Procédé pour la préparation de nouveaux aliments pour animaux La présente invention a pour objet un procédé de préparation d'un aliment pour animaux.
Les aliments pour animaux, et en particulier les ali ments pour chiens et chats sont couramment préparés sous deux formes: la ration du type des farines, qui a une basse teneur en humidité. d'une manière typique environ 10 % ; et la ration du type des conserves, qui a une teneur élevée en humidité d'environ 75 0/0.
Les aliments pour animaux du type des farines ont généralement une valeur nutritive et calorifique très élevée, en assurant un régime complet et équilibré pour l'animal, et d'excellentes caractéristiques de conserva tion, ce qui permet l'utilisation de techniques d'embal lage relativement peu coûteuses. Cependant, le goût de nombreux aliments du type sec des farines est médiocre, et souvent l'animal ne veut pas les manger sous une forme sèche, ce qui nécessite l'addition de liquide avant leur consommation.
Les aliments du type des conserves, d'autre part, sont généralement accueillis très favorablement par les ani maux, ce uj@ ësf àppâremiïiënt dû en partie à leur tex ture analogue à celle de la viande, à leur consistance et leur arôme. Cependant. la teneur en humidité de tels pro duits nécessite un traitement thermique dans des réci pients scellés pour obtenir un produit stérile commer cial, ce qui augmente considérablement le prix de revient du produit.
La présente invention a pour objet un procédé de préparation d'un aliment pour animaux, malléable et d'un goût relevé, comprenant la combinaison d'une ma tière carnée, d'autres compléments nutritifs et d'eau, ce procédé étant caractérisé par le fait qu'on mélange une matière carnée, du sucre et au moins un autre com plément nutritif.
ce mélange ayant une teneur en eau supérieure à 15 % et inférieure à 30 % en poids, la quantité de sucre étant supérieure à 15 % par rapport au poids total de l'aliment,
et les quantités respectives d'eau et de sucre étant telles que du sucre soit en disso lution dans l'eau, et en ce que l'on opère, en outre, de façon telle que l'aliment contienne en mélange une ma tière antimycotique, ou soit mis en contact superficielle ment avec une telle matière.
L'aliment obtenu peut être enveloppé d'une manière lâche ou être mis en pastille.
Un avantage de cet aliment est qu'il peut être pré paré avec un pH pratiquement neutre, par exemple com pris entre 6 et 8. Ainsi, le produit a un goût parti culièrement agréable pour les animaux, par exemple les chiens, qui préfèrent une nourriture neutre. Un autre avantage de cet aliment est qu'il peut être emballé dans des matériaux d'emballages relativement peu coûteux et pratiquement imperméable à toute humidité, tels que ceux qu'on utilise pour emballer diverses sortes de viande. le jambon et des tranches de viande. par exem ple, et qu'il peut être emmagasiné sans réfrigération.
La matière carnée peut être constituée de sous-pro duits de viande, de diverses viandes et farines de viandes, de même que de volaille et de sous-produits de volaille ou du poisson et de sous-produits du poisson. Les ex pressions viande , sous-produits de la viande et farines de viande représentent les matières désignées sous ces noms dans les définitions des ingrédients pour nourriture publiées par l'Association of American Feed Control Officials Incorporated. Généralement, la viande qui contribue pour beaucoup à l'arôme et au goût du produit. peut être du boeuf. par exemple des tripes ou des abats.
Le choix de la matière carnée sera dicté par les goûts préférés de l'animal qui doit se nourrir de cet aliment. D'une manière préférée. la teneur en viande sera comprise entre 5 et 35 % du poids total du pro- duit. plus particulièrement entre 25 et 35 0/a, et dans un produit typique,
elle peut être comprise entre 30 et 32 % par exemple. La teneur en eau ou humidité de l'aliment aide à procurer de la plasticité à l'aliment, c'est-à-dire permet à la composition de se laisser facilement déformer sous pression (elle sera façonnée, mélangée, pressée ou mise en moule) et de garder la forme impartie par une telle pression.
Typiquement, la teneur en eau est comprise entre 16 et 17 % et 26 à 27 %. De préférence. elle sera maintenue aux environs de<B>250</B> /o.
Si c'est néces saire, un peu ou la totalité de la teneur en eau désirée peut être fournie par l'addition d'eau ; cependant, la plus souvent, les constituants du mélange tels que les substances carnées, qui peuvent contenir 70 % d'hu- midité, fournissent suffisamment d'humidité lorsqu'on chauffe le mélange pour produire la teneur en humidité requise.
