ou autres en vue d'un changement rapide de leur température et en particulier pour la stérilisation et le refromdissement con- tinus- de ces. produits, et dans lequel lesdits produits, préalablement emmagasinés dans des récipients étanches, sont immergés dans au moins un fluide de traitement ayant la température voulue pour provoquer ledit changement, .lesdits,
récipients., établis. de fa çon à pouvoir rouler ou,dispoisésdans des sup ports pouvant rouler, étant déplacés en rota,- tion par des moyens. d'entraînement sur des couloirs formant un circuit ide,circulation. Ce procédé est caractérisé en ce que la vitesse de rotation des. récipients est au moins égale à cinq tours minute.
L'invention s'étend à un appareil pour la mise en oeuvre du procédé, comprenant au moins une enceinte contenant un fluide de traitement, dans laquelle sont disposés des chemins de roulement formant circuit de cir culation, des distributeurs d'entrée et ;
de sor tie étant prévus pour admettre les récipients dans l'appareil et pour les évacuer de eelui-ci, des moyens @d',entrainement étant également prévus pour faire .rouler les récipients sur les chemins. de roulement, cers moyens d'entraî nement étant disposés pour assurer aux réci pients une vitesse ,
de rotation au moins égale à cinq tours minute.
L'invention s'étend encore au produit obtenu par la mise en oeuvre du procédé.
De préférence, dans l'application du pro cédé à la stérilisation du lait, .de dérivés et de boissons à base (de lait, la vitesse de rota tion -des :récipients est comprise entre 25 et 120 tours à la minute, le fluide de traitement étant un fluide à haut coefficient de conduc- tibilit6 thermique, tel que l'eau, maintenu à une température eompris-e entre 117 et 130 C et recouvrant pratiquement, dans leur totalité,
les, chemins de circulation. Pour obtenir ces grande,- <B>3</B> vitesses de rotation, on se sert avan- tageusement d'un appareil présentant les ca ractères suivants:
Les chemins de roulement pour les réci pients forment un circuit sans fin, c',cst-à- dire refermé sur lui-même, des moyens étant prévus pour que les récipients parcourent au tomatiquement plusieurs fois le circuit avant leur évacuation.
Pour cela, les distributeurs d'entrée et de sortie sont agencés pour jouer le rôle de distributeur sélecteurs, de manière à n'admettre dans le circuit et à n'évacuer hors de celui-ci qu'un récipient seulement à chaque passage de N organes d'entraînement, ces distributeurs étant synchronisés pour que les récipients parcourent automatiquement le circuit un nombre total de fois égal à N ou à tout autre nombre inférieur à, N.
Dans cette réalisation, le nombre total d'organes d'entraînement est convenablement choisi, par exemple égal à un multiple de N plus. ou moins 1.
Les chemins de roulement peuvent for mer un circuit sans fin constitué par au moins deux circuits ouverts réunis à leurs extrémi tés par des organes tournant en forme d'étoile. De préférence, les distributeurs d'introduction dans les circuits sont combinés avec un frein pour retenir les récipients et dont l'ouverture est commandée par une came, et les disiribu- teurs d'extraction sont combinés avec un le vier d'extraction qui engage les.
récipients dans, le distributeur et avec un coulisseau d'ouverture et de fermeture du passage de sortie, commandé par une came.
Pour des récipients de forme, de nature et de dimensions quelconques, ces récipients sont préalablement introduits dans des supports, par exemple des paniers cylindriques établis pour circuler et rouler sur les chemins de rou lement .sous l'action des organes de poussée, ces paniers pouvant contenir un ou plusieurs récipients et pouvant comporter des moyens pour empêcher la sortie accidentelle des ré cipients perdant leur passage dans l'appareil.
Il peut être prévu au moins une enceinte de réchauffage et au moins une enceinte de refroidissement dans lesquelles les récipients passent successivement, l'enceinte de chauf fage et l'enceinte de refroidissement contenant respectivement un liquide chaud sous pression et un liquide froid sous pression, ces deux en- teintes étant.
à la même pression et communi- quant librement pour le passage des récipients d'une enceinte à l'autre.
De préférence, dans les appareils tra vaillant soues pression, le distributeur de sor- tie des récipients de l'enceinte de refroidisse ment est disposé de façon que sa. communiea- tion avec cette enceinte soit en dessous du ni veau du liquide de refroidissement.
Grâce à cette disposition, le distributeur agit automatiquement comme compresseur d'air.
