Verfahren und Vorrichtung zur kontinuierlichen Herstellung von Hefe- oder Sauerteig Die Erfindung betrifft ein Verfahren und eine Vor richtung zur kontinuierlichen Herstellung von Hefe- oder Sauerteig, insbesondere von Hefestück, Grund- oder Vollsauer, Weizen- oder Roggenteig.
Die Produktivitätssteigerung und erhöhte Mechani sierung von Bäckereibetrieben erfordert eine Um stellung der chargenweisen Arbeitsweise zu einer kon tinuierlichen bzw. Fliessbanderzeugung. Die vorliegende Erfindung ermöglicht eine solche Umstellung.
Das Verfahren gemäss der Erfindung ist dadurch gekennzeichnet, dass die Rohstoffe zu einem Teig ver rührt werden, die erhaltene Masse in mindestens ein Gärgefäss geführt und darin vorgeschoben wird, wobei der Teig während dieser Bewegung gärt und ausreift.
In einer bevorzugten Ausführungsform der Er findung wird die gerührte Masse in zwei Teile geteilt und unter Druck in das Gärgefäss geführt, wobei ein Teil nach dessen Ausreifung als Grundsauer, der zweite, grössere Teil als Vollsauer verwendet und mit neuen Rohstoffen verarbeitet wird.
Falls ein mehrstufiger Gärungsprozess erforderlich ist, kann die zu verarbeitende Masse kaskadenärtig durch mehrere Gärstufen geführt werden, wobei in jede nachfolgende Stufe frische Rohstoffe und ausgereifter Sauerteig von der vorhergehenden Stufe zugesetzt werden.
Die beiliegenden Zeichnungen stellen einige Aus führungsbeispiele der Vorrichtung zur Durchführung des erfindungsgemässen Verfahrens dar.
Fig. 1 veranschaulicht in schematischer Darstellung eine einfache Ausführungsform der Vorrichtung.
Fig. 2 ist ein axialer Schnitt des Rührpropellers. Fig. 3 veranschaulicht den Rührpropeller in Auf sicht.
Fig. 4 stellt eine Ausführungsform der Erfindung mit Kaskadenschaltung der einzelnen Gärstufen dar, und Fig. 5 zeigt schematisch die Gesamtansicht einer weiteren Ausführungsform der Erfindung.
Wie aus Fig. 1 ersichtlich, besteht die Vorrichtung aus einem Rührgefäss 1, in welchem ein von einer Kraft quelle 2 angetriebener Rührpropeller 3 drehbar ge lagert ist. Der Rührpropeller und das Rührgefäss sind gegeneinander verstellbar, z. B. derart, dass der Rühr- propeller oder das Rührgefäss oder beide in axialer Richtung gegeneinander verschiebbar sind, so dass die Flügel des Rührpropellers in jeder beliebigen Ent fernung vom Boden des Rührgefässes umlaufen kön nen.
Dies kann entweder durch Lagerung des Rühr- propellers an einer in einer Schraubenmutter geführten Schraubenspindel oder durch eine ähnliche Lagerung des Rührgefässes oder mittels einer Nockenscheibe oder in einer andern geeigneten Weise erzielt werden.
Das Rührgefäss 1 ist mit einer Ablassöffnung 4 ver sehen, die durch einen Schieber 5 geschlossen oder in gewünschtem Mass gedrosselt werden kann. Der Rühr- propeller besteht aus mehreren Flügeln 9 (siehe Fig. 2 und 3) von pflugscharartiger Form, die auf Armen 10 an einer Welle 8 gelagert sind.
Die Flügel 9 können natürlich jede beliebige Form aufweisen, es hat sich jedoch erwiesen, dass besonders gute Resultate erzielt werden, wenn die Flügel eine nach innen oder nach aussen konkave, von der Tangente oder von der Ebene des Erzeugungskreises (11) (siehe Fig. 3) bzw. von beiden weggeneigte Arbeitsfläche besitzen. Die Flügel können im Querschnitt gesehen gekrümmt sein, wobei der Mittelpunkt ihrer Krümmung ausserhalb der Um laufachse des Propellers liegt (nicht gezeichnet).
