Verfahren zur Herstellung von Milchprodukten Die Erfindung betrifft ein Verfahren zur Herstellung von Sauermilchprodukten.
Es ist bekannt, dass auf der Darmschleimhaut und anderen Schleimhäuten verschiedene Bakterien in einer harmonischen Gemeinschaft miteinander leben. Sie sind Träger wichtiger Funktionen im Interesse der Gesundheit ihres Wirtes. Die Harmonie dieser für Mensch und Tier wichtigen Bakterienflora kann durch verschiedene Ursachen, insbesondere auch durch bakterienhaltige Nahrungsmittel, wie z. B. die Sauermilch (Buttermilch, Yoghurt usw.) gestört werden, wenn die Stoffwechselprodukte der darin enthaltenen Bakterien eine gegen die physiologischen Normalbakterien gerichtete Wirkung (Antagonismus, Antibiose) ausüben.
Das erfindungsgemässe Verfahren ist dadurch gekennzeichnet, dass man der Milch eine Kultur eines Stammes von Lactobacillus acidophilus, welcher gegen Galle, Indol, Skatol, Phenol resistent ist, die Fähigkeit hat, Maltose zu vergären und positive Anfärbbarkeit nach Gram aufweist, zusetzt.
Nach ihrem Verhalten gegenüber den Zuckerarten Dextrose, Lactose, Saccharose, Raffinose und Maltose werden 4 Acidophilus-Typen unterschieden: Typ A vergärt alle genannten Zuckerarten, Typ B lässt Raffinose, Typ C Raffinose und Lactose und Typ D Raffinose, Lactose und Saccharose unver- ändert (vgl. Klinische Darmbakteriologie der ärztlichen Praxis , Stuttgart 1954).
Die erfindungsgemäss hergestellten Milchprodukte passen sich den im menschlichen Darm herrschenden Verhältnissen an und fördern somit die Symbiose der Darmbakterien untereinander und mit der Schleimhaut. Dies wird erreicht, indem die Stoffwechselprodukte (Metabolite) der erfindungsgemässen Sauer- milch zu den normalen, physiologischen Darmbakterien nicht in einem antibiotischen, sondern in einem symbiotischen Verhältnis stehen. Das ist in erster Linie bei denjenigen Milchsäurehakterien der Fall, die in physiologischer Beziehung zu den Darmbakterien gehören.
Ein solcher Keim ist zum Beispiel Thermobact. intestinale (Synonym: Acidophilus, Moro-Bazillen). Dieser Keim ist bereits verschiedentlich zur Herstellung von Sauermilch empfohlen und auch verwendet worden. Er hat jedoch die Eigenschaft, sich der Milch sehr schnell anzupassen und sich biologisch weitgehend zu verändern, so dass man von der Milchvariante des Acidophilus spricht. Diese Variante passt sich der im Darm bestehenden Bakteriensymbiose nicht mehr an. Sie wird ausserdem von anderen Bakterien leicht überwuchert.
Das bedeutet für die Sauermilchherstellung grösste technische Schwierigkeiten: die Milch muss vorher autoklaviert werden und die Dicklegung (Gelierung) dauert 12 bis 24 Stunden. Ausserdem kann sich dieser Keim nach Verlust seiner Resistenz gegen Galle, Phenol, Indol usw. auch der im Darm bestehenden Bakteriensymbiose nicht mehr anpassen.
Aus diesem Grunde müssen z. B. die aus. der Darmschleimhaut herausgezüchteten Typen. A, B, C, D der Acidophilus-Bakterien so fortgezüchtet werden, dass sie die charakteristischen Eigenschaften der Darmvariante (Maltose-Vergärung, Resistenz gegen Indol, Skatol, Phenol und gallensaure Salze, sowie Anfärbbarkeit nach Gram) beibehalten. Nur so ist die Gewähr gegeben, dass sie sich der Darmsymbiose einfügen.
Die Fortzüchtung der ausgewählten Darmvarian- ten der Acidophilu.s-Typen A, B; C, D erfolgt vor- zugsweise in einem Milchnährboden, dem ansteigende Mengen .der oben genannten aromatischen Substau

zen (Phenol, Indol usw.) oder/und Galle zugesetzt worden sind,
um die Resistenz dieser Keime auch in der Milch zu erhalten und den Umschlag in die Milchvariante zu verhindern.
Die Verwendung der nach den genannten Gesichtspunkten ausgewählten und fortgezüchteten Bakterien als Säurewecker bietet folgende Vorteile: a) die ursprünglichen biologischen Eigenschaften dieser Bakterien, insbesondere ihre Resistenz bleiben erhalten, b) eine Autoklavierung der zur Sauern-flIchher- stellung zu verwendenden Milch ist überflüssig, c) schnellere Dicklegung (Gel'ierung) der Milch, d) gleichbleibendes P'rod'ukt, auch im Grossbetrieb.
