- Chewing gum formulations with beta glucans may contain a very low amount of moisture in the gum formulation, i.e., below about 2%, or may contain a medium amount of moisture, about 2-5%, and may even be a soft gum formulation containing 5% moisture or more.
- Beta glucans also acts as a panning modifier with other panning materials to improve product quality.
- Antitack agents may also be added as panning modifiers, which allow the use of a variety of carbohydrates and sugar alcohols to be used in the development of new panned or coated gum products.
- Flavors may also be added with the sugar coating and with the beta glucans sweetener to yield unique product characteristics.

Abstract
L'invention se rapporte à des chewing-gums contenant des bêta-glucanes et aux procédés de fabrication de ces gommes. Selon un mode de réalisation, la gomme comprend environ 5 % à environ 95 % de gomme de base, environ 0,1 % à environ 10 % d'un agent aromatique et d'environ 5 % à environ 95 % d'un agent de gonflement, ce dernier comprenant au moins partiellement des bêta-glucanes. Les bêta-glucanes confèrent à la gomme des propriétés uniques et la gomme peut être non cariogène. Selon d'autres modes de réalisations, les bêta-glucanes sont séchés conjointement avec d'autres agents adoucissants ou sont évaporés avec un sirop plastifiant afin de produire des ingrédients et des sirops uniques au pouvoir sucrant, s'appliquant à la gomme. Les bêta-glucanes peuvent également se présenter sous la forme d'un composé se saupoudrant sur la gomme, ou peuvent être utilisés pour former un revêtement s'appliquant sur la gomme sous forme de paillettes.