In der dargestellten Ausführung weist das Gär- gefäss die Form einer im spitzen Winkel gebogenen Röhre auf und besitzt somit einen Eintrittsteil 6 und Austrittsteil 7. Wie aus Fig. 1 ersichtlich, steht der Eintrittsteil 6 vertikal unterhalb der Auslassöffnung 4 des Rührgefässes 1, während der Austrittsteil 7 schräg aufwärts gerichtet ist. Es ist ferner ersichtlich, dass der Austrittsteil 7 ein grösseres Volumen als der Eintritts teil 6 bzw. eine grössere Länge aufweist oder mindestens den gleichen Inhalt hat.
Die beschriebene winkelförmige Gestaltung des Gärgefässes ist jedoch nicht unbedingt erforderlich, vielmehr kann das Gefäss auch auf eine andere geeignete Weise ausgebildet sein.
Die beschriebene Vorrichtung arbeitet folgender massen: Bei Arbeitsbeginn ist die Ablassöffnung 4 des Rühr- gefässes 1 mit dem Schieber 5 verschlossen und in das Gefäss 1 werden in abgemessenen Mengen oder fort laufend Mehl und Wasser oder auch andere Zutaten zugeführt. Der Rührpropeller 3 befindet sich in seiner tiefsten Lage, in welcher sich die Flügel 9 in der Nähe des Bodens des Gefässes bewegen. Wenn die Masse im Rührgefäss 1 zunimmt, wird der ununterbrochen um laufende Propeller nach und nach gehoben oder das Gefäss 1 abwärts bewegt, so dass die Flügel 9 stets dicht unter der Oberfläche der Masse umlaufen.
Sobald eine bestimmte Menge der gerührten Masse im Gefäss 1 vorhanden ist, wird das Heben des Propellers (oder das Sinken des Gefässes) unterbrochen und der Propeller bleibt in einer solchen Höhe, dass seine Flügel 9 un mittelbar unter der Oberfläche der Masse umlaufen. Hierauf wird die Ablassöffnung 4 freigelegt und die gerührte Masse in den Eintrittsteil 6 des Gärgefässes abgelassen.
Mit dem Schieber 5 wird der Durchfluss der Masse durch die Ablassöffnung 4 derart geregelt, dass die ausfliessende Menge der Menge der zugesetzten Rohstoffe gleichkommt. Durch die beschriebene be sondere Form der Flügel 9 des Propellers wird eine intensive Wirbelbewegung der geschlagenen Masse nur in der Zone des Propellers erzielt, während die Masse im untern Teil des Rührgefässes 1 beinahe im Ruhe stand verbleibt, so dass nicht der ganze Inhalt des Rühr- gefässes der Wirbelbewegung unterworfen ist; dies ver ringert auch den Energieverbrauch. In der untern Partie des Rührgefässes beruhigt sich die Masse vor dem Eintritt in das Gärgefäss.
Auf die Oberfläche der gerührten Masse werden neue Rohstoffe zugeführt, die durch den Propeller voll kommen verarbeitet werden. Die gerührte Masse sinkt dann, wie bereits erwähnt, in den Unterteil-des Rühr- gefässes und durch die Ablassöffnung 4 in den Eintritts teil 6 des Gärgefässes, wobei sie beide Teile 6, 7 füllt. Die frisch gerührte Masse drängt die ältere Masse zum Austrittsteil 7, wo der Gärungsvorgang stattfindet und aus welchem die gegorene Masse ausfliesst. Dadurch ist eine Stufe oder Phase der kontinuierlichen Er zeugung des Vorteiges bzw. Grundsauers geschlossen.
Die Durchflussdauer durch das Gärgefäss 6, 7, die der Gärungsdauer proportional ist, kann durch Ver grösserung oder Verminderung des Zuflusses der ge rührten Masse aus dem Rührgefäss geregelt werden.
Es ist klar, dass in der Ablassöffnung 4 an Stelle des Schiebers 5 ein beliebiges anderes Steuerorgan angeord net oder dass die Masse aus dem Unterteil des Gefässes 1 auch in einer andern Weise, z. B. mittels einer Pumpe, entnommen und in den Eintrittsteil 6 des Gärgefässes geführt werden kann.
Wenn eine mehrfache Führung des Vorteiges er forderlich ist, wie dies z. B. bei der Erzeugung von Roggenbrot der Fall ist, wird die Ausführung gemäss Fig. 4 verwendet.