Als besonders vorteilhaft hat sich erwiesen, frisch gezüchtete Darmvarianten des Thermobacterium in- testinale (LactobacMus acid'ophilus) und Bacterium bifidum (Lactobacillus bifidus) einzeln oder gemeinsam in Symbiose mit einem oder mehreren der nachstehenden Stämme zu verwenden:
a) bestimmte Streptokokken, insbesondere solchen aus Taette (finnische Zäh- oder Langmilch), b) Milchzucker- oder Torulopsishefen und/oder Oospora-Rassen, c) Propionsäurebakterien.
Wie ferner gefunden wurde, lässt sich die erstrebte Funktion der Bakteriensymbiosen auf der Darmschleimhaut, ihre Entwicklung und biologische Wirksamkeit noch weiterhin, fördern durch Zusatz von Spurenelementen, z. B. Kobaltchlorid, Vitaminen und Wuchsstoffen.
Beispiel 1 Aus der Darmschleimhaut werden auf Spezialböden (z. B. Blutagar oder Tomatenagar ), auf denen mit Streptomycin oder ;mit einem polyvalenten Coh- Bakteriophagen, das Coli-Wachstum gehemmt wird, Acidophilus-Stämme der Typen A, B ,C, D gezüchtet und auf ihre biologischen Eigenschaften geprüft. Diejenigen Stämme, die ddlie oben genannten Eigen- schaften aufzuweisen haben, werden weiterhin. auf ihr Verhalten dem Coli gegenüber,
dessen erwünschte Rassen auf keinen Fall geschädigt werden, dürfen, geprüft. Auf diese Weise werden diejenigen Stämme ausgewählt, die sich den im. Darm physiologischerweise herrschenden bakteriellen Verhältnissen störungsfrei einfügen können. Die so ausgewählten Stämme werden in üblicher Weise zur Herstellung von Sauermilchprodukten verwendet.
Beispiel 2 Die nach dem in Beispiel 1 beschriebenen Verfahren ausgesonderten; Acidophilus-Stämme werden einzeln: oder zusammen weitergezüchtet, und zwar in Milchkulturen, die steigende Mengen von Galle oder/und aromatischen Verbindungen (z. B. Phenol) enthalten. Auf-diese Weis!efortgezüehtete Ac;idopm.1us- Stämme, behauten auch bei: andauernder Fortzüchtung in Milch die biologischen Eigenschaften der Darmvariante bei.
Beispiel 3 Die Typen A, B, C, D der Darmvariante des Acidophilus werden mit dem Streptococcus lactis varie.tas Taette zu einer symbiotischen Kultur vereinigt. Mit Hilfe einer Zuimpfung von Geotrichum candidum wird die Anpassung der beiden genannten Keimarten aneinander ermöglicht und beschleunigt.
Nach 3 bis 4 Überimpfungen des Kulturgemisches verliert sich Geotrichum wieder aus der Acidophilus- Taette-Kul2ur. Das zahlenmässige Verhältnis der Aci- dophilus-Laktobazil'len zu den Taette-Streptokokken soll in der Milch 1 : 1 betragen. Diese Symbiose bietet den Vorteil, dass die Dicklegung der Milch nach längstens 90 Minuten beendet ist und keine Nachsäuerung des fertigen Milchproduktes eintritt.
Beispiel 4 Zu der Symbiose Acidophilus mit Taette werden Hefen (Milchzucker- und Torulopsis-Hefe) zuge- impft, auch kombiniert mit Oospora (die ebenfalls aus Taette stammt). Diese Zuimpfung bietet den Vorteil, dass zusätzlich Vitamine, insbesondere solche des B-Komplexes gebildet werden und, der Geschmack infolge Alkohol- und.\ CO.-Bildung beeinflusst werden kann.
Durch Torulopsis oder Oospora kann des weiteren eine Verlängerung der Haltbarkeit der Kulturen bis zu 4 Monaten erreicht werden, und zwar einerseits durch das Neutralisierungsvermögen derselben (Veratmung des Milchzuckers oder durch Beiprodukte der Proteolyse), anderseits durch Bildung von Wuchsstoffen für den Acidophil:us.
