Abstract
MÉTODO PARA MELHORAR A TEXTURA E A FUNCIONALIDADE DE UMA BEBIDA À BASE DE CONCENTRADO DE PROTEÍNA VEGETAL FRACIONADA A SECO. A presente invenção refere-se, de modo geral, a um método para fabricação de um líquido à base de plantas, sendo que o dito método compreende dispersar triglicerídeo em uma mistura de proteína vegetal; formar uma emulsão; aplicar um tratamento térmico à emulsão; e aplicar um tratamento de cisalhamento à emulsão termicamente tratada para formar um líquido à base de plantas
