Description
Die vorliegende Erfindung betrifft ein Verfahren zur Herstellung eines Aufstrichmittels mit niedrigem Fettgehalt vom Wasser-in-Öl-Typ. Vorzugsweise enthält das nach dem erfin-dungsgemässen Verfahren hergestellte Aufstrichmittel mit niedrigem Fettgehalt Butterfett, beispielsweise eine Mischung aus Butterfett und Pflanzenfett, und es ist insbesondere zur Verwendung als Brotaufstrich gedacht. Proteinhaltige Aufstrichmittel mit niedrigem Fettgehalt vom Wasser-in-Öl-Typ sind z.B. in der deutschen Patentanmeldung 1 200 113 offenbart worden; solche Produkte erfordern jedoch eine sehr spezielle proteinhaltige wässrige Phase mit einem pH-Wert von 5 bis 6; zudem enthalten sie keine nicht aus Milch stammenden hochmolekularen Substanzen und treffen nicht immer ausreichend den gewünschten butterartigen Geschmack. Die Einverleibung von nicht aus Milch stammenden, hochmolekularen Substanzen, z.B. Pflanzengummis, in saure Aufstrichmittel mit niedrigem Fettgehalt ist in der niederländischen Patentanmeldung 6 616 246 vorgeschlagen worden. In dieser Anmeldung sind jedoch keine Protein enthaltenden Aufstrichmittel beschrieben oder als Beispiel angegeben worden. Proteine sind in dieser Anmeldung nur als Stabilisierungsmittel zur Verwendung anstelle von natürlichen Gummiarten, CMC, Alginaten usw. erwähnt worden. Es ist zu beachten, dass Proteine, wenn sie lediglich einer angesäuerten wässrigen Phase zugesetzt werden, den pH-Wert auf eine Grösse erhöhen, die vom Gesichtspunkt der mikrobiologischen Haltbarkeitseigenschaften unannehmbar ist; dies trifft auch auf die proteinhaltigen Aufstrichmittel von niedrigem Fettgehalt vom Wasser-in-Öl-Typ zu, die z.B. in der USA Patentschrift Nr. 3 366 492 beschrieben sind. Da überdies in den Produkten, die in der genannten Patentschrift beschrieben sind, keine partiellen Glyceride vorhanden sind, ist die physikalische Stabilität der Wasser-in-Öl-Emulsion, insbesondere bei verhältnismässig niedrigen Temperaturen, nicht ausreichend gewährleistet.