Beispiel S Zu der Symbiose Acidophi.lus mit Taette werden Propionsäurebakterien zugeimpft. Das führt dazu, dass in der Milch gebundenes Vitamin B 12 freigelegt und damit für die Laktobazillen freigemacht wird. Durch Zusatz von Spuren Kobaltchlorids wird die Bildung von weiterem Vitamin B 12 erreicht. Der Schleim des Taette-Streptococcus, der hauptsächlich aus Proteinen besteht, bindet einen Teil des Vitamin B 12 so ab, dass es erst auf der Darmschleimhaut wieder verfügbar wird.
Beispiel 6 Lactobacillus bifid'us wird in Kuhmilch in Symbiose mit dem Propionsäurcbakterium gezüchtet, wobei letzteres die Entwicklung sowohl durch Freilegung von Vitamin B 12 wie auch durch Bildung von Bifidus-faktor-ähnlichen Substanzen beschleunigt bzw. überhaupt erst ermöglicht.
Die Bebrütungstemperatur beträgt 38 C.
In allen Fällen erfolgt die Herstellung der Sauermilchprodukte in der jedem Fachmann geläufigen üblichen Weise.

The method according to the invention is characterized in that a culture of a strain of Lactobacillus acidophilus, which is resistant to bile, indole, skatole, phenol, has the ability to ferment maltose and has positive colorability according to Gram, is added to the milk.
According to their behavior towards the sugars dextrose, lactose, sucrose, raffinose and maltose, a distinction is made between 4 types of acidophilus: Type A ferments all types of sugar, type B leaves raffinose, type C raffinose and lactose and type D raffinose, lactose and sucrose unchanged (cf. clinical intestinal bacteriology of the medical practice, Stuttgart 1954).
The milk products produced according to the invention adapt to the conditions prevailing in the human intestine and thus promote the symbiosis of the intestinal bacteria with one another and with the mucous membrane. This is achieved in that the metabolites (metabolites) of the sour milk according to the invention are not in an antibiotic but in a symbiotic relationship with the normal, physiological intestinal bacteria. This is primarily the case with those lactic acid bacteria which physiologically belong to the intestinal bacteria.
Such a germ is, for example, Thermobact. intestinal (synonym: acidophilus, Moro bacilli). This germ has already been recommended and used several times for the production of sour milk. However, it has the property of adapting to the milk very quickly and largely changing biologically, so that one speaks of the milk variant of Acidophilus. The use of the bacteria selected and cultured according to the criteria mentioned as acid starters offers the following advantages: a) the original biological properties of these bacteria, in particular their resistance, are retained, b) autoclaving of the milk to be used for acidification is superfluous, c ) faster coagulation (gelation) of the milk, d) consistent product, even in large farms.
It has proven to be particularly advantageous to use freshly bred intestinal variants of Thermobacterium intestinale (LactobacMus acid'ophilus) and Bacterium bifidum (Lactobacillus bifidus) individually or together in symbiosis with one or more of the following strains:
a) certain streptococci, in particular those from Taette (Finnish thick or long milk), b) lactose or torulopsis yeasts and / or Oospora races, c) propionic acid bacteria.
As has also been found, the desired function of the bacterial symbiosis on the intestinal mucosa, their development and biological effectiveness can still be promoted by adding trace elements, e.g. B. cobalt chloride, vitamins and growth substances.

The numerical ratio of Acidophilus lactobacilli to Taette streptococci should be 1: 1 in milk. This symbiosis offers the advantage that the curdling of the milk ends after a maximum of 90 minutes and the finished milk product does not become acidic.
Example 4 Yeasts (lactose yeast and torulopsis yeast) are inoculated into the symbiosis acidophilus with Taette, also combined with Oospora (which also comes from Taette). This inoculation offers the advantage that vitamins, in particular those of the B complex, are also formed and the taste can be influenced as a result of the formation of alcohol and CO.
Torulopsis or Oospora can also extend the shelf life of the cultures up to 4 months, on the one hand through their neutralizing capacity (respiration of lactose or by products of proteolysis), on the other hand through the formation of growth substances for the acidophil: us.
Example S Propionic acid bacteria are inoculated into the acidophilus symbiosis with Taette. This leads to the fact that the vitamin B 12 bound in the milk is released and thus made free for the lactobacilli. By adding traces of cobalt chloride, the formation of additional vitamin B 12 is achieved. The mucus of the Taette Streptococcus, which consists mainly of proteins, binds part of the vitamin B 12 so that it is only available again on the intestinal mucosa.
Example 6 Lactobacillus bifid'us is grown in cow's milk in symbiosis with the propionic acid bacterium, the latter accelerating or even enabling development both by exposing vitamin B 12 and by forming substances similar to bifidus factors.
The incubation temperature is 38 C.
In all cases, the sour milk products are prepared in the customary manner familiar to any person skilled in the art.
