Abstract

método para produzir ingrediente alimentar proveniente de alga vermelha e produto obtido pelo método. a presente invenção refere-se ao ingrediente alimentar proveniente de alga com funcionalidade melhorada e perfil sensorial melhorado. o método da invenção contém uma etapa de reidratação de alga pré-seca sob controle combinado de temperatura e ph, na presença de uma solução salina, de um modo que o dito método não resulte em modificação química substancial e extração de ficocoloides na alga, porém ainda forneça o ingrediente alimentar com propriedade de funcionalidade melhorada e perfil sensorial melhorado.
