二、背景技术:
酱菜中有乳酸菌等有益健康的物质,还具有特殊香味且便于贮存,是秋冬季深受人们喜爱的菜肴。酱菜在发酵过程中会产生乳酸菌,这对中老年人有助消化、调节肠胃功能的好作用。
三、发明内容:
酱莴笋:把莴笋削去外皮,洗净;放置于清毒干净小缸中用盐均匀腌渍,置于阳光下晒干,将豆瓣酱涂抹在莴笋上,重新放入小缸内。酱制3-4天后,即可食用。
四、具体实施方式:
原材料:肥大嫩莴笋3000克,食盐50克,豆瓣酱150克。
制作方法:1、把莴笋削去外皮,洗净;放置于清毒干净小缸中用盐均匀腌渍,置于阳光下晒干;
2、将豆瓣酱涂抹在莴笋上,重新放入小缸内。酱制3-4天后,即可食用。
3、莴笋上抹豆瓣酱要抹匀,以免酱出的菜味不一致;
4、若大量酱制,可拣去豆瓣渣晒干,储存在坛子内,经久不坏。
