Abstract

本发明提供一种冷冻干燥用的芦荟浓缩汁配制方法,在芦荟浓缩汁中添加0.01%~0.1%的植酸,0.02%~0.2%的甘露醇;然后再进行冷冻干燥。添加甘露醇,使芦荟浓缩汁在速冻过程中,可以在变成固态时快速形成规则的晶体,防止在干燥时物料表面起泡,加快冻干速度,减少未冻干物料的重量,提高冻干产品得率。添加植酸,可以防止芦荟在干燥后期发生褐变,保证产品芦荟粉的感官质量。本发明具有生产成本低,操作简单,可直接应用于批量制备芦荟冻干粉产品。

一种冷冻干燥用的芦荟浓缩汁配制方法
技术领域
本发明涉及芦荟深加工领域中的一种加工配制方法,是调整芦荟浓缩汁配比,加快芦荟浓缩汁在速冻过程中形成规则的固态晶体,预防冷冻干燥过程中芦荟起泡现象和芦荟粉变色现象。
背景技术
芦荟是百合科多年生草本植物,含有大量的糖类、蛋白质氨基酸、有机酸、蒽醌类化合物、维生素、矿物质等营养成分和功效成分,具有医疗、保健、美容、观赏等作用。芦荟凝胶冻干粉是医药、化工、食品方面的重要原料。热风干燥法和喷雾干燥法加工芦荟,必须提高干燥温度或延长干燥时间,导致芦荟营养成分破坏较大,特别是热敏性营养成分和维生素在干燥过程中变性而失去功效。真空冷冻干燥是低温干燥技术,先将芦荟浓缩汁在低温下速冻变成固态,然后在低真空条件下加热,让冰直接升华变成水蒸汽,从而得到多孔的干物料,进一步加工成芦荟粉。冷冻干燥可以有效地保留芦荟的营养成分。但在速冻过程中,由于芦荟的主要成分是糖类、氨基酸、有机酸等混合物,共晶点不是一个温度点,而是一个温度范围,芦荟浓缩汁很难快速变成固态,很难形成规则的固态晶体,因此,需要延长速冻时间;并且在干燥时芦荟物料表面容易起泡,造成部分物料不能完全冻干。同时,在干燥后期,随着温度上升,芦荟物料表面容易发生褐变现象,造成芦荟粉颜色变黄、变深。因此,有必要对芦荟浓缩汁进行合理调配,添加有效的物质,使芦荟浓缩汁在速冻过程中能快速形成规则的晶体,防止在干燥过程中起泡,并且不易发生变色现象。
发明内容
本发明的目的在于提供一种芦荟浓缩汁的配制方法,该方法能够让芦荟浓缩汁在速冻过程中快速结晶变成固态,晶体结构规则,在干燥时不易起泡,物料干燥完全,同时芦荟粉颜色正常。
本发明的技术方案是:一种冷冻干燥用的芦荟浓缩汁配制方法,
其特征在于采用下列配比和操作步骤:
A、在芦荟浓缩汁中添加0.01%~0.1%的植酸。
B、在上述芦荟浓缩汁中加入0.02%~0.2%的甘露醇。
C、将上步骤所得芦荟浓缩汁搅拌均匀即可进行冷冻干燥。
本发明中,芦荟浓缩汁的制取、搅拌、冷冻干燥都为公知技术。
本发明具有下列优点和效果:采用上述方案,即在芦荟浓缩汁中添加0.02%~0.2%的甘露醇,0.01%~0.1%的植酸,然后进行冷冻干燥,将得到质量好、成本低的芦荟冻干粉。添加甘露醇,芦荟浓缩汁在速冻过程中,可以在变成固态时快速形成规则的晶体,防止干燥时芦荟物料表面起泡,加快冻干速度,减少未冻干的物料的量,提高冻干产品的得率。添加植酸,防止芦荟物料在干燥后期发生褐变,保证产品芦荟冻干粉的感官质量。本发明还具有生产成本低,操作简单,添加物都符合国家食品添加剂要求等特点,可直接应用于批量制备芦荟冻干粉产品的生产。
具体实施方式
实施例1
1、称取1000kg的10∶1芦荟凝胶浓缩汁,投入到搅拌锅内;
2、称取0.5kg食品级植酸,加入到芦荟凝胶浓缩汁中,搅拌均匀;
3、称取1kg甘露醇;加入到芦荟凝胶浓缩汁中,搅拌均匀;
4、将上述按配方调好的芦荟凝胶浓缩汁按已知技术进行冷冻干燥,粉碎,即得到所需的芦荟凝胶冻干粉。
实施例2
1、称取200kg的10∶1芦荟脱色凝胶浓缩汁,投入到搅拌锅内;
2、称取0.08kg植酸,加入到芦荟脱色凝胶浓缩汁中,搅拌均匀;
3、称取0.15kg甘露醇;加入到芦荟脱色凝胶浓缩汁中,搅拌均匀;
4、将上述按配方调好的芦荟脱色凝胶浓缩汁按已知技术进行冷冻干燥,粉碎,即得到所需的芦荟脱色凝胶冻干粉。
实施例3
1、称取800kg的10∶1芦荟全叶浓缩汁,投入到搅拌锅内;
2、称取0.3kg植酸,加入到芦荟全叶浓缩汁中,搅拌均匀;
3、称取0.9kg甘露醇;加入到芦荟全叶浓缩汁中,搅拌均匀;
4、将上述按配方调好的芦荟全叶浓缩汁,按已知技术进行冷冻干燥,粉碎,即得到所需的芦荟全叶冻干粉。

A、在芦荟浓缩汁中添加0.01%~0.1%的植酸;
B、在上述芦荟浓缩汁中加入0.02%~0.2%的甘露醇。
