Abstract

um método e aparelho para a detecção de precursores de acrilamida em batatas cruas compreendendo: iluminar, pelo menos, uma região de uma superfície da batata crua com um feixe de iluminação de uma fonte de luz (1); medir a intensidade de luz dispersa pela batata (6) usando um analisador de espectro (11); gerar um sinal de detecção com base na intensidade medida de luz dispersa; comparar o sinal de detecção com um limiar predefinido; e classificar a batata como tendo uma concentração alta de precursor de acrilamida se o sinal de detecção exceder o limiar predefinido, o aparelho também pode compreender uma lente divergente (2), um filtro de bordas (3), uma lente (4), diafragmas (5) e (7), uma lente (8), etapas de translação automatizadas (9) e fibras ópticas (10).
