Verfahren und Maschine zum Abbinden von Würsten Die Erfindung bezieht sich auf ein Ver fahren und eine Maschine zum Abbinden von Würsten. Derartige Maschinen sind in ver schiedenen Ausführungen bekannt. Diese konnten sich jedoch bis jetzt nicht durch setzen,, weil einerseits das Gewebe der Natur därme stellenweise nicht kräftig genug ist, um den rasch erfolgenden Schnurzug aus zuhalten,
so dass die Därme leicht aufplatzen und anderseits Kunstdärme mit den erforder lichen Eigenschaften-für die in Frage kom menden Wurstarten noch nicht existieren. In letzter Zeit ist es jedoch gelungen, Kunst därme herzustellen, die für die in Frage kom menden Wurstsorten brauchbar sind und eine gleichmässigere und höhere Festigkeit aufweisen als Naturdärme, so dass ein maschi nelles Abbinden der Würste in Kunstdärmen heute eher Erfolg verspricht.
Die Voraus setzung für einen Erfolg ist jedoch auch bei der Verwendung von Kunstdärmen davon abhängig, dass der Darm bei der Verschnü rung weitgehend geschont wird, und dass die Schnurenden derart geknüpft werden, dass der Knoten beim Kochen und Räuchern der Würste nicht aufgeht.
Die früher vorgeschla genen, vollautomatisch arbeitenden Maschi nen erschienen nicht zweckmässig, weil es vorzuziehen ist, die Maschine durch eine Aufsichtsperson zu bedienen, welche den Darm vor dem Abbinden überprüft, ob der selbe nicht zu prall gestopft ist und ob eventuell an einer schwachen Stelle des Darmes die mechanische Bindung unter bleiben soll, um ein Aufplatzen-des Darmes zu verhindern, da beim Aufplatzen eines Darmes Verunreinigungen der Maschine ent stehen, deren Behebung zeitraubende Stö rungen verursachen.
Bei dem vorliegenden Verfahren wird zur Schonung des Darmes die Schnur mindestens zweimal um den Darm geführt, bevor das Knoten der Schnur erfolgt, und zwar- erfindungsgemäss derart, dass die Umschnürung durch eine Schnur, die von einer den Darm umkreisenden Zange gehalten ist, bei der ersten Umdrehung mit einem derart geringen Schnurzug erfolgt, dass:
der Darm nur etwa um die Hälfte seines Darm durchmessers eingeengt wird, während die zweite Umdrehung und der Knoten bei einem Schnurzug erfolgt, der das fertige Abbinden ermöglicht, wobei der Knoten durch Unter ziehen des von der Zange. freigegebenen Schnuranfanges erzeugt wird.
Da die Umschnürung in zwei Umdrehun gen erfolgt, muss für das Knüpfen und das Abschneiden der Schnur und das Wieder erfassen des aus der Schnurdüse vorstehenden Schnuranfanges eine dritte Umdrehung vor gesehen sein, wobei die den Darm umkrei sende Schnurzange still stehen. oder leer kreisen kann.
Die zur Ausübung des Ver fahrens erforderliche Einrichtung kennzeich net sich durch eine Schnurzuführung mit einer automatisch gesteuerten Bremseinrich- tung, eine um die Wurst kreisende Schnur- zange, einen Schnurfanghaken und ein Schnurabschneideorgan, welche mittels Kur venscheiben derart gesteuert sind, dass bei der zweiten Umdrehung des Schnurhalters die Schnurklemme an die Schnurdüse an gedrückt wird,
im letzten Viertel der zweiten Umdrehung der Fanghaken sich in die Fang stellung bewegt und bei Beginn der dritten Umdrehung der Fanghaken die Schnur erfasst und den Knoten zuzieht, worauf die kreisende Zange das Schnurende freigibt und vor Be endigung des Abbindevorganges den aus der Düse vorstehenden Schnuranfang erfasst.
