Abstract
PROTEÍNA EM PÓ. A presente invenção refere-se a um processo para a produção de uma proteína em pó tendo um perfil aperfeiçoado de solubilidade e gosto a partir de bagaço de cerveja. O processo compreende nanofiltragem em uma pressão aplicada específica. A presente invenção também provê uma proteína em pó a partir de bagaço de cerveja, um processo para produção de produtos alimentícios e de bebida incorporando a proteína em pó e produtos alimentícios e de bebida compreendendo a proteína em pó.