Die Vorrichtung besitzt in diesem Falle mehrere Stufen, z. B. I, 1I, 1I1. Das Gärgefäss 13 der. ersten Stufe mündet in das Rührgefäss 14 der zweiten Stufe und das Gärgefäss 15 der zweiten Stufe in das Rührgefäss 16 der dritten Stufe.
Die in Verarbeitung befindliche Masse bewegt sich fortlaufend aus der ersten Stufe in die zweite und von hier in die dritte, wobei in die Rührgefässe 14 und 16 ausser dem ausgereiften Vorteig aus der vorhergehenden Stufe noch weitere erforderliche Rohstoffe zugesetzt werden. Der aus dem Gärgefäss 17 ausfliessende Voll sauer wird im Gefäss 18 zu Teig verarbeitet.
Um den Verlauf des Erzeugungsvorganges über wachen zu können, ist das Rührgefäss sowie das Gär- gefäss aus unzerbrechlichem Glas oder aus einem an dern hygienisch einwandfreien Stoff hergestellt, was noch weiter die Hygiene des Erzeugungsvorganges er höht.
Alle Erzeugungsphasen verlaufen ununterbrochen, ohne mit der menschlichen Hand in Berührung zu kommen.
In manchen Fällen kann es vorkommen, dass die ausgereifte Masse im Austrittsteil des Gärgefässes ge bremst wird, wodurch Unregelmässigkeiten im Ausfluss des ausgereiften Vorteiges entstehen. Dies ist darauf zurückzuführen, dass der ausgereiftes Kohlendioxyd enthaltende Vorteig einen grösseren Reibungskoeffi zienten als der unausgereifte Vorteig besitzt. Die Fliess banderzeugung erfordert jedoch unbedingte Genauig keit der Dosierung, da hiervon eine ganze Reihe von weitern Operationen wie Formung, Aufgehen und Backen des Teiges abhängt.
Dieser Nachteil kann dadurch beseitigt werden, dass die gerührte Masse in zwei Teile geteilt und unter Druck in das Gefäss geführt wird, wobei ein Teil nach dessen Ausreifung als Grundsauer, der zweite, grössere Teil als Vollsauer verwendet und unter Zugabe von frischen Rohstoffen verarbeitet wird.
Eine Vorrichtung zur Durchführung dieser weiteren Ausführungsform der Erfindung ist in Fig. 5 schema tisch dargestellt.
Im Oberteil der Vorrichtung ist ein Rührkessel 19 vorgesehen, der mit einem in das Rührgefäss 21 mün denden Dosierungsventil 20 versehen ist. In das Rühr- gefäss mündet auch eine Mehl-Dosiervorrichtung 22. Unterhalb des Rührgefässes ist ein zweiseitiger Ver teiler 23 angeordnet, in dessen beiden Schenkeln Dosiervorrichtungen 24 oder andere Vorrichtungen zur zwangläufigen Beförderung der zu verarbeitenden Masse aus dem Verteiler 23 einerseits in das Gärgefäss 27 für den Vollsauer und anderseits in das Gärgefäss 26 für den Grundsauer eingeschaltet sind.
Die Eintritts öffnungen der beiden Gefässe sind mit Deckeln 35 geschlossen, in welchen Manometer 25 angeordnet sind, welche den Druck in den Gärgefässen 26 und 27 angeben.
Das Gärgefäss 27 für den Vollsauer hat wiederum die Gestalt eines gebogenen Rohres, und sein Austritts ende mündet oben in ein Rührgefäss 30, welches mit einem Dosierungs-Ablassventil 31 versehen ist, welch letzteres in einen Knetkessel 33 mündet, welcher auch von der Mehldosiervorrichtung 32 beliefert wird.
Das Gärgefäss 26 für den Grundsauer weist die Form eines gebogenen Rohres auf, dessen Austrittsteil oben in den Rührkessel 19 mündet. Die Austrittsteile der Gärgefässe 26 und 27 sind länger als deren Eintritts teile, wie aus der Zeichnung ersichtlich ist.
Alle Rührkessel, Rührgefässe und Dosiervorrich- tungen sind mit erforderlichen Rührpropellern, Trans port- oder Mischvorrichtungen versehen, die in geeig neter Weise angetrieben werden. Da diese Antriebe und Hilfsvorrichtungen nicht den Gegenstand der Erfin dung bilden und an sich bekannt sind, werden sie nicht eingehend beschrieben.
