<B>Verfahren</B> zur Herstellung <B>von</B> Backwaren. Die Erfindung bezieht sich auf ein Ver fahren zur Herstellung von Backwaren aus Teig.
Backwaren werden gewöhnflicli in Ofen gebacken, wobei demnach die Wärme von aussen allmählich in das Innere des Teiges eindringt. Man hat bereits ein Verfahren zum Prüfen von Teig vorgeschlagen, bei ,dem der selbe durch direkte Durchführung von Weeh- sel-erom gebacken wird (vgl. Baker, Cereal Chemistry, Band 16, 1939, Seite 513 ff.).
Bei diesem Verfahren ist jedoch keine Rede von einem Backen mit, direktem Stromdurehga.ng zwecks einer normalten, betriebsmässigen Her stellung von Backwaren gewesen.
Weiter wurde, im bekannten Verfahren versucht., die Vorgänge, die sich beim gewöhn liehen Bäekofenverfahren abspielen, so weit wie möglich nachzuahmen, Es, wurden des halb Backzeiten von einer Stunde und mehr angewendet (Baker, 1. c. .Seite '5:16).
Die vorliegende Erfindumg beruht auf der Erkenntnis, dass das Backverfahren mittels direktem. Durchgang von Wechselstrom vor teilhaft zur betriebsmässigen Herstellung von Backwaren aus Teig benutzt, und dass da durch die Zeit zum Backenstark vermindert werden kann.
Dias erfiiiidungsge@mässe: Verfahren zur Her- stelhing von Backwarfen aus Teig mittels di rektem Durchgang von Werhsel'strom durch dien Teig ist .dadurch gekennzeichnet, dass .man den Teig mit Strom, der einen Spannungs- äradienten von mindestens 15 V/em hat, be handelt.
Ferner betrifft die Erfin:d!ung eine Vor richtung zur Durchführung des erfindungs gemässen Verfahren:, welche dadurch gekenn- zeicluiet ist, dass sie ein endlloses, horizontales, isolierendes Transportband, seitlich daran an schliessend zwei senkrechte, elektrisch lei tende Transportbänder,
die ads Elektroden für den Stromdurchgang durch dien zu backenden Teig dienen, und Mittel zur Zuführung des Teiges: auf weist, woraus der Teig durch min destens eine Öffnung in -den Raum zwischen -die Transportbänder gelangt.
Aus den Angaben von Baker geht hervor, da.ss bei dem betreffenden Verfahren ein Spannungsgradient von ungefähr 1:0 V/em angewendet wurde (Entfernung zwischen den Elektroden 11,4 cm, Spannung 1\10 V), wobei eine Backzeit von ungefähr <B>80</B> Min. er'forder- lich war;
diese Backzeit entspricht der Back zeit in einem mit Strahlungswärme- arbeiten den Ofen, was, Baker (Seite 515) auch be zweckt. Bei dem erfindungsgemässen Ver fahren wird nun, wie gesagt, ein Spannungs gradient von mindfestens 15 V/em, z. B:, von 45-70 V/em, von<B>6</B>0 V/-ein an gewendet.
Man kann aber auch ohne Beden ken über 70 V/em gehen. Bei 60 V/em kann man mit einer Backzeit von ungefähr 2 Min. auskommen.
Dies gilt insbesondere für Ba,ekwaren wie Brot und Honi,gkuehem (Frühstückskuchen). Auch für Backwaren wie Gesundhtitskuehen ( cake ) treten die Vorteile der Erfindung 9ta,rk hervor.
Beim Backen von @Gesundheitekuchen ( .caks ) in einem. mit,Str.ahäungswärme ar beitenden Ofen muss- dieser sehr langsam er wärmt .werden, weil der Teig sonst verbrannt wird und infolgedessen harte und schlecht schmeckende Krusten. entstehen: Wenn das erfindungsgemässe elektrische Backverfah- ren angewendet wird, ist die Backzeit viel kürzer.

Bei der Durchführung ,les erfindungs gemässen Verfahrens ist @es manchmail er wünscht, wegen gewissen elektrolytischen Wirkungen, Wechselstrom mit einer Fre quenz von 100 biss <B>1000</B> oder mehr, statt Strom gewöhnlicher Frequenz (50 oder 00 Perioden) zu verwenden.
Da. die erfindungsgemäss gebackenen Biaekwa.ren keine Kruste aufweisen, wie dies beim Backen. in. einem .mit Strahlungswärme arbeitenden Ofen,der Fall ist, können, wenn erwüns.cht"dze Backwaxen nach .der Behand lung zwecks Bildung einer Kruste durch einen Röstofen geführt werden.