Le sucre est la principale matière soluble dans l'eau, que contient l'aliment. Toutefois, celui-ci peut également renfermer certains sels inorganiques en une quantité compatible avec les exigences du goût. par exemple le chlorure de sodium. Certains composés qui ont une ou plusieurs fonctions. par exemple une fonction anti- mycotique ou une fonction assurant la texture, peuvent aussi être utilisés comme matières solubles dans l'eau pour la protection bactériostatique.
Le propylène-glycol est particulièrement pratique, car il est capable de ser vir en tant qu'inhibiteur de moisissure et d'humectant plastifiant pour la texture, de même qu'il contribue aux matières solubles dans l'eau de la phase aqueuse.
Le sucre peut être choisi parmi les monosaccharides solubles dans l'eau non réducteurs et réducteurs, et les polysaccharides réducteurs et non réducteurs et leurs produits de dégradation, par exemple les pentoses, com prenant les aldopentoses, les méthylpentoses. les céto- pentoses comme le xylose et l'arabinose, un déoxyaldose comme le rhamnose, les hexoses et les polysaccharides réducteurs tels que les aldo hexoses, comme le glucose, le galactose et le mamose,
les céto-hexoses comme le fructose, et le sorbose, les disaccharides comme le lac tose et le maltose, les disaccharides non réducteurs tels que le sucrose et les autres polysaccharides tels que la dextrine et le raffinose ; les amidons hydrolysés qui contiennent comme constituants les oligosaccharides.
Généralement, les sucres, par exemple le sucrose, sont présents dans la solution aqueuse en une quantité telle qu'ils constituent, avec les autres matières solubles dans l'eau, au moins 50 O/ o en poids de la solution, plus particulièrement 55 à 65 0/0.
Il est préférable que le produit contienne 20 à 35 % de sucre. Toutefois, la quantité de sucre peut très bien être supérieure à 35 0/0 et con#.:tuer.la.plus grande partie de la composition ali- mentair- t:.'tale.
La quantité nécessaire de matières solubles. les sucres en particulier, est déterminée également par les critères de plasticité du produit désiré. De nombreuses ma tières solubles dans l'eau. parmi lesquelles le propylènc- glycol et le sorbitol. jouent également un rôle dans la production d'une texture analogue à la viande et mal léable dans le produit.
Ainsi. le propylène;lycol et le sorbiton. employés chacun en quantité de 2 %. plasti- fient suffisamment l'aliment. de sorte que sa teneur en humidité peut être réduite.
La quantité utilisée d'un tel humectant assurant la texture. _neut se situer dans l'inter- valle de 0.5 à 4.0 %.
Dans un mode de mise en #uvre préféré de l'inven tion, le produit comprend une source de protéines végé tales. en particulier un concentré de protéines végétales, en plus de la viande et du sucre. Ce concentré aug- mente la quantité en protéines totale du mélange au niveau nutritif désiré, tandis qu'il contribue simultané ment aux propriétés absorbantes de l'eau et à l'aspect du produit.
Dans les concentrés de protéines végétales,> sont comprises les matières contenues dans les Défi nitions de l'Association of American Feed Control Officials. De préférence, parmi les concentrés de pro téines végétales qui peuvent être employés, on peut citer les flocons de soja (le concentré préféré) et les autres farines de soja déshuilées, de même que les concentrés déshuilés des graines de coton, des arachides, des graines de lin, et des haricots.
Ces substances. en plus de leur contribution à la qualité nutritive du produit et à ses propriétés d'adsorption d'eau et ses propriétés plas tiques améliorent également l'aspect du produit en for mant des zones blanchâtres ayant l'apparence de la graisse qui (examinées par rapport au reste du produit) produisent une apparence très proche de celle du boeuf haché contenant de la graisse naturelle. La quantité de concentré de protéine végétale utilisée peut varier pour produire la valeur nutritive désirée, mais, d'une manière typique, elle sera présente en quantités de 25-40 0/0, par exemple 30 0/0.
Ainsi, une composition préférée comprend 5 à 35 0/0 en poids de substances carnées et 25 à 40 % en poids de source de protéine végétale. Le concentré de protéine végétale peut être avantageusement ajouté sous forme d'un mélange de flocons et de farine, comprenant 20 à 30 0/0. par exemple 20 0/0, de farine de soja et 5 à 10 0/0, par exemple 10 0/0, de flocons de soja.
