Abstract
Cette invention se rapporte à des compositions alimentaires et à des procédés associés permettant la fabrication de compositions alimentaires, dégraissées ou à faible teneur en graisses, contenant une polyvinylpyrrolidone. Ces compositions alimentaires contiennent de la polyvinylpyrrolidone et d'autres ingrédients tels que des agents stabilisants alimentaires. Les compositions préférées sont des aliments non frits, notamment des produits laitiers, des produits de boulangerie, des sauces pour salades et des produits carnés. Certaines compositions alimentaires spécifiques se présentent, entre autres, sous la forme de crèmes glacées, de muffins et de salades à verser.
