<B>Machine</B> à attendrir <B>la viande</B> Il existe des machines à attendrir la viande comportant un faisceau de lames parallèles, à la fois pointues et tranchantes latéralement, qui sont tenues dans un coulisseau susceptible d'être abaissé sur un plateau de bois recevant la viande à traiter ; le coulisseau est commandé à la main au moyen d'un levier qui y est ac couplé par une biellette.
Le débit de ces machines n'est pas grand et leur manoeuvre est fatigante pour l'opérateur. La présente invention vise à fournir une machine plus commode et qui permette no tamment d'assurer une répartition plus serrée, dans la viande, des fentes pratiquées par les lames.
Cette machine qui comprend un faisceau de lames destiné à travailler une pièce de viande disposée sur une table, à la suite de l'abais sement de ce faisceau de lames en direction de cette table, est caractérisée en ce que ladite table est constituée par un transporteur sans fin.
Le dessin représente, à titre d'exemple, une forme d'exécution de la machine objet de l'invention.

La machine représentée comporte un socle creux 1, de forme allongée, qui supporte, d'un côté, deux colonnes 2 ; sur ces colonnes peut monter et descendre un coulisseau com posé d'un bras 3 et d'un porte-lames 4, celui-ci étant déplaçable latéralement, d'une faible am plitude, le long de guides 5 qui lui servent de support ; dans le porte-lames 4 sont tenues, par une extrémité, des lames 6, pointues à l'au tre extrémité. Les lames sont aussi appelées couteaux. Sur un axe porté par le bras 3 peut tourner un rochet 7, à douze dents, solidaire d'une came 8 à sectiôn hexagonale, le rochet muni d'un cliquet (non représenté) empêchant la rotation rétrograde.
De son côté, une partie fixe de la machine, par exemple un carter 25, porte des ergots 10 engagés dans des ouvertures oblongues d'une plaquette 9, sollicitée vers la gauche (fig. 6) par un ressort 11; la- plaquette 9 présente une échancrure à bords obliques 12, dans laquelle peut pénétrer un ergot 13 soli daire du porte-lames 4. Le socle 1 est pourvu d'un doigt élastique 14 dont l'extrémité libre est sur le trajet du pourtour du rochet 7.
Dans la position de la fig. 6, la plaquette 9 est appliquée par le ressort 11 contre un plat de la came 8 et le porte-lames 4 est à bout de course vers la gauche. Lorsque le coulisseau descend, la came 8 se sépare de la plaquette, puis le rochet 7 rencontre le doigt 14, ce qui le fait tourner d'une dent ; la came 8 est alors amenée dans la position de la fig. 7 ; lors de la montée, la plaquette 9 rencontre l'arête 26 de la came 8 qui la pousse vers la droite et l'ergot 13, en s'engageant dans l'échancrure 12, pousse le porte-lames 4 à bout de course vers la droite. Il sera ainsi déplacé pour le mouve ment de descente suivant.
Au cours de celui-ci, la came 8 se trouve ramenée à la position de la fig. 6, ce qui provoque, en fin de montée, le retour du porte-lames à sa première posi tion. Sous le porte-lames 4 est prévu un presse- flanc 15 destiné à dégager des lames la viande qui vient d'être perforée, affectant la forme d'une grille que peuvent traverser les lames, ce presse-flanc étant supporté par des tiges 16 susceptibles de coulisser dans le porte-lames et munies, en haut, d'un écrou de réglage 16a ;
des ressorts 17 sont interposés entre la face inférieure du porte-lames et la face supérieure du presse-flanc.
Le socle 1 est ouvert à sa partie supérieure et ses faces longitudinales présentent des re bords 18 pour guider marginalement un tablier ou tapis transporteur 19 passant sur trois rou leaux 20, 21, 22, le rouleau 21 étant muni de paliers 23 déplaçables au moyen de vis 24 pour le réglage de la tension.
Le rouleau 20 est destiné à l'entraînement intermittent du tapis 19 et, à cet effet, il est accouplé à un plateau rotatif 27, muni de che villes 28 destinées à être déplacées une à une par un doigt 41, solidaire d'un volant 29 ; l'arbre 30 du volant 29 est entraîné par un moteur 31, monté dans le socle 1, par l'inter médiaire d'un réducteur de vitesse 32 et d'un couple d'engrenages 33. Le mouvement inter mittent d'avance du tapis est synchronisé avec le mouvement des couteaux, de manière que le tapis soit immobilisé pendant que les cou teaux pénètrent, puis se dégagent du morceau de la viande.
Le tapis 19 comporte un brin ascendant 19a, en pente douce, et un brin horizontal 19b sous le faisceau de lames ; on dépose l'un der rière l'autre les morceaux de viande 34 sur le brin ascendant 19a pour qu'ils passent tour à tour sous les lames et soient soumis à leur action. Les organes d'entraînement sont, de préférence, calculés de façon que chaque mou vement d'avance du tapis ait une amplitude correspondant à la moitié de l'épaisseur du faisceau de lames, comptée dans le sens de progression du tapis, ce qui garantit que chaque endroit de la viande est effectivement coupé deux fois.
Un accouplement à roue libre peut être prévu entre le rouleau 20 et le plateau 27, tan dis que le rouleau peut être muni d'une mani velle, de manière à pouvoir donner au tapis roulant, par une action manuelle, un déplace ment plus rapide que celui qui résulte de l'en traînement par le plateau, notamment pour amener rapidement le morceau de viande sous les couteaux. Le volant 29 peut être accouplé au cou- lisseau par une bielle 36 qui en commande le va-et-vient en synchronisme avec l'avance in termittente du tapis ; au lieu d'agir sur une bielle, le volant peut porter un axe muni d'un galet agissant sur la barre horizontale d'un cadre solidaire du coulisseau.
Il y a avantage à prévoir, dans le socle 1, un dispositif de nettoyage comprenant, par exemple, une brosse rotative 37, plongeant dans l'eau contenue dans une cuve 38; une raclette 39 peut être prévue en aval de la brosse et, le cas échéant, une autre raclette 40 en amont.
Dans une variante, la mobilité transversale, au lieu d'être donnée au coulisseau, pourrait l'être au tapis ou au châssis qui le porte.
De même, la brosse rotative 37 pourrait être remplacée par un rouleau spongieux ou tout autre dispositif de nettoyage.