Dans un mode de mise en #uvre préféré de la pré sente invention, le produit contient<I>25-35</I> 0/0, par exem ple environ 32 0/0, de viande. 20-35 0/0. par exemple en- viron 26 % de sucre, 25-40 010, par exemple environ 35 0/0,
de concentré de protéine végétale et il a une te- neur en humidité de 17-27 %, à savoir 25 % par exem- ple. Dans ce mode de mise en oeuvre, de même que d'une manière générale dans la description. la teneur en eau ou en humidité est exprimée par le pourcentage du poids total humide de produit.
Le mode de mise en #uvre préféré de l'invention peut aussi comprendre un complément de protéines pour équilibrer la ration, d'une manière typique les solides du lait écrémé, qui assurent un complément de protéines suffisant en quantité et en distribution pour élever le niveau total des protéines. de mème qu'ils fournissent certaines protéines qui ne sont pas fournies par d'autres sources.
Le complément de protéines pour équilibrer la ration peut consister en un des produits du lait tels que définis par l'Association of American Feed Control Officials, mais aussi en de la levure telle que définie par cette Association. par exemple de la levure séchée provenant de distillerie. L'usage de tels compléments permet d'ob tenir un aliment ayant la teneur en protéines désirée ct l'équilibre requis pour une alimentation adéquate. Dzc préférence, ce complément de protéines pour équilibrer la ration constitue jusqu'à environ 5 0%o de la compo sition.
L'antimycotique peut être l'acide sorbique ou un sorbate tel que le sorbate de potassium. Ces agents peu vent être utilisés. soit séparément ou en combinaison.

La manière d'incorporer l'antimycotique dans la composition n'est pas imposée.
Certains antimycotiques seront incorporés aux ingrédients en cours de traitement pour former un aliment pour animaux, tandis que d'autres peuvent être simplement pulvérisés ou mis en contact d'une autre manière avec la surface de l'aliment, et d'autres en core peuvent être appliqués à la surface de l'emballage qui est en contact avec la nourriture.
On peut pulvériser le sorbate de potassium en solu tion dans l'eau sur la surface de l'aliment pour ani maux ou on peut immerger l'aliment dans cette solu tion. D'autres antimycotiques se prêtent par eux-mêmes à cette application en surface comme les esters des parabènes (para-hydroxybenzoate) tels que les propyl- et méthylparabènes (propyl- et méthyl-para-hydroxyben- zoate de méthyle).
On peut revêtir par pulvérisation la pellicule cellulosique ou matériau d'emballage pour ali ments avec une solution d'acide sorbique, mais on préfère l'imprégnation ou la pulvérisation avec l'acide sorbique ou le sorbate de potassium.
Les antimyco- tiques que l'on peut en général utiliser sont l'acide ben zoïque, les benzoates de sodium, l'acide propionique. le propionate de sodium et de calcium. l'acide sor- bique. le sorbate de potassium et de calcium, le pro pylène-glycol et les pyrocarbonates de diéthyle.
Comme nous l'avons déjà dit ci-dessus, l'aliment pour animaux peut contenir un agent de texture hydrophile, expression qui désigne une vaste classe de substances susceptibles de modifier la tendance des so lides dissous contenus dans le produit et les substances hydratées de la gangue à provoquer une altération de la texture du produit. Parmi les divers agents de tex ture utilisables, on peut mentionner les humectants tels que le sorbitol. le propylène-glycol et les substances polyhydriques analogues qui sont de nature hydrophile.
D'autres agents de texture que l'on peut employer sont les sucres tels que le sucre inverti qui contient le dex trose et le lévulose. de même que la maltose et les solides de sirop de maïs, qui sont eux-mêmes difficile ment cristallisables et qui agissent dans la solution con tenant des grandes quantités d'autres sucres tels que le sucrose. de façon à retarder ou à contrôler la cristalli sation. On peut également utiliser pour maintenir un état plastique humide désirable dans la composition.
c'est-à-dire un état qui comporte plus de 15 ,/u et moins de 30 u/o d'humidité. la classe des agents émulsifiants hydrophiles-lipophiles qui sont par exemple les esters partiels des polyols et des acides gras supérieurs tels que les mono- et di-esters de glycérine et de propylène- ,glycol avec les acides gras saturés et non saturés tels que l'acide stéarique et l'acide palmitique, lesdits émul sifiants comme on l'a observé retenant é;alement l'humi dité dans le produit à un degré qui élimine pratique- nient la tendance du produit â subir un changement de texture.