L'air comprimé par le distributeur de sor tie peut être utilisé pour actionner le régu lateur automatique de température du stérili- sateur.
Le dessin annexé représente, à titre d'exemple, diverses dispositions de chemins de roulement et autres organes d'appareil se lon l'invention et quelques formes d'exécution de cet appareil.

L'admission au chemin -de roulement est réa lisée par le distributeur 11 et l'évacuation par les différents distributeurs tels :que 12,ou 14, la circulation des. récipients étant indiquée par les flèches.
Le nombre de spires suivant lesquelles s'étend le chemin de moulement -et, par consé quent, de roues. 5 est quelconque. Une des spires: peut être surélevée pour permettre l'é vacuation au-dessus du niveau du fluide de traitement si celui-ci est liquide.
La fig. 2 est une coupe transversale d'un appareil montrant les roues à chaînes 5 d'en- traînement des chaînes 4 partant les barres 3.
La fig. 2a représente le schéma de circu lation -de l'appareil suivant la fig. 2.
Des chemins de roulement constituant des circuits analogues sont couplés de manière à constituer un circuit sans fin, comme indiqué suivant deux réalisations aux fig. 3, 4, d'une part, et 5, 6, d'autre part.
La fig. 3 est une coupe transversale et la fig. 4, une coupe longitudinale d'un appa reil constitué par une enceinte cylindrique dans laquelle sont disposées des chemins de roulement concentriques formant ainsi plu sieurs étages de plusieurs spires.
Dans l'appareil selon les fig. 3 et 4, les chemins de roulement sont au nombre de deux; l'un de -ces chemins s'étend suivant une ligne héhicoïdale, et l'autre chemin s'étend également suivant une ligne hélicoïdale mais. disposée à l'intérieur de d'autre.
Dans cette réalisation, les organes de poussée sont cons- titués par des barres s'étendant longitudinale- ment dans le récipient et qui sont fixées, à leurs extrémités à des couronnes mobiles en rotation.
Ces barres poussent les, boîtes dans les chemins de roulement, :de manière que celles-cï roulent suivant une trajectoire hé licoïdale.
Dans cette réalisation, l'entrée 11 et la sortie 12 peuvent s'effectuer en n'importe quel point du chemin hélicoïdal extérieur qui .cons titue l'étage extérieur ou en n'importe quel point -du chemin hélicoïdal intérieur qui cons titue l'étage intérieur.
Le circuit peut être varié de très nombreuses façons -et établi comme précédemment indiqué, .en circuit fermé, pour permettre la distribution sélec tive comme, il sera indiqué ultérieurement. Dans, cette disposition,
les boites passent d'un circuit dans. l'autre par un moyen analogue à celui idécrit ,sur les fig. 5 -et 6.
Les appareils décrits précédemment sont établis avec les axes de rotation des couronnes d'entraînement -des barres disposées horizon- talement pour assurer la rotation de chaque boîte au récipient cylindrique autour :
de son axe .disposé horizontalement ou au voisinage de l'horizontale. Mais ces appareils peuvent être établis pour fonctionner avec les axes ,de ces,
couronnes disposés verticalement ou obli- quement en vue d'assurer la rotation des boîtes autour de leurs axes placés verticale- ment ou obliquement.
Les fig. 5,et 6 représentent respectivement l'extrémité avant et l'extrémité arrière .d'un appareil comportant deux chemins de roule ment formant deux circuits. ouverts 70 et 71 pourvus notamment :de barres 3 ,de, propulsion.
Ces deux circuits sont réunis en 72 et 73 par des organes tournants en forme .d'étoile 74 et 75, de manière que l'ensemble forme un circuit formé sur lui-même.
Les couloirs de jonction en 72 et 73 pré sentent une ouverture, par exemple de deux oentimétres de largeur, par laquelle les barres :de pouGSsée peuvent passer, cette discontinuité n'offrant aucun inconvénient au bon guidage dans ces passages.
Les deux organes, en forme d'étoile peu vent être montés sur le même axe, qui peut en même temps entrasner les roues de com mande des chaînes des deux circuits. Dans la fig. 7, l'organe d'introduction 80 reçoit chaque bôme ? et l'engage dans le che min de roulement.
Ce dispositif est particu- lièreme:nt intéressant pour le traitement dans un fluide liquide, la, gravité réduite de la boîte dans ce milieu ne pouvant, avec ce pro cédé, provoquer des irrégularités de fonction nement. Dans cette figure, la. boîte arrive à l'orga-ne 80 par gravité. L'organe d'introduc tion en forme d'étoile peut aussi être a.cc.ou- plé directement à un tiroir étanche.
