La présente invention se rapporte à une composition aromatisante, caractérisée en ce qu'elle contient, comme ingrédient actif, au moins un composé chimique synthétique de formule

dans laquelle le symbole RIO représente un atome d'hydrogène ou un radical monovalent dérivé soit d'un hydrocarbure aliphatique saturé ou insaturé, cyclique ou acyclique, linéaire ou ramifié, soit d'un hydrocarbure aromatique ou araliphatique.
L'invention a également pour objet l'utilisation de la composition ci-dessus afin de modifier ou améliorer les caractéristiques organoleptiques d'aliments pour l'homme et les animaux, de boissons et du tabac.
Nous avons en effet trouvé, de façon surprenante, que l'addition de compositions contenant lesdits composés de formule I à des aliments divers, des boissons, des préparations pharmaceutiques ou du tabac, modifiait, améliorait ou renforçait sensible- ment les propriétés organoleptiques desdits produits.
Les caractéristiques organoleptiques obtenues varient notamment selon la nature des aliments considérés, selon la nature de la composition aromatisante utilisée et, en particulier, selon les concentrations respectives desdits ingrédients au sein de la composition.
C'est ainsi que des compositions aromatisantes telles que définies plus haut peuvent entre autre conférer aux produits auxquels on les a incorporées une note gustative de caractère rôti ou grillé, parfois terreux. Selon les cas, on a également pu obtenir, à l'aide de telles compositions, un goût de viande, de céréale, de noix. de noisette ou de cacao. Le terme aliment , tel qu'utilisé au sein de la présente description, doit être compris dans son sens le plus large: il sert notamment à désigner des produits tels que thé, café ou chocolat.
Des arômes artificiels tels que des arômes de noix, noisettes, cacahuètes, pistaches, chocolat, café, caramel, de céréales grillées, de viande ou d'épices diverses par exemple, peuvent être favorablement modifiés par l'addition des composés de formules I, en raison notamment de la nuance torréfiée et brûlée que lesdits composés apportent à la composition aromatisante en question.
Les proportions utilisées pour obtenir des effets aromatisants tels que décrits ci-dessus peuvent varier de façon étendue. Des effets intéressants peuvent être obtenus par l'utilisation d'une composition aromatisante à raison de 0,1 ppm du poids total de la matière aromatisée. Selon la nature de l'aliment ou boisson considéré, il peut être parfois plus avantageux d'utiliser lesdites compositions en proportions plus élevées, par exemple de l'ordre de I à 10 ppm. Les quantités susmentionnées ne représentent cependant pas des limites absolues, des quantités supérieures ou inférieures à celles-ci peuvent être également utilisées.
Les composés de formule I dont l'utilisation comme ingrédients aromatisants constitue l'objet de la présente invention peuvent être utilisés sous forme de solutions diluées, à raison de 0,1 à 5% par exemple. Parmi les solvants non toxiques convenant à un tel usage, on peut citer le propylène-glycol, la triacétine,
I'alcool benzylique par exemple, ou encore des huiles comestibles insipides, telle l'huile d'arachide pure par exemple.
Ci-après figure la liste des composés de formule I dont l'utilisation constitue l'objet de la présente invention. En regard de la dénomination de chacun desdits composés figure la référence indiquant la méthode de préparation ou la source commerciale.
Dans ce dernier cas on utilise l'abréviation p.c. .

Les composés mentionnés ci-dessus ont été préparés selon une méthode analogue à celle indiquée ci-après, pour l'obtention de la 2-propyl-thiazolidine:
A 91 g de cistéamine (1,18 mole) dans 190 ml d'eau on a ajouté, par portions successives et avec agitation, 102 g de nbutyraldéhyde (1,42 mole). La réaction est légèrement exothermique et la température du mélange de réaction monte à environ 60 C. On a maintenu l'agitation pendant 5 heures et on a extrait ensuite le mélange à l'éther (2 x 500 ml). Après le traitement de séparation, lavage à l'eau et séchage sur sulphate de sodium, les extraits organiques ont été évaporés et le résidu ainsi obtenu distillé sous vide, pour donner la 2-propylthiazolidine, Eb.
75-8110 torrs; 126 g; rendement 82%. Une portion du produit ainsi obtenu a été soumise à une nouvelle distillation fractionnée,
Eb. 76-7-/10 torrs.
L'invention est illustrée de façon plus détaillée à l'aide des exemples ci-après.
Exemple 1:
On a préparé une composition aromatisante de base en mélangeant les ingrédients suivants (parties en poids):

Les solutions ainsi obtenues ont ensuite été divisées en 4 portions égales, celles-ci étant finalement aromatisées par l'addition respective des ingrédients suivants (parties en poids par rapport au poids total de la solution):

2. Note soufrée, arrière-goût de viande.
3. Caractère de céréale, arrière-goût de viande ou de noisette.
4. Note de chocolat, cacao.

La composition de base ci-dessus a ensuite été ajoutée, a raison de 0,01%, à une solution à 15% de sucre dans l'eau.
Par addition à la solution ainsi préparée de 20 ppm de vanilline, 1 ppm d'aldéhyde a-méthylbutyrique et 5 ppm de 2-isobutylthiazolidine on obtient une boisson ayant un caractère de chocolat brûlé et présentant un arrière-goût de noix.

