A invenção refere-se a um método e aparelho para aquecer e ferver atmosfericamente o mosto quando fermentando cerveja. Para otimizar o processo de aquecimento e/ou fervura e para obter uma qualidade de mosto ótima, o processo de aquecimento e/ou fervura é realizado de acordo com uma curva de valor alvo, que é armazenada em um dispositivo de controle e que pode ser individualmente gerada pelo cervejeiro.
