verfahren zum verpacken von Knödeln und danach hergestellte Verpackung .Die Erfindung betrifft ein Verfahren zum Verpak- ken von Knödeln unter gleichzeitigem Ausformen der selben, sowie eine nach diesem Verfahren hergestellte Verpackung.
Die Knödelverpackung weist die Vorteile auf, dass sie hygienisch und praktisch ist und eine leichte Lagerung sowohl im gekühlten als auch tiefge- frorenen Zustand erlaubt. Ferner wird es durch die Verpackung möglich, den Inhalt zu kochen oder vor- zuwärmen, ohne .dass -seine kugelige Form verloren geht oder .die Lockerheit des Materials eingebüsst wird.
Darüber hinaus erlaubt die neue Verpackung, dass der Inhalt weder während der Herstellung noch während des Vertriebes mit .der :Hand oder mit der Atmosphäre in Berührung kommt.
Bisher musste der Knödel sowohl während der Formung als auch bei einer eventuellen Verpackung .und beim -Betrieb manuell gehandhabt werden und stand mit der umgebenden Atmosphäre stets in Berüh rung. Dadurch 'tritt -die Gefahr von bakterieller Verun reinigung, Säuerung oder Salmonellbildung auf, so dass ein langer Vertriebsweg oder eine längere Lagerzeit ausgeschlossen-war.
\Die Aufgabe bestand darin, diese Mängel durch eine neuartige -Knödelverpackung zu beheben, die eine Ausformung und Abpassung derEinzelknödel und de ren zweckmässige hygienische und praktisch sterile Führung von der Herstellung bis zum Verbraucher er laubt.
-Die neuartige Lösung dieser Aufgabe beruht in einer Knödelverpackung, die aus einer schlauchartigen dehnbaren Folie in gedehnter, unter Spannung stehen der, wenigstens unnäherrid kugeliger Form mit zwei durch Verdrehen gebildeten Abschlussteilen, die jeweils eine Abkiemmung.aufweisen, besteht.
Sehr vorteilhaft ist eitre Verbindung mehrerer der artiger Einzelabpackungen in kettenartiger Weise. Dadurch ergibt sich eine praktische und hygienische Ausformung und Verpackung von Knödeln, die weder ,bei der Herstellung noch -beim Vertrieb mit der Hand -berührt -werden, in .Folien, wobei -die Einzelpackungen nach Art einer Kette endlos angeordnet und von Stück zu Stück durch Abklemmungen in der Weise ab geschlossen sind,
dass jeder Knödel einzeln von den übrigen abgetrennt werden kann, wobei die Folie sowohl der abgenommenen als auch der verbliebenen Einzelstück geschlossen bleibt.
Das erfindungsgemässe Verfahren zur gleichzeiti gen Ausformung und Verpackung von Knödeln besteht darin, dass die portionierte Knödelrohmasse durch ein Füllrohr unter Überdruck in einen aufgespulten \Schlauch aus einer dehnbaren Folie, dessen Ende mit einer Abklemmung -abgeschlossen ist, eingepresst wird, wobei das, sich abspulende Schlauchstück axial gedreht und gedehnt wird, so dass eine wenigstens annähernd kugelige Knödelform entsteht, worauf der durch das Verdrehen gebildete Endteil abgeklemmt wird.
Sehr vorteilhaft erwies sich, insbesondere für die Anordnung in Art einer endlosen Kette, wenn der Endteil mit zwei, voneinander einen gewissen Abstand aufweisen den Abklemmungen verschlossen wird.
Die Erfindung wird im folgenden anhand der bei liegenden Zeichnung näher erläutert, worin Fig. 1 eine verbundene Mehrzahl von Einzelpackungen darstellt, Fig. 2 einen Teilschnitt durch eine Einzelheit der Fig. 1 zeigt und Fig. 3 eine Einzelheit der Fig. 1 zeigt und Fig. 3 eine Alternativform der Abklemmung zeigt.
Die Fig. 4 und 5 erläutern das, Ausformungs- und Verpak- kungsverfahren; die Fig.4 zeigt das Ende der Aus pressvorrichtung während des Auspressens, während Fig. 5 den ausgepressten Knödel vor dem Abklemm- ,vorgang darstellt.
Wie aus. Fig. 1 und 2 ersichtlich, besteht die neue Verpackung aus einer schlauchartigen dehnbaren Folie 1, die vorzugsweise aus Klarsichtfolien, beispielsweise Baumwollcellulosefolien oder Kunststoffolien besteht. An zwei gegenüberstehenden Stellen befinden sich durch Verdrehen -gebildete Abschlussteile 5, die durch Abklemmungen dicht abgeschlossen sind. Die Abklem- mungen können durch Metallklips 3 gebildet sein, aus Abschnürungen bestehen oder eine thermisch versie gelte Stelle 4 (Fig. 3) darstellen.
Die sehr vorteilhafte Verbindung 2 zwischen zwei Einzelabpackungen ist ebenfalls durch Abdrehen aus einem Stück gebildet und an beiden Seiten durch Abklemmungen (3, 4) ge schlossen. Fig. 2 stellt einen Schnitt durch eine derar tige Verbindungsstelle der in. Fig. 1 gezeigten Ausfüh rungsform dar. Die mittlere Packung der Fig. 1 ist im Schnitt gezeigt und der Inhalt mit der Bezugsziffer 6 bezeichnet.