In beiliegender Zeichnung ist schematisch ein Ausführungsbeispiel der Maschine ,und die verschiedenen Phasen des Bindevorganges dargestellt. Es zeigt Fig. 1 eine Frontansicht der Maschine, Fig. 2 ehze Seitenansicht derselben, Fig. 3 die Teile zur Bewegung des Knüpf hakens, Fig. 4 eine Ansicht in Pfeilrichtung von Fig. 3,
Fig. 5 die zusätzliche Schnurbremse, Fig. 6 einen Schnitt nach Linie I-1 in Fig. 1 durch den Führungswinkel, Fig. 7 die Schere zum Abschneiden der Schnur, Fig. 8 die Auslösevorrichtung für die Ein tourenkupplung, Fig. 9 einen Schnitt durch die Darm führung, ,
Fig. 10 bis 17 zeigen die einzelnen: Sta dien des Binde- und des Knüpfvorganges. Auf der Tischplatte 1, Fig. 1 und 2, ist ein Winkel 2, Fig. 9, befestigt, der eine Büchse 3 aufweist, durch welche der gefüllte Darm der Wurst W geschoben wird. Auf der Büchse 3 ist ein Zahnrad. 4 drehbar gelagert, welches durch den Ring 5 seitlich geführt ist.
An der Nabe des Zahnrades 4 ist ein Arm 6 an geordnet, in welchem die Schnurzange Z ge lagert ist. Diese besteht aus der Büchse 7, in welcher der Hakenbolzen 8 verschiebbar ge lagert ist und mittels der Feder 9 gegen die Stirnseite der Büchse 7 gedrückt wird, so dass die Schnur S eingeklemmt wird. Zum Öffnen der Zange dient ein Kurvenstück 10, das an dem Doppelhebel 12 befestigt ist.
Der Hebel 12 ist auf der Welle 13 drehbar gelagert und an seinem untern Ende mit einer Laufrolle 14 versehen, welche auf der Kurvenrippe 15 der Kurvenscheibe 16 abläuft, wodurch die Schnurzange im geeigneten Moment geöffnet bzw. geschlossen wird. Zum Antrieb des Zahn rades 4 dient das Zahnrad 18, welches auf der Welle 19 lose drehbar gelagert ist.
Das Rad 4 ist dreimal kleiner als das Rad 18, so dass bei einer Umdrehung des Rades 18 das gaad 4 drei Umdrehungen ausführt, wodurch die Schnurzange die Wurst W dreimal umkreist. Der Antrieb des Rades 4 erfolgt über das Rad 18, welches durch die Mitnehmerscheibe 20, welche auf der Welle 19 aufgekeilt ist, durch Riemen oder dergleichen dauernd angetrie ben wird. An dem Zahnrad 18 ist eine Klinke 22 angeordnet, welche durch die Feder 23 in den Sperrzahn 21 der Mitnehmerscheibe 20 gedrückt wird.
Der Bolzen 24, Fig. 2 und 8, kann in den Bereich des Klinkenschwanzes 25 geschoben werden, so dass der Sperrzahn 22 mit dem Sperrzahn 21 der Mitnehmerscheibe 20 ausser Eingriff kommt. Der Bolzen 24 ist in dem Support 28 verschiebbar gelagert und mit einer Zahnung versehen, in welche die Zähne des Zahnkolbens 29 des Bolzens 30 eingreifen. Der Bolzen 30 ist mit einer zweiten Zahnung 31 versehen, in welche die Zahn stange 33 eingreift. Die Zahnstange 33 wird mittels der Feder 35 nach oben geschoben und kann durch Druck auf den Druckknopf 36 nach unten gedrückt werden.
