Abstract

本发明涉及一种沙梭鱼去骨加工工艺,按如下工艺步骤进行,第一步:对沙梭鱼进行清洗;第二步:用尖尾刀去鳞,去头;第三步:用尖尾刀的刀尖部伸入沙梭鱼鱼背的脊骨一侧,刀尖一侧面紧贴脊骨且未贯穿鱼肚,刀身沿鱼肚边缘朝鱼尾方向割开鱼身;第四步:刀尖移动至鱼肛门对应的脊骨位置时,刀尖朝鱼臀鳍侧伸入,且刀尖紧贴在鱼腹内侧,然后刀身朝鱼尾方向割开鱼身;第五步:当刀身达到鱼尾处时,用手戳开鱼肚,使一侧的鱼腹骨与鱼身脱离出来,并使该侧的鱼脊骨与鱼身脱离出来;第六步:将鱼身翻过来,重复第三步至第五步的步骤,最后完成鱼身去骨。本发明工艺流程简单、易操作,能有效保障沙梭鱼去骨效果,且还能有效提升加工效率,满足生产需求。

技术领域
本发明涉及一种沙梭鱼去骨加工工艺,应用于沙梭鱼去骨作业。 
背景技术
为了满足食客对于沙梭鱼食用要求,需要在冷冻运输前对其进行去骨作业,保障使用的便捷性;然后目前对于沙梭鱼的去骨作业往往去骨效果差、效率低,无法达到生产要求。因此,针对上述问题是本发明研究的对象。 
发明内容
本发明的目的在于提供一种沙梭鱼去骨加工工艺,解决了目前沙梭鱼去骨作业过程中效率低、去骨效果不佳等问题。 
本发明的特征在于:一种沙梭鱼去骨加工工艺,其特征在于:按如下工艺步骤进行, 
第一步:对沙梭鱼进行清洗;
第二步:用尖尾刀去鳞,去头;
第三步:用尖尾刀的刀尖部伸入沙梭鱼鱼背的脊骨一侧,刀尖一侧面紧贴脊骨且未贯穿鱼肚,刀身沿鱼肚边缘朝鱼尾方向割开鱼身;
第四步:刀尖移动至鱼肛门对应的脊骨位置时,刀尖朝鱼臀鳍侧伸入,且刀尖紧贴在鱼腹内侧,然后刀身朝鱼尾方向割开鱼身;
第五步:当刀身达到鱼尾处时,用手戳开鱼肚,使一侧的鱼腹骨与鱼身脱离出来,并使该侧的鱼脊骨与鱼身脱离出来;
第六步:将鱼身翻过来,重复第三步至第五步的步骤,最后完成鱼身去骨。
本发明的优点:本发明工艺流程简单、易操作,能有效保障沙梭鱼去骨效果,且还能有效提升加工效率,满足生产需求。 
  
具体实施方式
本发明涉及一种沙梭鱼去骨加工工艺,按如下工艺步骤进行, 
第一步:对沙梭鱼进行清洗;
第二步:用尖尾刀去鳞,去头;
第三步:用尖尾刀的刀尖部伸入沙梭鱼鱼背的脊骨一侧,刀尖一侧面紧贴脊骨且未贯穿鱼肚,刀身沿鱼肚边缘朝鱼尾方向割开鱼身;
第四步:刀尖移动至鱼肛门对应的脊骨位置时,刀尖朝鱼臀鳍侧伸入,且刀尖紧贴在鱼腹内侧,然后刀身朝鱼尾方向割开鱼身;
第五步:当刀身达到鱼尾处时,用手戳开鱼肚,使一侧的鱼腹骨与鱼身脱离出来,并使该侧的鱼脊骨与鱼身脱离出来;
第六步:将鱼身翻过来,重复第三步至第五步的步骤,最后完成鱼身去骨。
具体实施过程:本沙梭鱼去骨过程按上述工艺流程进行操作,其目的在于将鱼脊骨与鱼腹骨从鱼身中分离出来,分离后的鱼身进行一定的清洗后再冷冻保藏。通过上述方式,可大大提升沙梭鱼食用的便捷性和去骨生产效率。

1. 一种沙梭鱼去骨加工工艺,其特征在于:按如下工艺步骤进行,
第一步:对沙梭鱼进行清洗;
第二步:用尖尾刀去鳞,去头;
第三步:用尖尾刀的刀尖部伸入沙梭鱼鱼背的脊骨一侧,刀尖一侧面紧贴脊骨且未贯穿鱼肚,刀身沿鱼肚边缘朝鱼尾方向割开鱼身;
第四步:刀尖移动至鱼肛门对应的脊骨位置时,刀尖朝鱼臀鳍侧伸入,且刀尖紧贴在鱼腹内侧,然后刀身朝鱼尾方向割开鱼身;
第五步:当刀身达到鱼尾处时,用手戳开鱼肚,使一侧的鱼腹骨与鱼身脱离出来,并使该侧的鱼脊骨与鱼身脱离出来;
第六步:将鱼身翻过来,重复第三步至第五步的步骤,最后完成鱼身去骨。