En rognant un certain nombre de pales ou branches de l'organe en forme d'étoile ou en établissant cet organe avec un nombre appro- prié,de branches, on peut assurer l'alimenta Lion sélective.
L'organe 80 est monté sur l'axe 82 qui peut être commandé en synchronisme d'une façon quelconque avec l'organe d'entraîne ment des barres et particulièrement par cet organe -d'entraînement des barres. Un frein 82a, mobile autour de l'axe 82U freine l'arri vée de chaque boîte pour éviter un choc: trop violent cantre l'orbane 80 en forme d'étoile. Ce frein est de préférence commandé par une came 82e à nombre de bossages égal au nom bre de branches travaillantes de l'organe en forme d'étoile.
Dans la, fig. 8, un organe analogue 83 d'extraction en forme d'étoile n'effectue l'extraction que si le levier 84 est soulevé par une came ou autre; en même temps, un cou lisseau 85 ouvre ou ferme le passage 86.
Ce dispositif d'extraction est combiné avec le dis positif d'alimenta.hon sélective: en outre, il permet la. sortie .des boîtes de l'appareil au- dessus du niveau du liquide dans le cas d'un fluide liquide de traitement.
Ces organes en forme d'étoile auront un n om 'brf, <B>,</B> @de branches. variable suivant les com- binaisons de sélections désirées.
Tous ces organes en forme d'étoile pour ront être à branches simples travaillant au centre du chemin de roulement ou de préfé rence à branches doubles afin d'agir sur la boîte au droit des sertis de ces boîtes.

Cet ensemble, particulièrement bien adapté au traitement suivant l'invention aux environs de 130 , .comprend deux étages d'élévation de la température et deux étages d'abaissement permettant un meilleur équili brage des pressions internes et externes qui s'exercent sur les parois des .récipients traités, et -en diminuant la fatigue. En outre,
le re froidissement en deux étages permet une éco nomie considérable de fluide @de refroidisse- ment, ,l'eau de refroidissement du deuxième appareil repassant dans. le premier appareil.
De préférence, des cuves 123 et 124 tra- vaillent à la même pression, le passage des ré cipients, de l'une à l'autre se faisant librement sans interposition de ,distributeur étanche, un matelas d'air comprimé entretenu par le ti roir compresseur 100 empêchant la conden sation en 124 de vapeur provenant de 123.
Ce @dispositif offre, entre autres avantages, celui de travailler en légère surpression, ,c'est- à--dire @de maintenir une pression supérieure à la tension ide vapeur correspondant à la, température et, en outre, de diminuer la perte totale de vapeur par le tiroir d'entrée du fait -de l'appoint d'air mélangé à cette vapeur.
L'air @comprimé par le tiroir -de sortie peut être capté sans. mélange de vapeur à l'inté rieur de la cuve ide manière à pouvoir action ner .lui-même le régulateur de température, ce dispositif évitant un accessoire spécial pour cette commande. Dans ce but, il suffit de dis poser un tube 126, de façon que son orifice à l'intérieur de la,, cuve 124 soit situé juste au- ,
dessus du niveau du liquide et sensiblement à la verticale du distributeur 100. Ce tube est relié à l'extérieur au régulateur de tempé rature.
Le passage de 123 à 124 se, fait par un chemin de roulement monté à coulissement à l'intérieur d'un tube .étanche avec joint élas tique. Ce -dispositif permet .des déplacements relatifs des cuves ,et facilite le montage et la tenue à la dilatation.
Les cuves 123 et 124 peuvent aussi être remplacées par une seule cuve avec une cloi son isolante.
Les cuves figurées sont des cuves cylin driques de grande capacité qui offrent les avantages. suivants: ,légèreté de construction, grande capacité de fluide de traitement per mettant une rigoureuse constance de tempéra ture, accès facile par .des, trous d'homme à tout le mécanisme sans nécessité de démon tage.
L'élévateur @de, boîtes. 121 est en tôle, en- tièrement fermé, de manière à récupérer la va leur .d'échappement du tiroir 122, qui ré chauffe ainsi les boîtes pendant leur séjour dans l'élévateur. De cette façon, le réchauf feur 120 peut être supprimé dans de nom breux cas.