Durch die Feder 35 wird somit indirekt der Bolzen 24 immer in die in Fig. 2 gezeichnete Stellung gedrückt, so dass die Klinke 22 ausser Eingriff ist. Durch momentanes Niederdrücken des Knopfes 36 wird der Klinkenschwanz 25 frei gegeben, so dass die Klinke 22 gegen den Sperrzahn 21 der Mitnehmerscheiba 20 stösst, wodurch das Rad 18 eine Umdrehung macht.
Da in der Zwischenzeit der Druckknopf 36 wieder losgelassen wird, stösst der Klinken schwanz 25 gegen den Bolzen 24 und löst die Klinke aus. Anstatt den Bolzen 24 durch den Druckknopf 36 zu betätigen, kann auch eine Magnetspule 38 vorgesehen sein, die den Bolzen 24 zurückzieht. Für diesen Fall ist der Bolzen 24 dann mit einer Feder zu versehen, welche ihn wieder in die Ausrückstellung drückt.
Während des Wickelvorganges ist es er forderlich, dass die Schnurdüse D eine Be wegung ausführt, damit die zulaufende Schnur S der rotierenden Zange Z ausweicht. Zu diesem Zwecke ist die Schnurdüse D an einem Doppelhebel 42 befestigt, der ebenfalls auf der Welle 13 drehbar gelagert ist und an seinem untern Ende eine Rolle 44 aufweist, welche auf der Kurvenrippe 45 der Kurven scheibe 16 abläuft. Die Kurvenscheibe 16 ist auf der Nabe des Zahnrades 18 aufgekeilt. Der Hebel 42 weist ferner einen Arm 46 auf, an dem die Schnurführungsrolle 47 gelagert ist.
Die Düse D ist mit einer Schnurbremse versehen, die beispielsweise durch eine Schraube 48 eingestellt wird. Ferner ist die Düse D mit einer zusätzlichen Schnurbremse 49 versehen, die ein elastisches Organ 50 (Gummipfropfen oder Feder) aufweist. Durch die seitliche Bewegung der Düse D wird das Organ 50 gegen einen Anschlag 52 gedrückt, so dass die Schnur S zusätzlich gebremst wer den kann. Zum Knüpfen der Schnur dient der Knüpfhaken H, welcher an dem Doppelhebel 55 angeordnet ist.
Der Doppelhebel 55 ist in einer drehbaren Gabel 56 gelagert, die in dem Auge 57 des Hebels 58 angeordnet ist. Der Hebel 58, Fig. 3, ist auf der Welle 59 drehbar gelagert und trägt eine Rolle 60, welche auf der Kurvenscheibe 62 abläuft, der auf der Nabe des Zahnrades 18 festgekeilt ist. Der Knüpfhaken H muss eine in Fig. 1 mit 63 strichpunktiert gezeichnete Bahn beschreiben und dabei noch eine Seitenbewegung aus führen. Zu diesem Zwecke ist das untere Hebelende 55a, Fig. 3 und 6, mit Zapfen 64 und 65 versehen.
Der Zapfen 64 greift in den Schlitz 66 des Winkels 67, welcher Schlitz dem Hakenweg 63 entspricht, während der Zapfen 65 in dem Schlitz 68 des Winkels 67 geführt ist und zur seitlichen Führung und Bewegung des Knüpfhakens dient. Der Winkel 67 ist mittels einem Halter 69 unter der Tischplatte 1 befestigt. Zum Festhalten der Schnur ist der Knüpfhaken H- als Zange ausgebildet und der klemmende Teil ist über einen Draht 71, Fig. 3, mit einem Doppel hebel 72 verbunden, der an Hebel 58 mittels dem Bolzen 73 schwenkbar gelagert ist.
Der Doppelhebel 72 weist einen Arm 74 mit einer Nase 74a auf, die auf einer Kurve 75, die seitlich an der Kurvenscheibe 62 angeordnet ist, abläuft. Diese Kurve 75 bewirkt das Fest halten der Schnur 8 durch den Knüpfhaken H während des Knüpfvorganges. Nach er folgtem Knüpfen muss die Schnur S ab geschnitten werden. Hierzu dient eine Schere g, Fig. 1 und Fig. 7, die aus dem Hebel 80 und dem beweglichen Scherenteil 82 besteht.
