método melhorado para produzir isomaltooligossacarídeos. a presente invenção refere-se a um método para produzir isomalto-oligossacarídeos (imo) melhorados a partir de maltodextrinas. o método melhorado envolve a substituição completa ou parcial de ß-amilase, conforme usada em um método convencional, por uma a-amilase selecionada. o imo resultante tem comprimento de cadeia mais longa e teor de glicose residual reduzido em comparação com imo produzido com o uso de um método convencional.
