Procédé de déshydratation d'un produit liquide et installation pour sa mise en aeuvre Il existe actuellement divers procédés pour concentrer et réduire en poudre des produits tels que du lait, des jus de fruits, liquides thérapeutiques et autres liquides de tous, genres.
Les procédés consistant à évaporer l'eau du produit par chauffage sur tambours à l'air libre ou dans des bouilleurs, présentent de multiples inconvénients dont les principaux sont une oxydation de certains éléments du produit en traitement et la destruction d'une grande partie des éléments nutritifs, thérapeutiques ou des éléments les plus importants, et utiles de ces produits.
En conséquence, le produit concentré ou sec ne présente plus les qualités et propriétés nutritives ou thérapeutiques du produit naturel, et de plus, lorsqu'il s'agit de boissons, le produit réhydraté présente souvent des faux goûts.
Un autre procédé très utilisé aujourd'hui consiste à évaporer l'eau du produit en la chauffant à 65 C sous vide. Ce procédé permet d'obtenir de meilleurs résultats et en particulier de conserver au produit toute sa valeur de manière que le produit réhydraté présente la même valeur nutritive, 1e même facteur vital ou la même valeur thérapeutique que le produit naturel. Toutefois, ce traitement est onéreux d'une part, et d'autre part ne permet pas un séchage continu.
Il est en effet nécessaire de placer le produit à traiter dans de grandes cuves fermées hermétiquement, et de chauffer celles-ci en maintenant un vide d'environ 0,2 atm. Un traitement continu n'est donc pas possible, et de plus il se produit une sédimentation au cours du traitement qui oblige à broyer et à remélanger le résidu restant après traitement dans le fond de la cuve.
La présente invention a pour objet un procédé de déshydratation qui obvie aux inconvénients cités par le fait qu'on injecte dans une enceinte fermée le produit liquide sous forme de filets, qu'on soumet ces filets liquides, à l'action de rayons. infrarouges, et évacue de manière continue d'une part la vapeur dégagée, et d'autre part le produit traité.
L'invention a également pour objet une installation pour la mise en oeuvre du procédé, qui se caractérise par le fait qu'elle comporte au moins une, en ceinte dont l'espace intérieur est soumis à l'action de rayons infra-rouges, au moins un dispositif d'injection du liquide à traiter, disposé dans la partie supérieure de l'enceinte et formant des filets de liquide, au moins une pompe aspirant la vapeur dégagée et un dispositif d'évacuation du produit traité.
La figure unique du dessin annexé illustre schématiquement et à titre d'exemple une forme d'exécution de l'installation pour la mise en oeuvre du procédé.
L'installation représentée comporte une cuve 1 contenant le liquide naturel N à traiter. Ce liquide est aspiré par une pompe 2 et refoulé à travers un appareil 3 de stérilisation ou de pasteurisation de type connu. Cet appareil 3 est relié par une conduite 4 traversant la paroi d'une enceinte 5, à un anneau tubulaire 6 disposé dans la partie supérieure de l'enceinte 5.
La paroi inférieure de cet anneau tubulaire présente des perforations par lesquelles s'échappe le liquide refoulé par la pompe 2. Le liquide s'écoule sous forme de filets 7 qui tombent verticalement, par gravité, sur le fond de l'enceinte 5.
Cette enceinte 5 de forme générale tubulaire et fermée à ses deux extrémités, est en un matériau, tel que le quartz, perméable aux rayons infrarouges. Des générateurs de rayons infrarouges Gi, Gz, G3 entourent la paroi externe de l'enceinte 5.
Ces générateurs, constitués dans l'exemple représenté, par des corps. de chauffe électriques, peuvent être de tout type connu.

