Processo aperfeiçoado de preparação de capa-caseíno glicomacropeptídeo e derivados do mesmo que compreende o ajuste do pH de uma solução de um material inicial lácteo para um valor inferior a 4, ultrafiltração a frio e concentração do material inicial em um filtro em espiral. Esse processo é utilizável em escala industrial sem problemas de depósito e sem danificar o subproduto de material lácteo utilizável.
