Abstract

"SUCOS DE FRUTAS TURVOS E PROCESSOS PARA SUA PREPARAçãO". Descobriu-se, surpreendentemente, que um suco de maçã turvo é obtido quando se usa um processos que compreende a etapa de tratamento do materaial de maçã com uma mistura de enzimas compreendendo uma atividade despolimerizadora de homomogalacturonano, como pectina liase (EC 4.2.2.10), e uma enzima com atividade de endoglicanase (EC 3.2.1.4), na ausência de enzimas que reduzem o volume de turvação em mais de 25%, conforme determinado por um processo que compreende: (a) suspensão de 5 mg de um material turvador obtido pela homogeneização de 1 g de pedaços de maçã Malus malus L. cv. Jonagold, após remoção da casca e núcleo com uma máquina de cozinha Braun (MX32, Frankfurt, Alemanha; lâmina de 5 mm), incubação a 40°C sob misturação de cima para baixo contínua, a 150 rpm, em 3 ml de um tampão NaOAc a 200 mM (pH 4) contendo 0,01% (p/v) de NaN3, 1% de ácido ascórbico, 50 mU de pectina liase e uma quantidade de endoglicanase com um equivalente de 25 mU de atividade xiloglicanase, em 3 ml de um tampão NaOAc a 25 mM (pH 5), contendo cerca de 0,01% (p/v) de NaN3, (b) incubação da suspensão de turvador assim obtida durante 16 h a cerca de 40°, na presença da enzima, durante as quais a suspensão de turvador e a enzima são misturadas de cima para baixo, (c) sedimentação do turvador a cerca de 4° C durante 24 horas, e (d) determinação do efeito da enzima sobre a estabilidade da turvação mediante cálculo da diferença entre o volume de turvação da suspensão de turvador obtida seguindo-se as etapas acima na ausência da enzima e subtração do volume obtido da suspensão de turvador obtida seguindo-se as etapas acima na presença de enzima.
