Description
Die Erfindung betrifft ein Verfahren und eine Einrichtung zum Behandeln von Weichkäse und Schnittkäse in abgepassten Stücken, für die Reifung. The invention relates to a method and a device for treating soft cheese and sliced cheese in fitted pieces, for ripening.
Beim Herstellen von Weichkäse und Schnittkäse mit Ober-flächenschmierebildung, z. B. Romadurkäse, ist für die Reifung eine bakteriologisch begründete Oberflächenänderung erforderlich. Derartige Käse werden auf ihrer Oberfläche aufgerauht, damit die Angriffsfläche für die Behandlungsflüssigkeit v erbessert wird. Zu diesem Zweck wurden bisher mit speziell hierfür geschaffenen Maschinen bzw. Anlagen die Oberflächen der Käsestücke mit Bürsten bearbeitet; durch die feinen Rillen, die durch die Bürsten in der Käseoberfläche gebildet wurden, wurde die Oberfläche und damit die Angriffsmöglichkeit der Behandlungsflüssigkeit und Lufteinwirkung wesentlich vergrössert.