In die Deckel 35 münden auch Rohre 28 für die Zufuhr von Druckluft, Sauerstoff oder eines andern Gases, und die Deckel sind mit Ventilen 29 zum Regu lieren und Auslassen des Gases aus den Gefässen ver sehen.
Die beschriebene Vorrichtung arbeitet wie folgt: Der Anstellsauer wird im Rührkessel 19 mit Wasser verrührt und durch das Dosierventil 20 in der vor geschriebenen Menge in das Rührgefäss 21 abgelassen. Gleichzeitig beliefert die Mehldosiervorrichtung 22 das Rührgefäss 21 mit der erforderlichen Mehlmenge. Die im Gefäss 21 gerührte Masse fliesst in den Verteiler 23, wo sie in zwei Teile geteilt wird, von welchen der eine durch die Dosiervorrichtung 24 in das Gärgefäss 27 und der andere in das Gärgefäss 26 geführt werden.
Sobald die Bögen der beiden Gefässe mit der Masse gefüllt sind, steigt der Druck in den Eintrittsteilen der Gefässe infolge des stetigen Ansteigens der Masse. In den Eintrittsteilen bildet sich ein auf die Oberfläche der Masse drückendes Luft- oder Gaspolster. Dadurch steigt die Masse in den Austrittsteilen der beiden Gefässe mehr als in den Eintrittsteilen.
Da der Druck des Luft- oder Gaspolsters auf die Oberfläche der Masse in beiden Gefässen einerseits durch die Auslass- ventile 29, anderseits durch Zufuhr von Druckluft durch die Rohre 28 genau geregelt werden kann, ist es möglich, die Zeitdauer, in welcher die Masse aus den Austrittsteilen des einen oder andern Gärgefässes aus fliessen kann, d. h. die zur Ausgärung der Masse er forderliche Zeit, genau zu bestimmen.
Der schon ausgereifte Inhalt des Gärgefässes 26 wird in den Rührkessel 19 zurückgeführt und als Grund sauer zur weiteren Zubereitung des Vollsauers ver wendet, so dass die Sauerteigherstellung einen geschlos senen und kontinuierlichen Zyklus bildet.
Die ausgegorene Masse fliesst aus dem Gärgefäss 27 in das Rührgefäss 30, wird mit Wasser, Salzlösung und Zutaten verrührt und durch das Ablassventil 31 in den Knetkessel 33 geführt, welch letzterer gleichzeitig durch die Dosiervorrichtung 32 mit Mehl beliefert wird. Wenn der Betrieb unterbrochen werden soll, wird der als Grundsauer zurückgeführte Teil abgekühlt, wodurch der Gärungsprozess unterbrochen wird. Bei Fortsetzung des Betriebes wird der als Grundsauer dienende Teil wieder erwärmt. Zu diesem Zweck kann das Gärgefäss 26 mit einer Kühl- und Wärmevorrich tung versehen sein.
Das erfindungsgemässe Verfahren kann weitgehend automatisiert werden.
Das Verfahren gemäss der Erfindung ist sehr wirt schaftlich, erfordert keine anstrengende Arbeit und erhöht die Qualität der Erzeugnisse. DieHerstellung der Teigmassen kann in geschlossenen Behältern vor sich gehen, wodurch die Erhaltung des Nährwertes der verarbeiteten Masse gewährleistet und die Ausbeute erhöht wird. Die Grundbedingung hygienischer Ar beitsweise wird in vollem Umfange gewährleistet.
Method and device for the continuous production of yeast or sourdough The invention relates to a method and a device for the continuous production of yeast or sourdough, in particular pieces of yeast, basic or full sour, wheat or rye dough.
The increase in productivity and increased mechanization of bakeries requires a switch from the batch mode to continuous or assembly line production. The present invention enables such a shift.
The method according to the invention is characterized in that the raw materials are stirred into a dough, the mass obtained is fed into at least one fermentation vessel and advanced therein, the dough fermenting and maturing during this movement.
In a preferred embodiment of the invention, the stirred mass is divided into two parts and fed into the fermentation vessel under pressure, one part being used as basic acid after it has matured, the second, larger part being used as full acid and processed with new raw materials.
