Abstract

338,768. Giomi, U. Dec. 17, 1929. Preserving fruit, vegetables, and meat.-Fruit, vegetables and meat are preserved by placing in vessels which are then evacuated, filled with an inert gas under pressure, and sealed. The fruit. e.g. strawberries, peaches, grapes or apricots, is immersed in pure alcohol and then dried before packing. In treating vegetables and meat, these are packed in the vessels and superheated steam is then introduced to sterilize the vessels and their contents prior to the evacuation. In the apparatus described the vessels a have each a small tube b, preferably of tin, which is connected through tubing c and cocks l, e to an air pump d. When meat and vegetables are being treated, steam is first supplied through pipe h, cock i and tube c to the vessel a, cock l being closed. When the evacuation has been effected by the pump d, nitrogen gas is introduced from a container f. The tube b is then crushed to seal the vessel and the latter is welded.
