)将小麦胚芽置于溶有维生素C的水溶液中浸泡10-12小时后捞出晾干;
(3)将锁阳、决明子、生地黄、大蓟、白茅根、槐角、藏青果加4-5倍的水煎煮40-50分钟,过滤除渣,所得滤液经超滤得精制液;
(4)将莲藕洗净切块,加精制液打浆,过滤分离得到莲藕汁与莲藕渣;在锅中倒入橄榄油,预热后将莲藕渣和浸泡后的小麦胚芽混合送入锅中翻炒至干燥,再经超微粉碎,得混合粉;
