Un hydrocarbure à squelette non terpénique et à odeur très puissante avait été isolé en effet de l'essence de galbanum par
Y. Chrétien-Bessière et ai. [voir: Bull. Soc. Chim. France, 97 (1967)]. Les études de ces auteurs avaient permis d'attribuer à ce composé la formule d'un déca-l,3,5-triéne possédant une double liaison cis et une double liaison trans, dont la position respective n'avait cependant pas été assignée.
Lors d'une communication ultérieure, Y.R. Naves [voir Bull.
Soc. Chim. France. 3152 (1967)] a pu confimer la présence d'undéca- I ,3,5-triéne dans l'huile essentielle de galbanum et assigner, à l'aide d'une analyse spectrale approfondie, la structure de deux isomères du produit en question; ceux-ci ayant été définis comme les isomères de formule Ic et Id. Lesdits composés n'avaient cependant pas pu être isolés à l'état pur. Leur séparation par l'utilisation de colonnes de distillation à bande tournante s'était toujours heurtée à une dimérisation aisée et la séparation à l'aide de chromatographie en phase gazeuse ou de cristallisation à basse température n'avait pas été satisfaisante.
Le fait que le produit isolé de l'huile essentielle naturelle était en fait un mélange de deux isomères géométriques a été ensuite confirmé dans une étude publiée ultérieurement par P. Teisseire et ai. [voir: Recherches, 16. 5 (1967)]. Cependant, contrairement aux résultats obtenus par les auteurs précédents, cette dernière publication fait état de la présence dans l'huile essentielle de galbanum de deux isomères de l'hydrocarbure en question, à savoir d'undéca-1,3cis,5cis-triène et d'undéca-1,3cis,5trans-triène, le premier de ces composés étant considéré comme le constituant principal.
L'examen olfactif, selon ces mêmes auteurs, indiquait en outre que cet isomère était essentiellement responsable de l'odeur caractéristique de l'essence naturelle [voir également le brevet suisse N" 496084].
De façon surprenante, il a été trouvé que l'odeur caractéristique de l'huile essentielle de galbanum était conférée principalement par la présence dans celle-ci d'undéca-1,3trans,5cis-triène (composé Ic). Quoique moins développés, les caractères olfactifs de l'autre isomère, l'undéca-l ,3trans,Strans-triéne (composé Id), présentent néanmoins un grand intérêt [voir à cet effet le brevet suisse N" 581591 (demande de brevet N" 8247173)].
L'huile essentielle de galbanum présente une note olfactive verte caractéristique et particulièrement puissante avec une tonalité de bois sec de caractère balsamique [voir: S. Arctander, Perfume and Flavor Materials of Natural Origin , N.Y., USA (1960)]. Quoique utilisée en petites concentrations, cette essence trouve une application très étendue, notamment en tant qu'ingrédient dans des compositions à caractère floral, telles par exemple les compositions de type jacinthe, violette, narcisse, lavande ou gardénia, où sa tonalité feuille sert à conférer ou compléter le caractère naturel.
Nous avons découvert que d'une façon surprenante non seulement les composés Ic et Id possèdent des propriétés odoriférantes particulièrement appréciées, et ceci contrairement à l'enseignement donné par l'état de la technique, mais ces mêmes composés peuvent également développer des notes gustatives intéressantes.
En particulier, par l'utilisation des produits mentionnés ou celle de mélanges contenant différentes concentrations desdits produits, on peut développer des notes aussi variées que des notes grasses ou vertes, rappelant parfois le goût de certains agrumes ou légumes.
La présente invention a donc pour objet l'utilisation d'un déca-1,3trans,5cis-triène et/ou un déca-I ,3trans,Strans-triène comme ingrédient aromatisant pour la préparation d'arômes artificiels ou pour l'aromatisation d'aliments solides et liquides pour l'homme et les animaux. de boissons non nutritives et du tabac.
Les proportions dans lesquelles les composés de formule Ic et
Id peuvent développer des caractères organoleptiques intéressants, varient entre des limites assez étendues. C'est ainsi que des concentrations comprises entre environ 0,01 et 5 ppm, par rapport au poids du produit aromatisé, peuvent produire des effets particulièrement appréciés. De préférence, on utilise des concentrations comprises entre environ 0,1 et 0,5 ppm.
Lorsque lesdits composés sont utilisés pour la préparation d'arômes artificiels, on peut les utiliser à raison de I à 30% environ du poids total de ladite composition.
Il est cependant entendu que des concentrations supérieures ou inférieures aux limites indiquées ci-dessus peuvent également être employées, notamment lorsqu'on désire obtenir des effets spéciaux.
Les composés, dont l'utilisation constitue l'objet de la présente invention, peuvent être obtenus par des procédés de synthèse applicables industriellement et notamment décrits dans le brevet suisse N" 581591 (demande de brevet N" 8247173).
