Abstract

''PROCESSO PARA OXIDAçãO DE AMIDO, AMIDO OXIDADO, E, USO DE UM AMIDO OXIDADO'' A invenção diz respeito a um processo para a oxidação de amido, em que um amido de raiz ou de tubérculo compreendendo pelo menos 95% em peso de amilopectina, com base em substância seca do amido, é tratado com um agente oxidante e o produto resultante é submetido a um tratamento alcalino, o tratamento compreendendo manter o produto por pelo menos 15 minutos em uma temperatura de 20 a 50°C e um pH maior do que 10. A invenção também diz respeito a um amido oxidado obtenível pelo processo e a várias aplicações do amido oxidado.