Der Hebel 80 ist auf der Welle 13 verstiftet. Ebenfalls auf der Welle 13 ist der Hebel 83, Fig. l., verstiftet, und dessen Rolle 84 läuft auf der Kurvenrippe 85 der Kurvenscheibe 16. Durch die Bewegung des Hebels 83 dreht sich die Welle 13 und damit auch der auf dieser verstiftete Hebel 80,.so dass die Schere in den Bereich der abzuschneidenden Schnur ,S' -geschwenkt wird.
Der Scherenteil 82 ist mittels dem Bolzen 87, Fig. 7, an dem Hebel 80 beweglich befestigt, und die Feder 88 dient dazu, die Schere im geeigneten Moment zu schliessen. Da dieser Moment ziemlich kurz ist, erfolgt das Schliessen der Schere durch die Feder 88 plötzlich. Zu diesem Zwecke weist der Hebel 80 einen Arm 89 auf, an welchem eine Sperrklinke 90 angeordnet ist, welche den Scherenteil 82 in der ausgezogenen Stel lung festhält.
Die Klinke 90 wird durch eine nicht näher gezeichnete Torsionsfeder nach oben gedrückt. Der Hebel 80 wird durch die Feder 92 in die gezeichnete Lage gezogen und durch die Kurve 85 der Kurvenscheibe 16 in die strichpunktierte Stellung gedrückt. Bei diesem Weg stösst die Sperrklinke 90 gegen einen Anschlag 93 und gibt im letzten Mo ment der Bewegung des Hebels 80 den Scherenteil 82 frei, so dass die Feder 88 die Schere schliesst und die Schnur abschneidet.
Nach erfolgtem Schnurabschnitt wird der Hebel 80 durch die Feder 92 wieder in die Ruhestellung gezogen, wobei der bewegliche Scherenteil 82 gegen den Anschlag 90a, Fig. 7, stösst und durch diesen in die offene Lage gedrückt und durch die Klinke 90 in dieser festgehalten wird.
In den Fig. 10 bis 17 sind die verschiede nen Phasen des Abbind- und Knüpfvorganges veranschaulicht. Beim Beginn eines Abbind- vorganges ist, wie in Fig. 10 ersichtlich, die Schnur S in der Zange Z gehalten. Nach einer Umkreisung der Zange Z um die Wurst W hat die Schnur S die Wuist ungefähr um die Hälfte ihres Durchmessers eingeschnürt.
.\bevor die erste Umdrehung vollendet ist, wild die Düse D nach vorn bewegt, damit.die Zange unter dem aus der Düse heraustreten den Schnurteil vorbeigleiten _ kann. Dabei stösst die zusätzliche Bremse 49 mit dem Organ 50 gegen den Anschlag 52 (Fig. 5) und bremst die Schnur zusätzlich.
Bei der Weiter drehung der Zange Z wird, wie aus Fig. 12 ersichtlich, der Darm, da der Schnurzug straffer ist, enger zusammen geschnürt, und der Knüpfhaken H begimzt seinen Weg, um das Trum S,., Fig. 12, zu fangen. 'Nach der Stellung der Zange in Fig. 12 macht der Knüpfhaken eine raschere Bewegung als die Zange;
er geht unter dem Trum S,. hindurch und über das Schnurtrum S. hinweg, Fig. 13. In Fig. 14 hat der Knüpfhaken das Trum <B>8,</B> bereits erfasst. Gleichzeitig wird durch die Kurve 10 des Hebels 12, Fig. 1, die Zange Z geöffnet, so dass der Knüpfhaken das Schnur ende aus der Zange herausziehen kann.