L'invention est illustrée d'une manière plus détaillée par les exemples suivants. Dans lesdits exemples les températures sont indiquées en degrés centigrades et les abréviations ont la signification usuelle dans l'art.
Exemple 1:
100 ml d'un sirop préparé en dissolvant un kilo de sucrose dans 600 ml d'eau ont été aromatisés à l'aide d'un mélange 50:50 d'un déca-1,3trans,5cis-triéne et un déca-1,3trans,5trans-triène à raison de 0,5 ppm d'ingrédient aromatisant par rapport au poids du produit aromatisé (A).
De façon analogue on a procédé à l'aromatisation d'une solution saline contenant 0,5% de NaCI (B).
Les éléments A et B ainsi préparés ont été goûtés par un groupe d'experts qui ont défini leurs goût et arôme comme étant.

A hydrocarbon with a non-terpene skeleton and a very powerful odor had in fact been isolated from the essence of galbanum by
Y. Chrétien-Bessière et al. [see: Bull. Soc. Chim. France, 97 (1967)]. The studies of these authors had made it possible to attribute to this compound the formula of a deca-1,3,5-triene having a cis double bond and a trans double bond, the respective position of which, however, had not been assigned.
In a subsequent communication, Y.R. Naves [see Bull.
Soc. Chim. France. 3152 (1967)] was able to confirm the presence of undeca- I, 3,5-triene in the essential oil of galbanum and to assign, using an in-depth spectral analysis, the structure of two isomers of the product in question; these having been defined as the isomers of formula Ic and Id. However, said compounds could not be isolated in the pure state. Their separation by the use of rotating band distillation columns had always encountered easy dimerization and the separation by means of gas chromatography or low temperature crystallization had not been satisfactory.
The fact that the product isolated from natural essential oil was in fact a mixture of two geometric isomers was then confirmed in a study published subsequently by P. Teisseire et al. [see: Research, 16. 5 (1967)]. However, unlike the results obtained by previous authors, this latest publication reports the presence in the essential oil of galbanum of two isomers of the hydrocarbon in question, namely undeca-1,3cis, 5cis-triene and undeca-1,3cis, 5trans-triene, the first of these compounds being considered the major constituent.
The olfactory examination, according to these same authors, further indicated that this isomer was essentially responsible for the characteristic odor of natural gasoline [see also Swiss patent No. 496084].
Surprisingly, it was found that the characteristic odor of galbanum essential oil was imparted mainly by the presence therein of undeca-1,3trans, 5cis-triene (compound Ic). Although less developed, the olfactory characteristics of the other isomer, undeca-1,3trans, Strans-triene (compound Id), are nevertheless of great interest [see for this purpose Swiss patent N "581591 (patent application N "8247173)].
Galbanum essential oil exhibits a characteristic and particularly powerful green olfactory note with a dry wood tone of balsamic character [see: S. Arctander, Perfume and Flavor Materials of Natural Origin, N.Y., USA (1960)]. Although used in small concentrations, this essence finds a very wide application, in particular as an ingredient in compositions of a floral character, such as for example compositions of the hyacinth, violet, narcissus, lavender or gardenia type, where its leaf tone is used to to impart or supplement the naturalness.
We have discovered that, surprisingly, not only the compounds Ic and Id have particularly appreciated odoriferous properties, and this contrary to the teaching given by the state of the art, but these same compounds can also develop interesting taste notes. .
In particular, by using the products mentioned or that of mixtures containing different concentrations of said products, it is possible to develop notes as varied as fatty or green notes, sometimes reminiscent of the taste of certain citrus fruits or vegetables.
A subject of the present invention is therefore the use of a deca-1,3trans, 5cis-triene and / or a deca-I, 3trans, Strans-triene as a flavoring ingredient for the preparation of artificial flavors or for flavoring. solid and liquid food for humans and animals. non-nutritional drinks and tobacco.
The proportions in which the compounds of formula Ic and
Id can develop interesting organoleptic characters, vary between fairly wide limits. Thus, concentrations of between about 0.01 and 5 ppm, based on the weight of the flavored product, can produce particularly appreciated effects. Preferably, concentrations of between about 0.1 and 0.5 ppm are used.
When said compounds are used for the preparation of artificial flavors, they can be used in an amount of I to about 30% of the total weight of said composition.
It is understood, however, that concentrations higher or lower than the limits indicated above can also be used, in particular when it is desired to obtain special effects.
The compounds, the use of which constitutes the object of the present invention, can be obtained by industrially applicable synthetic methods and in particular described in Swiss patent N "581591 (patent application N" 8247173).
The invention is illustrated in more detail by the following examples. In said examples the temperatures are indicated in degrees centigrade and the abbreviations have the usual meaning in the art.
Example 1:
