Backhilfsmittel. Zur Verbesserung der Backfähigkeit von besonders kleberarmen Mehlen, zu denen die meisten europäischen Weizenmehle zählen, haben sich gewisse Zusätze, sei es zum Mehl selbst oder zu dem daraus bereiteten Teig, als erforderlich erwiesen, wenn man nicht zu dem altbekannten Mittel greifen will, die Backfähigkeit solcher kleberarmen Mehle durch Vermischen derselben mit besonders kleberreichen ausländischen Erzeugnissen, wie z. B. Manitobaweizen, zu verbessern.
Als chemische Backhilfsmittel hat man bisher insbesondere die Natrium- und Calciumsalze der Orthophosphorsäure, Bromate, Jodate, Perborate, Persulfate u. a. m. vorgeschlagen, doch sind diese Salze zum Teil gesundheits schädlich, wie die Jodate, Bromate und Per salze,<B>zum</B> Teil ist ihre Anwendung nur bedingt möglich, wie z.
B. die der Natrium und Kaliumsalze der Orthophosphorsäure, teils ist ihre Wirkung auf den Backprozess nur für einen gewissen Vorgang spezifisch, wie die der Caleiumorthopbosphate (vergl. Neumann, Brot und Brotgetreide, 1929, S. 515-518).
Es wurde nun die überraschende Beobach tung gemacht, dass Gemische von wasser löslichen Alkalimetaphosphaten mit löslichen Salzen anderer Phosphorsäuren, wie z. B. wasserlöslichen Pyrophosphaten und / oder Orthophosphaten, ungleich bessere Ergebnisse liefern als die bisher für diesen Zweck vor geschlagenen Salze.
Gegenüber den Salzen der Orthophosphor- säure haben sie, wie Versuche zeigten, be sonders den Vorteil, dass sie ganz allgemein die Backfähigkeit der damit versetzten Mehle, bezw. Teige in hervorragender Weise ver bessern. Sie ergeben z. B. vor allem eine vollkommen gleichmässige und bei allen Mehl sorten gleich günstige Wirkung auf die Volumvermehrung, Gärfähigkeit und die da mit in Zusammenhang stehende Hefeaus nutzung. Sie haben weiter bei Versuchen eine sehr gute Reizwirkung auf die liefe ergeben. Schliesslich ist in der Regel auch die Wasseraufnahmefähigkeit und der Trieb günstiger.
Ein weiterer Vorteil besteht, wie sich zeigte, in ihrer spezifischen Fähigkeit, die Quellbarkeit kolloider Systeme besonders stark zu erhöhen. Die Folge davon ist eine gute Volumvergrösserung des Teiges, beson ders aber eine wesentlich frischere und fein- porigere Krume des Gebäckes. Ein ernährungs physiologischer Vorteil des neuen Verfahrens ist ferner der Ersatz der Phosphorsäure; die durch die feinere Ausmahlung verloren ge gangen ist.
Ein Ausführungsbeispiel des erfindungs gemässen Produktes ist .ein Backhilfsmittel, das aus einem.Gemisch von 60'/o Natrium- metaphosphat, 20% Natriumpyrophosphat und W /o Natriumorthophosphat, das dem Teig zweckmässig in Mengen von 10 bis 50 gr auf 100 kg Mehl zuzusetzen- ist, besteht.