Des pompes aspirantes Pi, P2, Ps, P4 rejettent vers l'extérieur, les vapeurs dégagées et maintiennent à l'intérieur de l'enceinte 5 une pression inférieure à la pression atmosphérique.
Une pompe 10 aspire le produit tombé sur le fond de l'enceinte 5 et le refoule par une conduite 11 dans une seconde enceinte 12. Cette seconde enceinte 12 dë forme générale tubulaire est également en un matériau, tel que le quartz, perméable aux rayons infrarouges. De plus, cette enceinte est également équipée de générateurs de rayons infrarouges G4, Gs;
Gs et de pompes P5, Po, P7, P8. Le liquide .en traitement est ici encore injecté dans Pen- cein.te sous forme de filets 20 au moyen d'un anneau tubulaire 13 dont la paroi inférieure est munie de perforations.
Cette seconde enceinte 12 est toutefois encore munie d'un dispositif d'évacuation du produit sec. Ce dispositif comporte un canal 14 muni d'une vis transporteuse 15 entraînée par un moteur M. Ce canal 14 comporte des dérivations 16 munies chacune d'une vanne d'arrêt 17. L'extrémité de chaque dérivation est munie d'un dispositif de liaison étanche 18 permettant de brancher une bouteille 19 à remplir.
De tels, dispositifs de liaison étanche, comportant par exemple un accouplement à baïonnette, sont connus -et utilisés depuis de très longues années. Une bouteille de réserve 22 contenant un gaz neutre sous pression est reliée par l'intermédiaire d'un détendeur D et de conduites 23 munies de vannes d'arrêt 24,à chaque dérivation 16.
Le fonctionnement de l'installation décrite est le suivant Le produit naturel N, aspiré par la pompe, est refoulé à travers l'appareil 3 où il est tout d'abord pasteurisé ou stérilisé, selon les besoins,, afin de permettre sa conservation. Puis ce produit est injecté sous forme de filets liquides dans la première enceinte 5.
Ces filets liquides 7 sont alors soumis à l'action des rayons infrarouges qui provoquent une évaporation progressive de l'eau qu'ils contiennent. La longueur d'onde de ces rayons est choisie entre 13 000 et 26 000 Angstrôm. Les pompes Pi à P., dont les tubulures d'aspiration s'ouvrent à l'intérieur de l'enceinte à différentes hauteurs de celle-ci,
évacuent de manière permanente les vapeurs dégagées et maintiennent une pression inférieure à la pression atmosphérique, de manière que les filets liquides tombent verticalement et restent rectilignes. En outre, en réduisant la pression à 0,2 atm, on obtient une évaporation intense de l'eau pour une température de 65 C déjà, ce qui permet d'éviter une détérioration des substances de valeur, sensibles à la chaleur.
Le produit concentré récolté dans la partie inférieure de l'enceinte 5 est réduit à environ un cinquième du volume du produit naturel. S'il s'agit de lait par exemple, qui, à l'état naturel contient environ 90 fl/o d'eau, le lait condensé récolté sur le fond de l'enceinte 5 contient encore environ 10 Q/o d'eau. Ce lait condensé liquide est refoulé par la pompe 10 dans l'enceinte 12.

Le produit sec en poudre est alors évacué à travers le canal 14 par la vis transporteuse et tombe dans les bouteilles 19. Ces bouteilles, reliées aux dérivations 16 par des, dispositifs de liaison étanche, sont soumises au même vide que l'enceinte 12. Un gaz neutre, tel que l'azote par exemple, peut être :envoyé dans les bouteilles 19 par manoeuvre des vannes d'arrêt 24.
Lorsqu'une bouteille 19 :est pleine, le surveillant interrompt son alimentation par fermeture de la vanne 17 correspondante, puis par manoeuvre de la vanne d'arrêt 24 correspondante il introduit du gaz neutre dans cette bouteille jusqu'à rétablissement dans celle-ci d'une pression approximativement égale à la pression atmosphérique, et enfin il déconnecte la bouteille pleine, la retire et en place une nouvelle.
Lorsque l'installation décrite est prévue pour le traitement de liquides alimentaires, les puissances des générateurs Gl à Go doivent être choisies. de manière que la température des filets liquides en traitement ne dépasse pas 650 C de manière à éviter la destruction des éléments nutritifs contenus dans le liquide naturel. Si le produit doit seulement être condensé, on peut par manoeuvre de vannes 21 et 25 évacuer le produit condensé par un conduit 26 et le récolter dans un récipient 27.
Le procédé décrit permet non seulement de traiter le lait, les jus de fruits et de légumes ainsi que toutes boissons et produits: alimentaires., mais encore tous autres produits tels que produits médicaux et thérapeutiquesi (réduction du sang en plasma sec). Ce procédé est très spécialement avantageux lorsqu'il s'agit de traiter des. produits contenant des, substances s'oxydant facilement ou détruites par la chaleur. En effet, il est possible d'injecter dans la partie inférieure de chaque enceinte de l'hydrogène ou un gaz neutre de manière à éviter toute action chimique sur le produit pendant le traitement.
De ce qui précède, on peut aisément se rendre compte des très grands avantages que présente le procédé faisant l'objet du présent brevet pour le traitement de produits délicats se détériorant facilement. En outre, il permet un traitement continu des produits ce qui constitue un progrès technique con-

sidérable et permet de réduire dans de très grandes proportions les dimensions des installations de traitement.
D'autres formes d'exécution sont possibles. On pourrait par exemple augmenter la hauteur de l'enceinte 5 de manière à effectuer la déshydratation du produit dans une seule enceinte. Dans ce cas, cette enceinte 5 serait munie d'un canal 14 muni d'une vis transporteuse 15 permettant d'évacuer le produit en poudre. On pourrait ausi prévoir trois enceintes ou un nombre quelconque d'enceintes branchées en série, de manière à subdiviser le traitement en plusieurs phases de déshydratation et de permettre ainsi de soutirer le produit à différentes concentrations.
Les anneaux perforés 6 et 13 pourraient être remplacés par tout autre injecteur permettant d'obtenir des filets. liquides, tels que des pommes de douche par exemple.
En outre l'installation. décrite permet d'adapter pour chaque cas particulier les températures et les pressions dans les différentes zones de chaque enceinte, de sorte qu'il est possible d'adapter le pro cédé à la déshydratation de produits très divers.
