L'invention concerne des chewing-gums contenant du tréhalose, ainsi que des procédés de fabrication de ces chewing-gums. Selon une forme d'exécution, la gomme comprend environ 5 % à environ 95 % de gomme base, environ 0,1 % à 10 % d'agent aromatisant et de tréhalose, le tréhalose constituant une partie ou la totalité des matières édulcorantes de la gomme. Le tréhalose confère à la gomme des propriétés uniques et la gomme est non cariogène. Dans d'autres formes d'exécution, le tréhalose est séché conjointement avec d'autres édulcorants ou co-évaporé avec un sirop plastifiant en vue de fournir à la gomme des ingrédients édulcorants et des sirops de propriétés uniques. Le tréhalose peut également se présenter sous la forme d'un composé enroulé sur la gomme, ou utilisé pour former un enrobage dur pour une gomme en forme de boulette enrobée.