Die Zange Z macht nun eine Umkreisung ohne Schnur, während welcher der Knüpfhaken H das Schnurtrum S, zu einer Schlinge zuzieht, Fig. 15.
Bevor die Zange Z ihre Umkreisung vollendet hat, wird die Schnur S zwischen Düse<I>D</I> und Wurst mittels der Schere<I>X,</I> Fig.16, abgeschnitten. Der zwischen der Schneidstelle und Düse vorstehende Schnur teil wird nun vor Schluss der dritten Um drehung der Zange Z von dieser wieder ge fasst und festgeklemmt, wie aus Fig. 17 er- sichtlich ist, worauf nach Ablauf der dritten Umkreisung, d. h.
einer Umdrehung des Zahnrades 18 durch den Bolzen 24 die Klinke 22 ausgelöst wird und die Maschine still steht. Nunmehr kann die Wurst W um eine Ab- bindlänge vorgeschoben werden und hierauf durch Druck auf den Knopf 36 oder durch Einschalten des Stromkieises des Magnetes 38 die Maschine erneut eingeschaltet werden.

The previously proposed, fully automatic machines did not seem appropriate because it is preferable to have the machine operated by a supervisor who checks the casing before it is tied, whether it is not too tightly stuffed and whether it is possibly at a weak point Intestine, the mechanical bond should remain underneath in order to prevent the intestine from bursting, since when the intestine bursts the machine will be contaminated and rectifying them will cause time-consuming malfunctions.

Fig. 10 to 17 show the individual: Stages of the binding and knotting process. On the table top 1, Fig. 1 and 2, an angle 2, Fig. 9, is attached, which has a sleeve 3 through which the stuffed casing of the sausage W is pushed. On the sleeve 3 is a gear. 4 rotatably mounted, which is guided by the ring 5 laterally.
At the hub of the gear 4, an arm 6 is arranged in which the cord tongs Z is superimposed ge. This consists of the sleeve 7, in which the hook bolt 8 is displaceably superimposed and is pressed by means of the spring 9 against the face of the sleeve 7, so that the cord S is clamped. A cam piece 10, which is attached to the double lever 12, is used to open the pliers.
The lever 12 is rotatably mounted on the shaft 13 and is provided at its lower end with a roller 14, which runs on the cam rib 15 of the cam disk 16, whereby the cord tongs are opened or closed at the appropriate moment. To drive the gear wheel 4, the gear 18, which is loosely rotatably mounted on the shaft 19 is used.
The wheel 4 is three times smaller than the wheel 18, so that with one revolution of the wheel 18 the gaad 4 executes three revolutions, whereby the string tongs circle the sausage W three times. The drive of the wheel 4 takes place via the wheel 18, which is continuously driven ben by the drive plate 20, which is keyed on the shaft 19, by belts or the like. A pawl 22 is arranged on the gear wheel 18 and is pressed by the spring 23 into the ratchet tooth 21 of the drive plate 20.
The bolt 24, FIGS. 2 and 8, can be pushed into the area of the pawl tail 25, so that the locking tooth 22 disengages from the locking tooth 21 of the drive plate 20. The bolt 24 is displaceably mounted in the support 28 and is provided with teeth into which the teeth of the toothed piston 29 of the bolt 30 engage. The bolt 30 is provided with a second set of teeth 31 into which the toothed rod 33 engages. The rack 33 is pushed up by means of the spring 35 and can be pushed down by pressing the push button 36.
By means of the spring 35, the bolt 24 is thus always pressed indirectly into the position shown in FIG. 2, so that the pawl 22 is disengaged. By momentarily depressing the button 36, the pawl tail 25 is released so that the pawl 22 abuts against the ratchet tooth 21 of the driver disc 20, whereby the wheel 18 makes one revolution.
Since in the meantime the push button 36 is released again, the pawl pushes tail 25 against the bolt 24 and triggers the pawl. Instead of actuating the bolt 24 by the push button 36, a magnetic coil 38 can also be provided which pulls the bolt 24 back. In this case, the bolt 24 is then to be provided with a spring which presses it back into the disengaged position.