L'ensemble des moyens décrits, permet le travail au fluide liquide couvrant intégrale- ment les circuits des boîtes permettant le tra vail en surpression et réalisant une effica cité très supérieure à la vapeur pour un appa- reil continu. En effet, d'ans un tel appareil,
les tiroirs d'introduction et d'évacuation des boîtes introduisent systématiquement des vo lumes d'air impossibles à purger et dont le mélange à la vapeur diminue considérable- ment son efficacité de chauffage. Ces moyens permettent, en outre, l'application des très hautes vitesses de rotation nécessaires pour certains produits.
La courte durée de traitement permet de conserver presque intégralement les qualités des produits traités, ce qui est spécialement intéressant pour les liquides délicats, parti- culéremut les jus de fruits, tomates, etc., boissons diverses naturelles ou préparées, etc., qui. conservent .leur couleur, leur arome, leurs vitamines.
On décrira en détail, à titre d'exemple, une application particulièrement intéressante qui réside dans .le traitement du lait ordinaire, du lait concentré et de ses dérivés.
Le lait est porté le plus rapidement possi ble et à grande vitesse de rotation du .réci pient, à la température de traitement, con trairement à. la technique habituelle qui pré conise le chauffage lent et progressif et une très légère agitation.
On obtiendra ainsi, par le traitement à des températures de 117 à 130 C et à des vi tesses de rotation de 25 à 1.20 tours par mi nute, la stérilisation parfaite, le lait n'ayant au, total séjourné à plus de 100 que pendant un temps d'environ 2 à 8 minutes suivant la vitesse adoptée, la température choisie et la qualité du lait.
Ces chiffres pourront varier avec les cir constances (composition, contamination) et ne sont donnés qu'à titre d'exemple et pour en permettre la comparaison avec les temps em ployés dans. les procédés industriels actuels, continus ou discontinus, dans lesquels le lait séjourne au-dessus de 100' C pendant 15 à 40 minutes. Le lait stérilisé ainsi obtenu a perdu de nombreuses. qualités (entre autres:
saveur et couleur) qui sont, au contraire, con- servées par le nouveau procédé.
L'appareil permet de traiter des boissons diverses (café au lait, chocolat, crèmes, etc.) à base de lait.
A titre d'exemple de jus de fruits, le jus de tomate en boîte de 1 kilo- traité en auto clave fixe a besoin de plus de 60 minutes pour que le centre de la boîte atteigne la tem- pérature de l'autoclave. A des vitesses de ro tation de 20 à 40 tours à la minute, les con ditions ont améliorées, mais la. pénétration est encore lente et irrégulière.
Par contre, à des vitesses de 60 à. 100 tours à la minute, la pénétration est excellente et régulière. Pr@ati- quement, on utilisera des vitesses de 40 à 120 toues.
On peut ainsi, avec les appareils décrits, stériliser le jus de tomates en des temps va riant de 1'30" à 6' environ suivant la vitesse et la température choisies, les jus ainsi obte- nus ayant toutes les qualités des jus crus.

A particularly advantageous application which resides in the treatment of regular milk, condensed milk and its derivatives will be described in detail, by way of example.
The milk is brought as quickly as possible and at high rotational speed of the .réci pient, at the treatment temperature, contrary to. the usual technique which advocates slow and gradual heating and very slight agitation.
Perfect sterilization will thus be obtained, by treatment at temperatures of 117 to 130 ° C. and at rotational speeds of 25 to 1.20 revolutions per minute, the milk having in total remained at more than 100 for only during a time of about 2 to 8 minutes depending on the speed adopted, the temperature chosen and the quality of the milk.
These figures may vary with the circumstances (composition, contamination) and are given only by way of example and to allow comparison with the times used in. current industrial processes, continuous or discontinuous, in which the milk remains above 100 ° C. for 15 to 40 minutes. The sterilized milk thus obtained lost many. qualities (among others:
flavor and color) which are, on the contrary, preserved by the new process.
The device is used to process various milk-based drinks (coffee with milk, chocolate, creams, etc.).
As an example of fruit juice, canned tomato juice of 1 kilo treated in a fixed autoclave needs more than 60 minutes for the center of the can to reach the temperature of the autoclave. At rotational speeds of 20 to 40 revolutions per minute, conditions have improved, but the. penetration is still slow and irregular.
On the other hand, at speeds of 60 to. 100 revolutions per minute, the penetration is excellent and regular. In practice, speeds of 40 to 120 turns will be used.
It is thus possible, with the apparatus described, to sterilize the tomato juice in times varying from approximately 1'30 "to 6" depending on the speed and temperature chosen, the juices thus obtained having all the qualities of raw juices.