If a multi-stage fermentation process is required, the mass to be processed can be cascaded through several fermentation stages, with fresh raw materials and mature sourdough from the previous stage being added to each subsequent stage.
The accompanying drawings represent some exemplary embodiments of the device for performing the method according to the invention.
Fig. 1 illustrates a simple embodiment of the device in a schematic representation.
Fig. 2 is an axial section of the stirring propeller. Fig. 3 illustrates the propeller in view.
FIG. 4 shows an embodiment of the invention with cascade connection of the individual fermentation stages, and FIG. 5 shows a schematic overall view of a further embodiment of the invention.
As can be seen from Fig. 1, the device consists of a stirred vessel 1 in which a propeller 3 driven by a power source 2 is rotatably superimposed ge. The propeller and the mixing vessel can be adjusted against one another, e.g. B. in such a way that the stirring propeller or the stirring vessel or both can be displaced against each other in the axial direction so that the blades of the stirring propeller can rotate at any distance from the bottom of the stirring vessel.
This can be achieved either by mounting the stirring propeller on a screw spindle guided in a screw nut or by similar mounting of the mixing vessel or by means of a cam disk or in another suitable manner.
The stirred vessel 1 is seen ver with a discharge opening 4, which can be closed by a slide 5 or throttled to the desired extent. The agitator propeller consists of several blades 9 (see FIGS. 2 and 3) of a ploughshare-like shape, which are mounted on arms 10 on a shaft 8.
The wings 9 can of course have any shape, but it has been shown that particularly good results are achieved if the wings are concave inwards or outwards, from the tangent or from the plane of the generating circle (11) (see Fig. 3) or have a work surface inclined away from both. The blades can be curved as seen in cross section, the center of their curvature outside the axis of rotation of the propeller in order (not shown).
In the embodiment shown, the fermentation vessel has the shape of a tube bent at an acute angle and thus has an inlet part 6 and an outlet part 7. As can be seen from FIG. 1, the inlet part 6 stands vertically below the outlet opening 4 of the stirring vessel 1 Exit part 7 is directed obliquely upwards. It can also be seen that the outlet part 7 has a larger volume than the inlet part 6 or a greater length or at least has the same content.
However, the angular design of the fermentation vessel described is not absolutely necessary; rather, the vessel can also be designed in another suitable manner.
The device described works as follows: At the start of work, the outlet opening 4 of the mixing vessel 1 is closed with the slide 5 and flour and water or other ingredients are fed into the vessel 1 in measured quantities or continuously. The stirring propeller 3 is in its lowest position, in which the blades 9 move near the bottom of the vessel. When the mass in the mixing vessel 1 increases, the continuously rotating propeller is gradually raised or the vessel 1 is moved downwards so that the blades 9 always revolve close to the surface of the mass.
As soon as a certain amount of the stirred mass is present in the vessel 1, the lifting of the propeller (or the sinking of the vessel) is interrupted and the propeller remains at such a height that its blades 9 revolve indirectly below the surface of the mass. The drain opening 4 is then exposed and the stirred mass is drained into the inlet part 6 of the fermentation vessel.
With the slide 5, the flow of the mass through the outlet opening 4 is regulated in such a way that the outflowing amount equals the amount of the added raw materials. Due to the special shape of the blades 9 of the propeller described, an intensive whirling movement of the beaten mass is achieved only in the zone of the propeller, while the mass in the lower part of the mixing vessel 1 remains almost at rest, so that not the entire contents of the stirring the vessel is subject to vortex movement; this also reduces energy consumption. In the lower part of the mixing vessel, the mass calms down before it enters the fermentation vessel.
New raw materials, which are fully processed by the propeller, are added to the surface of the stirred mass. The stirred mass then sinks, as already mentioned, into the lower part of the mixing vessel and through the outlet opening 4 into the inlet part 6 of the fermentation vessel, where it fills both parts 6, 7. The freshly stirred mass pushes the older mass to the outlet part 7, where the fermentation process takes place and from which the fermented mass flows out. This closes a stage or phase of the continuous production of the pre-dough or basic sour.
The flow time through the fermentation vessel 6, 7, which is proportional to the fermentation time, can be regulated by increasing or reducing the inflow of the stirred mass from the mixing vessel.
