技术领域
本发明涉及食品检测技术领域,具体涉及一种鉴别名酒的方法。
技术背景
酒在中国文化中占有重要地位,然而,随着经济利益的驱使,不法商家仿造名酒、假冒名酒、制造假酒,极大的损害了消费者的利益,也给名酒厂家带来不小的经济损失和名誉侵害。但由于酒类产品为液体的特殊性,假冒者往往从外包装上下功夫,仿造假冒出的产品从外观上看与真品几乎完全一样,一般消费者无法判断其真假。长期以来业内采用人工品尝、液相色谱检测等方法鉴别名酒、抵制假酒,可遗憾的是液相色谱只能检测产品中某种指定成分的单一含量。而名酒之所以称其为名酒,主要是由其特殊的水源、窖池和独特的酿造工艺以及特殊辅料共同影响的结果,而非某种指定成分决定的,因此,液相色谱鉴别的准确程度有待商榷。
发明内容
本发明解决的技术问题:提供一种鉴别名酒的方法,采用微量热技术检测名酒的溶解热,进而判断其真假,简单有效,成本低,准确率高,易推广。
本发明的技术解决方案:微量热技术精度可达10-6,通过测定体系的热焓,可准确判断其真假。由于名酒主要是由其特殊的水源、窖池和独特的酿造工艺以及特殊辅料共同影响的结果,这是仿造者无法实现和超越的。也可以说判断真假名酒最有效的方法应该是检测其产品体系的某些热力学量。
本发明提出采用微量热技术检测名酒的溶解热,通过对测出的溶解热数据进行对比分析,进而判断其真假,进而判断其真假。
而且,最好在在常压及同一温度条件下,以超纯水为溶剂,名酒为待测液,超纯水为参比液,采用微量量热计测出待测名酒的溶解热。
本发明具有的优点和效果:
1、本发明与现行的几种鉴别方法相比,采用微量热技术具有精度高,外界干扰小,理论可靠等特点,且能全面反映名酒体系特性。
2、本发明简单有效,成本低,准确率高,易推广。
具体实施方式
在常压及同一温度条件下,以超纯水为溶剂,名酒为待测液,超纯水为参比液,采用微量量热计测出待测名酒的溶解热,进而判断其真假。
具体步骤如下:
在常压及303.15 K温度条件下,在测量池中,以超纯水为溶剂,取1.5ml置于外管中,分别以待测名酒为待测液,取1.5ml置于内管中;在参比池中,以1.5ml的超纯水为参比液,置于外管中。将两套测量管分别固定在连杆上,置于RD 496-2000微量量热计中,测出上述待测名酒的溶解热。
采用上述方法测出的西凤酒、五粮液溶解热数据如下:
从测定的数据可以看出售价168元的低档西凤酒与售价688元的高档西凤酒相比,溶解热数据有较大差距,然而这种差距是其它方法分辩不出来的。而且西凤酒与五粮液溶解热数据也有明显的不同。因此,通过采用微量热技术检测名酒的溶解热,通过对溶解热数据进行对比分析是鉴别名酒真假行之有效的方法,进而实现了保护消费者权益和生产厂家利益和声誉的目的。
上述实施例,只是本发明的较佳实施例,并非用来限制本发明实施范围,故凡以本发明权利要求所述内容所做的等同变化,均应包括在本发明权利要求范围之内。

1.一种鉴别名酒的方法,其特征在于:在常压及同一温度条件下,以超纯水为溶剂,名酒为待测液,超纯水为参比液,采用微量量热计测出待测名酒的溶解热,通过对测出的溶解热数据进行对比分析,进而判断其真假。
