resumo patente de invenção: “aperitivos que contêm fruta e fabricação dos mesmos”. a presente invenção refere-se a um método de fabricação de um aperitivo que contém fruta, sendo que o método compreende as etapas de: a. fornecer pelo menos um material de fruta que compreende sólidos de frutas inteiras; b. fornecer pelo menos um material aglutinante, sendo que o pelo menos um material aglutinante é selecionado a partir do grupo que compreende material de cereal, material de amido, sementes de noz, ovo, soja, material de laticínios e grãos de leguminosas; misturar juntos o pelo menos um material de fruta e o pelo menos um material aglutinante para formar uma mistura que tem uma razão de peso de sólidos de frutas inteiras: sólidos de materiais aglutinantes de 0,6:1 a menos do que 4:1, em que os sólidos de frutas inteiras e os sólidos de materiais aglutinantes, cada um, estão em uma base seca, e um teor de humidade de 49 a 75% em peso com base no peso da mistura; e d. formar a mistura de modo que a mesma tenha uma espessura entre 1 milímetro e 4 milímetros, opcionalmente de 1 a 3 mm, de modo adicionalmente opcional de 1 a 2 mm, e e. cozinhar a mistura em uma atmosfera controlada por vácuo que tem uma pressão de menos do que 1 mpa (1 bar) absoluto.