Les solutions aromatisées ainsi obtenues ont été soumises à l'évaluation organoleptique de la part d'un groupe d'experts. Ces derniers ont défini le goût des solutions comme suit:
1. Caractère de viande plus marqué que celui de la solution de contrôle, particulièrement dans les notes grasses et carbonisées.
2. Fortement brûlé, caractère carbonisé.
3. Analogue à 2, mais avec une note de graisse de boeuf plus marquée.

A: Boissons au lait à base de chocolat
Une poudre pour boissons au lait à base de chocolat contenant de la poudre de chocolat, de la poudre de lait et du sucre a été utilisée comme base. 100 g dudit aliment ont été dissous dans 600 ml d'eau froide. La solution ainsi obtenue a été ensuite divisée en trois fractions d'égal volume.
Une desdites fractions a servi comme solution de contrôle, tandis que les deux autres ont été séparément aromatisées par: 1. adjonction dans la proportion de 0,005% (calculée sur le poids
total de la solution aromatisée) de la composition aromati
sante de base indiquée ci-dessus et 0,005% de la composition
aromatisante pyrazinique de base indiquée dans l'exemple 2, et 2. adjonction dans la proportion de 0,005% de la composition
aromatisante de base indiquée ci-dessus, 0,005% de la compo
sition aromatisante pyrazinique de base indiquée à l'exemple 2
et 1,5 ppm de 2-isobutyl-thiazolidine.
De l'avis des experts la 2-isobutyl-thiazolidine renforce la note chocolat de base. Ladite solution aromatisée possède en outre un goût beaucoup plus arrondi.
B: Barres de chocolat
Une couverture de chocolat commercial de qualité ordinaire a été utilisée comme aliment de base. On a ensuite utilisé des compositions aromatisantes identiques à celles indiquées au paragraphe A ci-dessus.
Dans ce cas aussi les experts appelés à se prononcer sur le caractère organoleptique des aliments aromatisés ont trouvé que les barres de chocolat aromatisées par la composition 2 (voir paragraphe A ci-dessus) possédaient un caractère de chocolat mieux défini, plus riche et plus arrondi que l'aliment de base non aromatisé.

A subject of the invention is also the use of the above composition in order to modify or improve the organoleptic characteristics of foods for humans and animals, of drinks and of tobacco.
We have in fact found, surprisingly, that the addition of compositions containing said compounds of formula I to various foods, beverages, pharmaceutical preparations or tobacco significantly modifies, improves or enhances the organoleptic properties of said products. .
The organoleptic characteristics obtained vary in particular according to the nature of the foods considered, according to the nature of the flavoring composition used and, in particular, according to the respective concentrations of said ingredients within the composition.
Thus, flavoring compositions as defined above can, among other things, give the products in which they have been incorporated a taste note of a roasted or grilled character, sometimes earthy. Depending on the case, it has also been possible to obtain, using such compositions, a taste of meat, cereals, nuts. hazelnut or cocoa. The term food, as used within the present description, should be understood in its broadest sense: it is used in particular to designate products such as tea, coffee or chocolate.
Artificial flavors such as flavors of nuts, hazelnuts, peanuts, pistachios, chocolate, coffee, caramel, toasted cereals, meat or various spices for example, can be favorably modified by the addition of the compounds of formulas I, due in particular to the roasted and burnt shade which said compounds provide to the flavoring composition in question.
The proportions used to obtain flavoring effects as described above can vary widely. Interesting effects can be obtained by using a flavoring composition in an amount of 0.1 ppm of the total weight of the flavored material. Depending on the nature of the food or drink considered, it may sometimes be more advantageous to use said compositions in higher proportions, for example of the order of 1 to 10 ppm. The aforementioned amounts do not however represent absolute limits, amounts greater or less than these can also be used.
The compounds of formula I, the use of which as flavoring ingredients constitutes the object of the present invention, can be used in the form of dilute solutions, in an amount of 0.1 to 5% for example. Among the non-toxic solvents suitable for such use, there may be mentioned propylene glycol, triacetin,
Benzyl alcohol, for example, or else tasteless edible oils, such as pure peanut oil for example.

The compounds mentioned above were prepared according to a method analogous to that indicated below, to obtain 2-propyl-thiazolidine:

3. Similar to 2, but with a more marked note of beef fat.

A: Milk drinks made from chocolate
A chocolate-based milk drink powder containing chocolate powder, milk powder and sugar was used as the base. 100 g of said food was dissolved in 600 ml of cold water. The solution thus obtained was then divided into three fractions of equal volume.

In the opinion of experts, 2-isobutyl-thiazolidine reinforces the basic chocolate note. Said flavored solution also has a much more rounded taste.
B: Chocolate bars
Ordinary grade commercial chocolate couverture was used as the staple. Flavoring compositions identical to those indicated in paragraph A above were then used.
In this case too, the experts called upon to comment on the organoleptic character of flavored foods found that the chocolate bars flavored with composition 2 (see paragraph A above) had a better defined, richer and more rounded chocolate character. than the unflavored staple food.