L'arôme peut constituer jusqu'à 2-3 0.-'o en poids du produit. et les agents de nutrition et le colorant au total s'élèvent à environ 1 0/n ou moins.
Dans une mise en #uvre particulière de l'invention, on chauffe la matière carnée pour en libérer l'humidité et ensuite on ajoute du sucre en poudre qui est dissous dans l'humidité libérée. On continue le chauffaze à une température suffisamment élevée et pendant un temps qui pasteurise au moins les particules de viandes. En suite, on peut ajouter les autres ingrédients majeurs non carnés. par exemple les sources de protéines végétales (concentrés). On peut ensuite chauffer ce mélange à une température d'au moins 71,1 C et de préférence à une température qui n'est pas supérieure à 1210 C pendant une période suffisante pour amener la phase aqueuse libre à être absorbée préférentiellement par le concentré de protéines végétales.
Cette absorption sert à rendre l'aliment composite pour animaux moins col lant et plus facile à manipuler pour un traitement ul térieur tel que l'extrusion. la mise en pastilles ou une autre opération de mise en forme. Le degré d'absorp tion dépendra de la nature du concentré de protéines végétales, mais dans tous les cas, la cuisson devrait être effectuée pendant une durée qui étend cette absorption à son degré maximum (en général moins de 15 mi nutes). Dans la plupart des cas, le concentré de pro téines végétales absorbe au cours de cette période pra tiquement toute la phase aqueuse qu'il est capable d'absorber.
La période minimale nécessaire pour cette cuisson est dictée par la température à laquelle on cuit le mélange et le degré d'absorption de la phase aqueuse nécessaire pour rendre le mélange aisé à manipuler. Pendant cette cuisson. le concentré de protéines végé tales subit également jusqu'à un certain degré la pas teurisation et il absorbe suffisamment de sucres en so lution pour offrir une protection bactériostatique au concentré de protéines végétales et aux autres substances présentes.
D'autre part, cette période de cuisson ne doit pas être trop prolongée pour ne pas provoquer la formation de précurseurs de brunissement qui peu vent aggraver le développement d'une réaction de bru- nissement et qui. par suite, donne naissance à un assombrissement prématuré du produit. C'est pourquoi, en général, cette cuisson ne doit pas être prolongée et, en général, elle est inférieure à 15 minutes.
Dans la mise en aeuvre d'un mode préféré de la présente invention, on pasteurise la viande en combi naison avec un émulsifiant et tous les ingrédients li quides, tels que le suif. à une température d'environ S? à 102 C. par exemple de préférence 100 C pendant environ 5 à 15 minutes. par exemple, 10 minutes. Après la fin de la pasteurisation, on peut alors ajouter les colorants, l'ai=ent antimycotique. le produit retardant la cristallisation, les arômes et les agents de nutrition.
Immédiatement après. on ajoute tous les ingrédients secs restants tels que les flocons de soja. les cosses de soja. la farine d'os. le lait écrémé ,,ce ci la sucre en une seule charge. La température de la masse totale. par suite de l'addition clé ces ingrédients secs, tombe à environ b0 C. On peut ensuite taire cuire le produit à une tem pérature de préférence supérieure à 77"<B>C</B> et typique ment de 82 à 93-' C, par exemple 85 C pendant 5 à 10 minutes, par exemple 7 minutes.
A lit fin de cette cuisson finale. on peut refroidir le produit à une tem- prature d'environ 15,6 à 26,7 C, par exemple 21,11, C. Dans la mise en oeuvre d'un autre mode opératoire de la présente méthode, on pasteurise le composant de viande de la charge à une température d'environ 82 1000 C, à savoir 930 C, pendant environ 5 à 15 minutes, par exemple 10 minutes, afin de produire une viande liquéfiée.
A ce mélange, qui est de préférence main tenu aux environs de la température de pasteurisation, on ajoute les arômes, les agents de nutrition, les colo rants, l'agent ou les agents de texture et un agent anti- mycotique. On peut ajouter ensuite la protéine végé tale à la bouillie tandis qu'on la maintient à une tem pérature suffisamment élevée pour effectuer la géla- tinisation de l'amidon dans la protéine végétale, de préférence au-dessus de 66 C, et typiquement à 66 710 C, pendant 5 à 10 minutes.
