ist als schwachriechende Substanz bekannt [ s. zum Beispiel Ber. 53 (1920), 2307]. Es wurde nun überraschenderweise gefunden, dass sich dieser Ester aufgrund seiner besonderen Geschmackseigenschaften (süss, fruchtig, schwachholziges Ananasaroma ohne jegliche scharfe, aufdringliche Nebennote) ausgezeichnet eignet zur Herstellung bnv. Modifizierung von Ananas-Aromenkompositionen bzw. zur Aromatisierung von Nahrungs- und Genussmitteln zwecks Verleihung eines Ananasaromas.
Die Erfindung betrifft demgemäss Aromatisierungsmittel mit Ananasaroma, die durch einen Gehalt an 3-(a-Tetrahydrofuryl)-propionsäureäthylester als Komponente gekennzeichnet sind.
Ein wesentlicher Vorteil des 3 - (a-Tetrahydrofuryl)-pro- pionsäureäthylesters liegt darin, dass derselbe allein schon weitgehend den typischen Ananasgeschmack vermittelt und es deshalb nur noch weniger anderer Aromastoffzusätze bedarf, um ein abgerundetes Ananasaroma herzustellen. Es kann schliesslich bei der Herstellung von Ananas aromen unter Verwendung von 3-(a-Tetrahydrofuryl)-propionsäure äthylester gewünschtenfalls völlig auf die Zugabe von natürlichen Extrakten verzichtet werden, was preislich günstig ist und eine bessere Reproduzierbarkeit der Aromen gewährleistet.
3-(a-Tetrahydrofuryl)-propionsäureäthylester kann, gegebenenfalls mit anderen geschmacksgebenden Bestandteilen, mit den üblichen Trägerstoffen und/oder Verdünnungsmitteln und gegebenenfalls Emulgatoren zu Aromatisierungsmitteln vermischt werden, die Nahrungs- bzw. Genussmitteln einen Ananasgeschmack verleihen oder einen solchen Geschmack verstärken. Der erfindungsgemäss venvendete Ester kann zu den aromatisierenden Produkten wie gesagt auch allein zugesetzt werden. In diesem Falle muss beim Zusetzen besonders auf eine gleichmässige Verteilung im zu aromatisierenden Produkt geachtet werden. Falls der Ester als Komponente zur Herstellung von künstlichen Aromen dient, können diese Aromen z. B. zu Flüssigkeiten, Pasten oder Pulvern formuliert werden.
Die Produkte können z. B. sprühgetrocknet, vakuumgetrocknet oder lyophilisiert werden.
Die Formulierung solcher künstlicher Aromen sowie die Aromatisierung von Nahrungs- und Genussmitteln, wie z. B.
Gelees, Getränken, Milchdrinks, Yoghurt, Konditoreierzeugnissen, Bonbons, Soft-Ice, Backwaren usw., kann im übrigen auf an sich bekannte Art und Weise [vgl. J. Merory; Food flavourings, composition, manufacture and use; Avi Publ. Co.
Inc. Westport (1968)] vorgenommen werden.
Je nachdem, ob der 3-(a-Tetrahydrofuryl)-propionsäure- äthylester dazu dienen soll, den Geschmack von Ananasaromen zu verbessern oder solche Aromen überhaupt erst zu erzeugen, wird die Menge des Esters stark variieren; im letzteren Fall wird die Menge natürlich grösser sein.
Die Menge in einem Aroma kann z. B. 0,2-5 Gew. % betragen. Soll der Ester hauptsächlich zur Verbesserung eines Aromas dienen, liegt dessen Konzentration zweckmässig in einem Bereiche von es via 1-2 Gew. %. Die Menge Ester im aromatischen Endprodukt, d. h. im fertigen Nahrungs- oder Genussmittel, kann z. B. 0,5-500 ppm betragen, bevorzugt beträgt sie 5-50 ppm.
Durch Einarbeitung von z. B. 20 Gewichtsteilen in eine Ananasaromakomposition der Zusammensetzung Äthyl-acetat 5 Gewichtsteile
Butyl-acetat 5 Gewichtsteile
Amyl-acetat 5 Gewichtsteile
Allyl-caproat 10 Gewichtsteile
Ananassaftkonzentrat 465 Gewichtsteile
Vanillin 5 Gewichtsteile
Maltol 5 Gewichtsteile Äthylalkohol 500 Gewichtsteile wird das Ananasaroma der Komposition in entscheidender Weise verbessert. Die obige Komposition kann z. B. zur Aromatisierung von Gelees verwendet werden.
Eine 12%ige Lösung eines Gemisches von 0,02 Gewichtsteilen des Esters I und 1000 Gewichtsteilen Äthanol in Zukkersirup ergibt ein gut nach Ananas schmeckendes Getränk.

Aromatisierungsmittel mit Ananasaroma, dadurch gekennzeichnet, dass es den 3-(a-Tetrahydrofuryl)-propionsäure äthylester als Komponente enthält.

Depending on whether the ethyl 3- (a-tetrahydrofuryl) propionate is intended to improve the taste of pineapple aromas or to produce such aromas in the first place, the amount of ester will vary greatly; in the latter case the amount will of course be greater.