It is clear that in the outlet opening 4 instead of the slide 5 any other control member angeord net or that the mass from the lower part of the vessel 1 in another way, for. B. can be removed by means of a pump and fed into the inlet part 6 of the fermentation vessel.
If a multiple leadership of the pre-dough he is required, as z. B. is the case in the production of rye bread, the embodiment according to FIG. 4 is used.
The device in this case has several stages, e.g. B. I, 1I, 1I1. The fermentation vessel 13 of the. The first stage opens into the stirred vessel 14 of the second stage and the fermentation vessel 15 of the second stage opens into the stirred vessel 16 of the third stage.
The mass being processed moves continuously from the first stage to the second and from here to the third, with other necessary raw materials being added to the mixing vessels 14 and 16 in addition to the mature pre-dough from the previous stage. The fully sour flowing out of the fermentation vessel 17 is processed into dough in the vessel 18.
In order to be able to monitor the course of the production process, the mixing vessel and the fermentation vessel are made of unbreakable glass or of another hygienic material, which further increases the hygiene of the production process.
All phases of creation run uninterrupted without coming into contact with the human hand.
In some cases it can happen that the matured mass in the outlet part of the fermentation vessel is slowed down, which causes irregularities in the outflow of the matured pre-dough. This is due to the fact that the mature pre-dough containing carbon dioxide has a greater coefficient of friction than the unripe pre-dough. The production of a conveyor belt, however, requires absolute precision of the dosage, as a whole range of other operations such as shaping, rising and baking of the dough depend on it.
This disadvantage can be eliminated by dividing the stirred mass into two parts and feeding it into the vessel under pressure, with one part being used as basic acid after it has matured, the second, larger part being used as full acid and processed with the addition of fresh raw materials.
An apparatus for carrying out this further embodiment of the invention is shown in Fig. 5 schematically.
In the upper part of the device, a stirred tank 19 is provided which is provided with a metering valve 20 opening into the mixing vessel 21. A flour metering device 22 also opens into the mixing vessel. Below the mixing vessel, there is a two-sided distributor 23, in the two legs of which metering devices 24 or other devices for the forced transport of the mass to be processed from the distributor 23 on the one hand into the fermentation vessel 27 for the full acid and on the other hand in the fermentation vessel 26 for the basic acid are switched on.
The inlet openings of the two vessels are closed with covers 35, in which manometers 25 are arranged, which indicate the pressure in the fermentation vessels 26 and 27.
The fermentation vessel 27 for the Vollsauer again has the shape of a curved pipe, and its outlet end opens into a stirring vessel 30, which is provided with a metering discharge valve 31, which the latter opens into a kneading kettle 33, which also supplies from the flour metering device 32 becomes.
The fermentation vessel 26 for the Grundsauer has the shape of a curved tube, the outlet part of which opens into the stirred tank 19 at the top. The exit parts of the fermentation vessels 26 and 27 are longer than their entry parts, as can be seen from the drawing.
All stirred kettles, stirred vessels and metering devices are provided with the necessary stirring propellers, transport or mixing devices that are driven in a suitable manner. Since these drives and auxiliary devices are not the subject of the invention and are known per se, they are not described in detail.
In the cover 35 also open pipes 28 for the supply of compressed air, oxygen or another gas, and the covers are lieren with valves 29 for Regu and see ver releasing the gas from the vessels.
The device described works as follows: The water is stirred in the stirred tank 19 with water and drained through the metering valve 20 in the prescribed amount into the stirred vessel 21. At the same time, the flour metering device 22 supplies the mixing vessel 21 with the required amount of flour. The mass stirred in the vessel 21 flows into the distributor 23, where it is divided into two parts, one of which is fed into the fermentation vessel 27 by the dosing device 24 and the other into the fermentation vessel 26.
As soon as the arches of the two vessels are filled with the mass, the pressure in the inlet parts of the vessels increases as a result of the steady rise in the mass. In the inlet parts, an air or gas cushion is formed, pressing on the surface of the mass. This increases the mass in the outlet parts of the two vessels more than in the inlet parts.
Since the pressure of the air or gas cushion on the surface of the mass in both vessels can be precisely regulated on the one hand by the outlet valves 29 and on the other hand by supplying compressed air through the tubes 28, it is possible to determine the length of time in which the mass can flow out of the outlet parts of one or the other fermentation vessel, d.