On ajoute ensuite nu mélange le sucre et les agents destinés à équilibrer les protéines tandis qu'on le maintient à une température élevée de 82-1040 C, par exemple 930 C, pendant environ 5 à 10. minutes.
Le mélange obtenu comme décrit ci-dessus, ayant une uniformité de texture, peut alors être empaqueté conformément au mode opératoire d'empaquetage cou rant, et la caractéristique d'empaquetage de ce mélange dans un matériau d'empaquetage ordinaire imperméable à l'humidité, sans la nécessité d'une stérilisation, consti tue un avantage supplémentaire de la présente inven tion.
De préférence, on met le produit en forme de pâtés cylindriques d'environ 8,9 cm de diamètre et d'environ 1,9 cm d'épaisseur ayant chacun un poids d'environ 85g. Le mode opératoire préféré pour former ces pâtés consiste en l'extrusion du mélange fini à des pressions faibles et à une température suffisamment basse pour empêcher le mélange de coller, sous forme de petits cylindres, ayant typiquement 0,32 à 0,62 cm de dia mètre, plus couramment 0,48 cm et ayant une longueur de 0,63 cm à 2,5 cm, plus couramment 1,3 cm. On peut effectuer cette extrusion dans les appareils d'ex trusion courants. On peut ensuite mouler des cylindres ainsi extrudés sous faible pression en pâtés cylindriques désirés analogues au hachis de viandes.
Ainsi, l'aliment pour animaux est emballé à une température inférieure à celle de pasteurisation de la viande.
Le produit ainsi préparé est caractérisé généralement par un aspect, une couleur, une consistance, une tex ture tout à fait analogues à celles de la viande et une aptitude à la manipulation en général. Lorsqu'on le mâche, il présente une texture mâchée analogue à celle de la vianc--. Il est particulièrement caractérisé par sa durée de c:-nservation prolongée. Généralement, on peut le conserver pendant de longues périodes (six mois ou davantagè) sans dommage, dans un emballage lâche im perméable à l'humidité.
La densité du produit dépend de la technique de fabrication y compris le degré de pression utilisé pour former les pâtés. D'une manière typique. la densité est de 720-110 kg/c,, et plus couramment environ 800 kg/ cm@>. Il est apparent que la densité globale du produit puisse être contrôlée si on le désire.
Le produit obtenu est normalement aussi agréable au goût (c'est-à-dire bien toléré par les animaux) qu'un aliment pour animaux en conserve équivalent et géré : iement a meilleur goirt que des aliments courants à =crieur en humidité faible. Avec un choix approprié d'in<B>-</B> ërédients, deux pâtés de 85 g du produit de l'invention pont égaux du point de vue de la valeur nutritive à une boîte de 453 g d'un aliment pour animaux de ration or dinaire.

On effectue bien le mélange du produit et ensuite on l'extrude à faible température avec une extrudeuse Enterprise à faible pression, ayant un diamètre de base de forme ronde de 0,48 cm. On coupe le cylindre ex trudé en pièces de 1,3 cm de long environ et on met ensuite en forme les longueurs par une faible pression en obtenant des pâtés de 85 g ayant un diamètre de 8,9 cm et une épaisseur de 1,9 cm.
Les pâtés ainsi préparés ont une teneur en humidité d'au moins 25 %, un pH de 6,8, une teneur en pro- téines d'environ 22 0/0, et une mesure bien équilibrée en autres ingrédients nutritifs désirés. Le produit a un goût agréable très prononcé et il a une durée de conservation prolongée même en l'absence de réfrigération.

On roule cette pâte en feuilles d'environ 6.35 mm d'épaisseur et ensuite on la découpe en morceaux de dimensions importantes en forme de poissons. Les mor ceaux ont la couleur du saumon. On peut extruder la pâte à travers un orifice en forme de poissons dans un appareil à extrusion. Le produit se laisse extruder d'une manière uniforme et peut être découpé en tranches d'une manière continue par un découpeur tournant en morceaux en forme de poissons désirés.
Le produit final a une teneur en humidité de 25 % et on peut l'empaqueter d'une manière lâche dans toute enveloppe ou tout autre récipient non hermétique sans qu'il su bisse de détérioration microbiologique après une con servation pendant six mois à température ambiante.
