Oven for recycling combustion gases for cooking food products, in particular bread The present invention relates to an oven for recycling combustion gases for cooking food products, in particular bread, comprising at least one baking chamber extending longitudinally in the furnace and adjacent to channels for the circulation of combustion gases from a hearth,
these channels forming a loop-shaped heating circuit, and at least one fan, the flow rate of which is greater than that of the hearth and which recycles the gases in this circuit before their exhaust through a chimney.
The furnace according to the invention is characterized in that the heating circuit in the form of a loop is arranged so that the gases circulate transversely in the furnace and in that said fan has an axial flow and is placed in the heating circuit. so as to propel the gases transversely in the furnace.
The appended drawing represents, by way of example, an embodiment and a variant of the furnace which is the subject of the invention.
Fig. 1 is a cross section of the oven. Fig. 2 is a longitudinal section of the furnace, along line 2-2 of FIG. 1.
Fig. 3 is a detail view, on a larger scale.
Fig. 3a is a section taken along line 3a-3a of FIG. 3.
Figs. 4 and 4a are views similar to FIGS. 3 and 3a representing a variant.
Fig. 5 is a detail view, on a larger scale.
The oven shown comprises two baking chambers <I> a </I> and <I> a ', </I> placed in the direction of the length of the oven. These baking chambers, of rectangular cross section, and opening onto the front face C1 of the oven, are formed by sheet metal boxes housed in an inner shell <I> b, </I> also made of sheet metal.
The envelope <I> b </I> is placed in an external envelope c and the space d between the envelopes b and c is filled with an insulating material.
The casing of the upper cooking chamber is spaced from the upper wall b1 of the inner casing, the interval between these walls. constituting a horizontal channel connecting the upper ends of two vertical collectors f and g limited between the lateral walls of the boxes and the lateral walls b2 and b3 of the envelope b.
The col readers f and g are also connected: by horizontal channels e1 and e2 formed between the boxes, on either side of a partition wall S, and by a channel ez formed between the base wall : of the lower box and a horizontal baffle Sl.
The collectors f and g, and the channels el, e1, e2 and e. extend over the entire length of the cooking chambers <I> a </I> and cl, and two axial fans <I> h </I> and <I> h ', </I> arranged transversely in the oven, are placed directly in a loop-shaped heating circuit made up of the collectors f and g, the channels e1,
e1, e2 and ez contiguous to the cooking chambers, and a lower return channel e3 established at the base of the collectors and whose width is also equal to the length of the cooking chambers.
In channel e3, is placed a cylindrical combustion chamber i, arranged along the longitudinal axis of the furnace, a burner k, with liquid or gaseous fuel,
placed at the front end of this chamber giving a flame extending axially in the anterior part of this chamber which constitutes the hearth of the furnace.
Between the cylindrical wall of the combustion chamber i and the upper and lower walls of the channel es, there are passages e3 and e3 ", for the circulation of gases looping the heating circuit.
The combustion gases produced by the burner <I> k </I> leave the combustion chamber <I> i </I> through an exhaust port l located at the rear end of this chamber, and enter , at the bottom of the oven, in the transverse heating circuit.
The gases emerge from this transverse circuit through a chimney j, the entrance to which is constituted by a light j (FIG. 1) opening into the front wall Cl.
The combustion gases thus first of all travel longitudinally through the combustion chamber <I> i, </I> to exit the latter through the orifice <I> 1, </I> before circulating in circles in the looped heating circuit under the action of the <I> h </I> and <I> le, </I> recycling fans, sweeping the outer wall of the cooking chambers and the combustion chamber at each turn .
The gases emerge from the heating circuit through the light j to finally escape through the chimney, the circulation of the gases thus taking place in the heating circuit along a generally helical path, from the quarry end to the end. moth before the oven.
The fans <I> h </I> and <I> h '</I> are located near the combustion chamber i so as to repress the gases on the outer wall of the latter. The orifice 1 of the combustion chamber is arranged on the downstream side of said slum chamber as the fans are upstream of the latter.
After having swept the combustion chamber i and entrained new combustion gases leaving the latter, the recycled gases sweep the steam tubes rn. These tubes, into which water is injected, serve to produce steam directed by ducts (not shown) in the cooking chambers,
in order to humidify the atmosphere.
Cleaning doors n allow the complete sweeping of the horizontal channels while cleaning doors p placed at the front and rear of the oven allow the low points of the heating circuit to be swept.
The horizontal channels e1, ei, e., E2 are fitted at their exit with control flaps q, with multiple wings, controlled by rods r. These flaps make it possible to adjust the heating of the di verses at will.
If no independent adjustment is desired between the vault of the lower chamber and the sole of the upper chamber, the separation S.
The transverse heating circuit described allows to have a very low pressure drop even for a very high flow rate, which makes it possible to use fans of the helical type <I> h, h ', </I> (with flow - axially), which are placed directly in the heating circuit without increasing the overall dimensions of the furnace and without resorting to auxiliary ducts. The proposed arrangement avoids the use of a centrifugal fan, bulky and poorly suited to high flow rates.
The tubular combustion chamber i can easily be fitted with a grid t, as shown in the variant illustrated in FIGS. 4 and 4a, to burn solid fuels. The burner k is then eliminated and a door n provided with an adjustable opening v for the entry of air is fitted.
As the fans <I> h </I> and <I> h '</I> are subjected to high temperatures, a device for cooling their bearings is provided, which is shown in fig. 5. The fins x integral with the shaft y of the fan, suck in fresh air entering at w then cooling an anterior bearing z before cooling a posterior bearing a, to finally come out under the action of fins. radial [3 acting as a centrifugal fan.