The flow of these machines is not great and their operation is tiring for the operator. The present invention aims to provide a more convenient machine which makes it possible in particular to ensure a tighter distribution, in the meat, of the slits made by the blades.
This machine which comprises a bundle of blades intended to work a piece of meat placed on a table, following the lowering of this bundle of blades in the direction of this table, is characterized in that said table is constituted by a endless transporter.
The drawing represents, by way of example, an embodiment of the machine which is the subject of the invention.

The machine shown comprises a hollow base 1, of elongated shape, which supports, on one side, two columns 2; on these columns can go up and down a slide com posed of an arm 3 and a blade holder 4, the latter being movable laterally, with a low amplitude, along guides 5 which serve as a support; in the blade holder 4 are held, by one end, blades 6, pointed at the other end. The blades are also called knives. On an axis carried by the arm 3 can turn a ratchet 7, with twelve teeth, integral with a cam 8 with a hexagonal section, the ratchet provided with a pawl (not shown) preventing retrograde rotation.
For its part, a fixed part of the machine, for example a housing 25, carries lugs 10 engaged in oblong openings of a plate 9, biased towards the left (FIG. 6) by a spring 11; the plate 9 has a notch with oblique edges 12, into which can penetrate a lug 13 integral with the blade holder 4. The base 1 is provided with an elastic finger 14, the free end of which is on the path of the periphery of the blade. ratchet 7.
In the position of FIG. 6, the plate 9 is applied by the spring 11 against a flat of the cam 8 and the blade holder 4 is at the end of its travel to the left. When the slide goes down, the cam 8 separates from the plate, then the ratchet 7 meets the finger 14, which makes it turn by one tooth; the cam 8 is then brought into the position of FIG. 7; during the ascent, the plate 9 meets the edge 26 of the cam 8 which pushes it to the right and the lug 13, by engaging in the notch 12, pushes the blade holder 4 at the end of its travel towards the right. It will thus be moved for the next descent movement.
During this, the cam 8 is returned to the position of FIG. 6, which causes, at the end of the ascent, the return of the blade holder to its first position. Under the blade holder 4 is provided a sidewall press 15 intended to release from the blades the meat which has just been perforated, in the form of a grid that the blades can pass through, this sidewall press being supported by rods 16 capable of sliding in the blade holder and fitted, at the top, with an adjusting nut 16a;
springs 17 are interposed between the lower face of the blade holder and the upper face of the sidewall press.
The base 1 is open at its upper part and its longitudinal faces have re edges 18 for marginally guiding an apron or conveyor belt 19 passing over three rollers 20, 21, 22, the roller 21 being provided with bearings 23 movable by means of screw 24 for tension adjustment.
The roller 20 is intended for the intermittent drive of the belt 19 and, for this purpose, it is coupled to a rotary plate 27, provided with che towns 28 intended to be moved one by one by a finger 41, integral with a flywheel 29; the shaft 30 of the flywheel 29 is driven by a motor 31, mounted in the base 1, through the intermediary of a speed reducer 32 and a pair of gears 33. The intermittent advance movement of the mat is synchronized with the movement of the knives, so that the mat is immobilized while the knives enter and then release from the piece of meat.
The belt 19 comprises an ascending strand 19a, gently sloping, and a horizontal strand 19b under the bundle of blades; the pieces of meat 34 are placed one behind the other on the ascending strand 19a so that they pass in turn under the blades and are subjected to their action. The drive members are preferably calculated so that each advance movement of the belt has an amplitude corresponding to half the thickness of the bundle of blades, counted in the direction of advance of the belt, which guarantees that each place of the meat is effectively cut twice.
A freewheel coupling can be provided between the roller 20 and the plate 27, while the roller can be provided with a crank, so as to be able to give the conveyor belt, by manual action, a faster movement. that which results from the dragging by the plate, in particular to quickly bring the piece of meat under the knives. The flywheel 29 can be coupled to the slide by a connecting rod 36 which controls its reciprocation in synchronism with the in termittent advance of the belt; instead of acting on a connecting rod, the flywheel can carry a pin provided with a roller acting on the horizontal bar of a frame integral with the slide.
It is advantageous to provide, in the base 1, a cleaning device comprising, for example, a rotating brush 37, immersed in the water contained in a tank 38; a squeegee 39 may be provided downstream of the brush and, where appropriate, another squeegee 40 upstream.
In a variant, transverse mobility, instead of being given to the slide, could be given to the belt or to the frame which carries it.
Likewise, the rotating brush 37 could be replaced by a spongy roller or any other cleaning device.
