Abstract

Process for the injection of fluids, such as brine, seasoning etc., into pieces of meat, such as hams, belly pork etc. is effected on a machine which comprises a table with an enedless chain conveyor, which carries the meat forward, step by step, under a collector for the fluid. Thisis moved up and down by arms, operated by a piston, and carries the needles, placed close together, into the meat where small quantity of fluid is released at each point. The needles are arranged in rows and are placed at a distance of 5-6 mm from each other, the positions of the needles in one row are staggered with respect to those in the next. When the pieces of meat is advanced, the liq. is injected at points between those already injected. The process is very efficient and the injection is effected in a uniform manner at points very close together; the liq. only flows from the needles when these have been lowered into the meat.
