A presente invenção fornece um método de produção de um produto lácteo, consistindo o método em: (a) combinar uma fonte de caseína, pelo menos um açúcar e monoestearato de glicerol (GMS) para formar um produto intermediário e (b) reduzir o pH do produto intermediário para abaixo de 4,6.