Dieser Röstofen kann mit Stralislungselementen versehen sein, welche mit Gas oder auf elektrischem Wege erhitzt werden. Dieses Röstverfahren erfor dert notürlioh nur sehr wenig Zeit, @da die Bankware bereits gänzlich durchgebacken ist.
Beim erfindungsgemässen Herstellen von Backwaren durch direkte Durchführung von Wechselstrom isst es vorteilhaft, kontinuier- lich zu .arteiteln. Zur kontinuierlichen Durch führung des Verfahrens eignet sich. besonders eine Vorrichtung,der bereits genannten Art.
Wenn das Backverfahren kontinuierlich mit tels einer solchen Vorrichtung durchgeführt wird, wird der Backvorhang sehr einfach und billig, da praktisch ohne Handarbeit ein grosser Durchsatz erzielt wird. Die Arbeit des Personals, kann im wesentlichen auf die Be- aufeichtigung -des Backverfahrens beschränkt werden.
Bei dir kontinuierlichen Durchfüh rung des. Verfahrens kann es zweckmässig ,sein, ausser :dem Backen auch ein allfälliges Rösten, Kühlen, Sägen und/oder Verpacken der Backwaren kontinuierlich ,durchzuführen. Dies gilt insbesondere für die Herstellung von Honigkuchen.
Die durch direkten Stromdurchgang ge backene Ba=ckware ist im allgemeinen, auch wenn.sie vollkommen durchgebacken ist, nur leicht sgefärbt. Es kann, falls erwünscht, durch Zusatz von für die Gesundheit unschädlichen Farbstoffen eine etwas dunklere Farbe er halten werden.
Sch-l.iesslich ist es empfehlenswert, einen Teig mit hohem Wass-er,eha@lt zu verwenden, was im Hinblick auf die Leitfähigkeit des selben wichtig ist. Ferner wollte dier Teig weich sein, da er wegen der kurzen Backzeit sehr rasch aufgebt.
Eine Einrichtung zur Anwendung des er- find'uingsgemässen Verfahrens ist in der Zeich nung schematisch dargestellt, Die in der Zeichnung dargestellte Ein- richtungenthält ein horizontales Transport band 1 ohne Ende und seitlich daran an zwei senluechte, elekti@is ch 1e,i- tende Transportbänder 2' und \2",
welche als Elektroden dienen. Durch ,den Kanal 3, wel cher z. B. in eine Spritzdüse mündet, wird der zu backende Te kg dem Raum zwischen den Transportbändern zugeführt. Der Teig erreicht die Düse über einen Fülltrichter 4 und ein Transportorgan 5, welches bei der -dargestellten Ausführung ähnlich wie eine Kapselpumpe arbeitet.
Zweckmässig werdien,die Elektroden, mit- tels-deren der 'Stromdurchgang durch -den zu b@acliend,en Teig bewerkstelil\igt wird, so au:s- geführt, Jass sie eine niedrige thermische Leit- fähigkeit haben, jedoch genügende elektrische Leitfähigkeit besitzen.
Wenn dies nicht -der Fall ist, ao können zufolge Auftretens von Temperaturunterse.liieden Fehler in der Back ware entstehen. Es ist demnach erwünscht., möt,lichs,t dünne Elektroden zu verwenden.
Wenn i.tillstehend@e Elektroden verwendet werden, an denen die Backware entlang ge führt wird, kann eine Metallfolie, welche auf Platten aus Isoliermaterial festgeklobt ist, benutzt 'erden, während bei Elektroden, welche .durch el'ektriscli leitende Transport bänder gebildet werden, sehr dünnes, gewo benes Kupferband oder rostfreier Stahl, Ver wendung finden kann.
Falls erwünscht, kann das Backen durch direkte Strom@drurchführung kombiniert werden mit -dem Backen in einem elektromaunetischen. Hochfrequenzfel,d oder in einem Kondensatorfedd mit dielektrischen Verlusten oder schliesslieh im F'el,de einer Spule mit.
Wirbelstroinverluaten. Gegen das Ende .des Baekverfahrens durch direkten Stroindurcligangsteigt der Wid'erstajndl des 13ackgtites und -crade dann kommt, wenn man das Backverfahren noch weiter fortzu setzen wünscht, ein Backen mittels. eines Hochfrettuenzfel:dcs usw. in Betracht.
Auch in diesem Falle kann kontinuierlich gearbei tet werden, in dem die Backware mittels eines Transpoi-tbandks zwischen Kondensatorplat- ten oder durch eine: Spule hindurchgeführt wird.