Bei Anwendung einer thermischen Versiegelung nach dem Schweissnaht-Vakuumverfahren befindet sich der Inhalt in einem luftverdünnten Raum, was ebenfalls zur längeren Haltbarkeit beiträgt.
Die Folie kann: unbedruckt oder in fortlaufender Folge mit Firmenaufdrucken oder Herstellungs, und Verwendungshinweisen versehen sein.
Das erfindungsgemässe Verfahren zur gleichzeiti gen Ausformung und Verpackung der Knödel verläuft auf folgende Weise. Die aus einer Portioniereinrichtung kommende fertige Knödehnasse 6 wird durch ein Füll rohr 7 unter überdruck, beispielsweise 20 at, in den ziehharmonikaartig aufgespulten Folienschlauch 8, des, sen Ende mit einem Abschlusstück 5 und Abklemmung 3 geschlossen ist,
eingepresst. Der Schlauch 8 spult sich ab, wird dabei von Hand oder maschinell axial ge dreht und dehnt sich, so dass eine wenigstens annä hernd kugelige Knödelform entsteht. Nach der Füllung werden an den durch Verdrehen gebildeten Verbindun- gen 2 die Abklemmungen 9, beispielsweise durch Metallklips 3, durch Abschnüren oder mittels einer thermischen Versiegelungszange, vorzugsweise beidseits angebracht.
Diese Gestaltung ermöglicht es, dass man einen einzelnen oder beliebig viele Knödel von der Kette trennen kann und die Folie an den Trennstellen geschlossen bleibt.
Durch die erfindungsgemässe Verpackung wird weiterhin: erreicht, dass unmittelbar anschliessend eine thermische Behandlung, beispielsweise eine Blanchie- rung mit heissem Dampf, vorgenommen werden kann, wodurch -eine Keimabtötung, somit eine weitgehende Keimfreiheit erreicht wird und das Aroma konserviert und gereift wird. Andererseits kann hierbei auch eine Vorkochung des Knödels gewünschtenfalls erreicht werden.
Der mit der neuartigen Verpackung praktisch und hygienisch verpackte Knödel, der weder während der Herstellung, noch während der Verpackung, noch während des Verkaufs von Menschenhand berührt wurde, kann bei entsprechender Kühlung praktisch be liebig lange gelagert werden, ohne dass irgendwelche Verunreinigungen von aussen zutreten können.
Der durch die neue Verpackung ermöglichte tech nische Fortschritt erlaubt lange Vertriebswege und lange Lagerfähigkeit und Vorratshaltung. Er -ermög- licht der Hausfrau sogar, dass der in der Klarsichtfolie verpackte Knödel in der Folie in siedendem Wasser heiss gemacht werden kann, ohne dass er ausgelaugt wird, sein Aroma verliert oder zerfällt. Dieser, durch die neuartige Verpackung ermöglichte Vorteil ist sowohl für die Hausfrau wie für die Gastronomie von wesentlicher Bedeutung.
Ein weiterer Vorteil der an der Abbindestelle (Blume) abgeklemmten Packungen besteht darin, dass der Knödel ohne Berührung durch Menschenhand aus der Folie entnommen werden kann. Während eine Hand am abgeklemmten und somit stabilen Ende der Verpackung den Knödel festhält, kann mit der anderen Hand die entgegengesetzte Abbindestelle der Folie mit einem Messer oder einer Schere aufgetrennt werden, worauf sich die Folie mühelos von einem Ende zum anderen aufreissen lässt.
Ein leichter Druck der halten den Hand gegen die Folie drückt den. Knödel vollends aus der Packung.
Die Verpackung ist für Knödel beliebiger Art, bei spielsweise Leberknödel, Kartoffelknödel, Semmelknö- del geeignet. Die Knödel können annähernd kugelig sein oder jede andere haushaltsübliche Form besitzen.
Durch die besonders vorteilhafte Ausführungsform einer kettenförmigen Anordnung der Knödel innerhalb der vorzugsweise durchsichtigen. Folie ergibt sich eine erhebliche Arbeits- und Herstellungsvereinfachung, und es wird erreicht, dass praktisch jede beliebige An zahl von Einzelverpackungen abgeschnitten werden kann, ohne dass der Luftabschluss sowohl der abge trennten Teile als auch der verbliebenen Teile verlo rengeht.

-The novel solution to this problem is based on a dumpling packaging, which consists of a hose-like, stretchable film in a stretched, tensioned, at least unnearer-spherical shape with two end parts formed by twisting, each with a pinch.
It is very advantageous to combine several such individual packs in a chain-like manner. This results in a practical and hygienic shaping and packaging of dumplings, which are neither -touched -by hand -in the production nor -being -during distribution, in .Folien, the individual packs arranged endlessly like a chain and from piece to piece are closed by clamps in the way,
that each dumpling can be separated individually from the rest, with the foil of both the removed and the remaining individual pieces remaining closed.
The method according to the invention for the simultaneous shaping and packaging of dumplings consists in that the portioned raw dumpling mass is pressed through a filling pipe under excess pressure into a wound-up tube made of a stretchable film, the end of which is closed with a clamp, the unwinding Hose piece is axially rotated and stretched, so that an at least approximately spherical dumpling shape is created, whereupon the end part formed by the twisting is clamped off.

The technical progress made possible by the new packaging allows long distribution channels and a long shelf life and inventory. It even enables the housewife to make the dumpling wrapped in the cling film hot in the film in boiling water without it being leached out, losing its aroma or disintegrating. This advantage, made possible by the new packaging, is of essential importance for both housewives and restaurants.