During the winding process it is necessary that the cord nozzle D executes a movement so that the incoming cord S gives way to the rotating tongs Z. For this purpose, the cord nozzle D is attached to a double lever 42 which is also rotatably mounted on the shaft 13 and has a roller 44 at its lower end, which disc 16 runs on the cam rib 45 of the curves. The cam 16 is keyed onto the hub of the gear 18. The lever 42 also has an arm 46 on which the cord guide roller 47 is mounted.
The nozzle D is provided with a cord brake, which is adjusted by a screw 48, for example. Furthermore, the nozzle D is provided with an additional cord brake 49, which has an elastic member 50 (rubber plug or spring). The lateral movement of the nozzle D presses the member 50 against a stop 52 so that the cord S can also be braked. The knotting hook H, which is arranged on the double lever 55, is used to tie the cord.
The double lever 55 is mounted in a rotatable fork 56 which is arranged in the eye 57 of the lever 58. The lever 58, FIG. 3, is rotatably mounted on the shaft 59 and carries a roller 60 which runs on the cam disk 62 which is wedged onto the hub of the gear wheel 18. The knotting hook H must describe a path shown in Fig. 1 with 63 dash-dotted lines and still perform a lateral movement. For this purpose, the lower end of the lever 55a, FIGS. 3 and 6, is provided with pins 64 and 65.
The pin 64 engages in the slot 66 of the angle 67, which slot corresponds to the hook path 63, while the pin 65 is guided in the slot 68 of the angle 67 and serves for the lateral guidance and movement of the knot hook. The angle 67 is fastened under the table top 1 by means of a holder 69. To hold the cord in place, the knot hook H- is designed as a pair of pliers and the clamping part is connected via a wire 71, FIG. 3, to a double lever 72 which is pivotably mounted on lever 58 by means of the bolt 73.
The double lever 72 has an arm 74 with a nose 74a, which runs on a curve 75 which is arranged on the side of the cam 62. This curve 75 causes the tight hold of the cord 8 by the knotting hook H during the knotting process. After it has been knotted, the cord S must be cut. A pair of scissors g, FIGS. 1 and 7, which consists of the lever 80 and the movable scissor part 82, is used for this purpose.
The lever 80 is pinned to the shaft 13. The lever 83, FIG. 1, is also pinned to the shaft 13, and its roller 84 runs on the cam rib 85 of the cam disk 16. The movement of the lever 83 rotates the shaft 13 and thus also the lever 80 pinned to it so that the scissors are swiveled 'S' into the area of the cord to be cut.
The scissor part 82 is movably attached to the lever 80 by means of the bolt 87, FIG. 7, and the spring 88 serves to close the scissors at the appropriate moment. Since this moment is rather short, the spring 88 closes the scissors suddenly. For this purpose, the lever 80 has an arm 89 on which a pawl 90 is arranged which holds the scissors part 82 in the extended Stel development.
The pawl 90 is pressed upwards by a torsion spring (not shown). The lever 80 is pulled into the position shown by the spring 92 and pressed into the dot-dash position by the curve 85 of the cam disk 16. In this way, the pawl 90 hits a stop 93 and releases the scissors part 82 in the last moment of the movement of the lever 80 so that the spring 88 closes the scissors and cuts the cord.
After the cord section has been completed, the lever 80 is pulled back into the rest position by the spring 92, the movable scissor part 82 pushing against the stop 90a, FIG. 7, and being pressed into the open position by this and being held there by the pawl 90.
In FIGS. 10 to 17, the various phases of the binding and knotting process are illustrated. At the beginning of a binding process, as can be seen in FIG. 10, the cord S is held in the pliers Z. After the tongs Z have been circled around the sausage W, the cord S has constricted the sausage by approximately half its diameter.
